Provided by Averie Sunshine

Categories     30-Minute Meals

Time 20m

Number Of Ingredients 17

1 pound flat rice noodles
3 tablespoons toasted sesame oil
1 tablespoon coconut oil
1 medium onion, diced small (I used sweet Vidalia)
1 pound boneless skinless chicken breast, sliced into thin long strips
3 to 5 cloves garlic, finely minced or pressed
1 tablespoon ground ginger ( 1/2 tablespoon fresh ginger may be substituted)
8 ounces thinly sliced green cabbage (about 3 to 4 loosely packed cups)
1 cup shredded carrots
1/3 cup low-sodium soy sauce
1/4 cup fish sauce
1/4 to 1/3 cup freshly squeezed lime juice
2 tablespoons honey or agave syrup
1 large egg, scrambled
2 tablespoons sriracha, optional and to taste
3 green onions, sliced into thin rounds (optionally substitute with 1/3 cup minced fresh Thai basil)
2/3 cup chopped peanuts (I used reduced-salt)

Steps:

  • Cook rice noodles according to package directions, drain, rinse under cold water; set aside.
  • To a very large skillet at least 4 inches deep, add the oils (vegetable and/or olive oil may be substituted for the sesame and coconut oil), onion, and sauté the onion over medium-high heat for about 5 minutes, or until onion is beginning to soften; stir intermittently.
  • Add the chicken and cook for about 3 minutes, or until done; stir and flip nearly constantly to ensure even cooking. The chicken will cook very quickly if it's sliced sufficiently thin.
  • Add the garlic, ginger, and cook for about 1 minute, or until fragrant; stir nearly constantly.
  • Add the cabbage, carrots, soy sauce, fish sauce, lime juice, stir to combine, cover skillet with a lid, reduce heat to medium-low, and simmer for about 3 minutes, or until cabbage wilts and softens. Remove lid and stir.
  • Add the honey and stir to combine.
  • Add the cooked noodles, turn off the heat, and stir well to combine.
  • Add the scrambled egg, optional sriracha, and stir to combine.
  • Evenly garnish with the green onions, peanuts, and serve.

SHRIMP PAD THAI

Shrimp Pad Thai image

This shrimp pad thai on the lighter side is a healthy version of everyone's favorite Thai recipe. Made in one pan and ready in 15 minutes.

Provided by Erin Clarke / Well Plated

Categories     Main Course

Time 15m

Number Of Ingredients 17

4 ounces dry brown rice noodles
2 teaspoons extra virgin olive oil (or canola oil)
8 ounces medium or large shrimp
2 cloves garlic (minced)
3 large eggs
1/2 cup bean sprouts* ((see note))
1/2 cup freshly grated carrots
2 large green onions ((or 3 small) finely chopped)
1/4 cup peanuts (finely chopped )
1/4 cup fresh cilantro (chopped)
Lime wedges (for serving)
2 tablespoons fish sauce** (gluten free if needed (see note))
1 1/2 tablespoons rice vinegar ((I used seasoned))
1 tablespoon low-sodium soy sauce (or tamari for gluten free)
2 tablespoons water
1 tablespoon honey (plus additional 1-2 teaspoons to taste)
1-3 teaspoons ground chile sauce (sambal oelek) (or chili garlic sauce)

Steps:

  • Cook the rice noodles according to package instructions. They should be soft but not mushy. Drain and rinse under cool water.
  • In a small bowl, whisk together the sauce ingredients: fish sauce, rice vinegar, soy sauce, water, 1 tablespoon honey, and 1 teaspoon chili garlic sauce. If you prefer a sweeter pad thai, add additional honey (or even a little brown sugar). For spicier, add additional chili paste.
  • Heat the oil in a large non-stick skillet or wok over medium-high heat. Add the shrimp and saute just until the shrimp begins to turn pink, about 2 minutes. Add the garlic and noodles. Stir continuously to coat the noodles and shrimp with the garlic, then push the ingredients in the skillet over to one side of the pan.
  • Crack the eggs into the empty side of the skillet. Break apart the yolk with the spatula and let cook for 30 seconds, until just beginning to set. Stir the egg in with the noodles. Stir in the sauce.
  • Add the bean sprouts, carrots, and chopped green onions and let cook until the bean sprouts are crisp-tender, about 1 minute. Sprinkle on the peanuts and cilantro. Serve immediately with lime wedges.

