1 pound ground beef
1 (24 ounce) jar marinara sauce or meatless spaghetti sauce
8 lasagna noodles
½ cup ricotta cheese
2 ounces shredded mozzarella cheese, or more to taste
2 ounces grated Parmesan cheese, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Add ground beef and cook until brown and crumbly, 5 to 8 minutes. Drain grease from skillet.
  • Pour in 1/2 of the pasta sauce and mix with browned ground beef. Break up lasagna noodles into 4 or 5 pieces each and set on top of the ground beef-sauce mixture. Add the remaining pasta sauce on top of the noodles and stir. Cover and simmer over medium-low heat until noodles are soft, about 25 minutes.
  • Add ricotta cheese to the skillet and stir until melted. Sprinkle mozzarella cheese and Parmesan cheese on top; cover and let sit until cheese has melted, about 5 minutes.

1 lb bulk Italian sausage
48 ounces pasta sauce, any flavor
6 cups cooked mafalda noodles (mini lasagna noodles)
6 ounces mushrooms
15 ounces ricotta cheese
1/2 cup parmesan cheese
1 tablespoon chopped fresh oregano
2 cups shredded mozzarella cheese

Steps:

  • Cook sausage in skillet over medium heat, stirring occasionally, until sausage is no longer pink; drain.
  • Add pasta sauce; heat through stirring occasionally.
  • Heat oven to 350°F.
  • Cook and drain noodles.
  • While noodles are cooking, mix ricotta cheese, 1/4 cup parmesan cheese, the oregano and parsley.
  • Spread 1/3 of the sausage mixture in ungreased 9x13 inch baking dish.
  • Top with 3 cups noodles.
  • Spread cheese mixture over noodles.
  • Sprinkle with half the mozzarella cheese.
  • Spread another 1/3 of sausage mixture and top with remaining noodles.
  • Spread remaining sausage mixture over noodles and top with remaining mozzarella cheese.
  • Sprinkle 1/2 cup parmesan cheese over top.
  • Cover and bake 30 minutes.
  • Uncover and bake about 15 minutes longer or until hot and bubbly.
  • Let stand 15 minutes before serving.

12 uncooked lasagna noodles
1 ten oz pkg of frozen chopped spinach, thawed and squeezed dry
1 cup ricotta cheese
6 cups of pregrated 5 or 6 blend italian cheese
2 1/2 cups milk
2 cups cream
2 tsp italian seasoning
1 tsp garlic powder
1 tsp onion powder

Steps:

  • Whisk the ricotta cheese, milk and cream together in a large bowl. Whisk in seasonings. Then add 4 1/2 cups of the grated cheese, strirring gently. Stir in the chopped spinach. Spray a 9x13 baking dish with no stick spray. Place three of the noodles length wise in pan. place another noodle crosswise on pan, breaking off about 2 inches so noodle will fit in pan. Pour about 1/3 of liquid mixture over noodles. Be sure to cover noodles well. Repeat this process 2 more times. Top with the 1 1/2 cups of remaining grated cheese. Cover pan with foil and bake in a 325 degree oven for about 50 min. Remove foil and increase temperature to 350 degrees. Bake for about another 20-30 min or until cheese is hot and bubbly and slightly browned.

When my sons were in football, the mothers all took turns preparing a weekly meal served the night before the big game. This was one of the favorites! I usually add more mozzarella cheese to the top...just because we really like it cheesy!

1 