QUICK VEGGIE PAD THAI

Quick Veggie Pad Thai image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 20

12 ounces pad thai noodles (thin rice noodles)
1/2 cup low-sodium soy sauce
1/2 cup brown sugar
1/4 cup smooth peanut butter
2 tablespoons fish sauce
2 tablespoons chile garlic sauce
3 limes, zested and juiced
4 scallions, sliced thin, whites and greens separated
4 cloves garlic
3 tablespoons minced fresh ginger
1/4 cup peanut oil
1 cup sliced cremini mushrooms
1 cup sliced shiitake mushrooms
1 small bunch asparagus, cut into 1-inch segments
1 large red bell pepper, sliced thin
1 large egg, beaten
1 cup bean sprouts, rinsed
1/2 cup chopped unsalted peanuts
1/4 cup fresh cilantro
Sriracha for serving, optional

Steps:

  • Place the noodles in a large bowl and completely cover with boiling water. Allow them to soak and soften while you prepare the sauce and vegetables, checking and tossing the noodles occasionally to separate them and see when they are ready (they will still have a bit of a bite), 6 to 7 minutes. Drain and rinse under cold water.
  • For the sauce: Combine the soy sauce, brown sugar, peanut butter, fish sauce, chile garlic sauce, lime zest and juice in a blender, along with the whites of the scallions, garlic and ginger. Blend to combine, 15 to 20 seconds. Set aside.
  • Heat the peanut oil in a large skillet over medium-high heat. Add the mushrooms and cook, stirring, until they begin to brown, about 2 minutes. Next, throw in the asparagus and red bell pepper, cooking for another minute or two. Push the veggies to the outer edge of the skillet and add the egg, stirring in the center of the skillet until the eggs scramble, then mix in with the vegetables. To ensure the vegetables keep their color and crunch, remove the vegetable-egg mixture from the skillet with a slotted spoon and set aside.
  • Add the noodles and the sauce to the hot skillet and stir to combine. Allow to come to a boil and cook, tossing to coat completely and allowing the sauce to thicken slightly, 1 to 2 minutes. Add the vegetables back to the skillet and carefully toss to combine. If the sauce is too thick, add 1/4 to 1/2 cup hot water. Remove the skillet from the heat and toss in the bean sprouts. Taste and adjust the seasoning. Transfer to a serving bowl and garnish with the chopped peanuts, cilantro, reserved scallion greens and as much sriracha as your heart desires.

Categories     Dinner     Lunch     Pescatarian     Dairy Free     Tree Nut Free

Yield Serves 4

Number Of Ingredients 12

8 ounces pad thai or lo mein noodles
2 tablespoons vegetable oil
1 clove garlic, minced
2 large eggs
1 1/2 tablespoons soy sauce
2 tablespoons fresh lime juice (from about 1 medium lime)
2 tablespoons brown sugar
1 teaspoon fish sauce
1/8 teaspoon red pepper flakes
3 green onions, sliced
1/4 bunch fresh cilantro, leaves only, roughly chopped
1/4 cup chopped, unsalted peanuts

Steps:

  • Bring a large pot of water to a rolling boil. Add the noodles and cook for 7 to 10 minutes or until tender. Drain the noodles and set aside.
  • In a large skillet, heat the vegetable oil over medium heat. Add the garlic and cook for 1 to 2 minutes, or until tender.
  • Whisk the eggs lightly with a fork. Pour them into the skillet and cook just until they solidify, but are still moist, moving the eggs around the skillet slightly as they cook so that they lightly scramble. When the eggs are cooked, remove the skillet from the heat and set aside.
  • In a small bowl, stir together the soy sauce, lime juice, sugar, fish sauce, and red pepper flakes. Pour the sauce into the skillet with the scrambled eggs. Add the noodles and toss to coat in the sauce.
  • Sprinkle the green onions, cilantro, and peanuts over the noodles. Toss lightly to combine. Serve warm.
  • Budget Byte:
  • Pad thai noodles have a unique flavor and texture, but if you can't find them in your area, try substituting another flat pasta like linguine.
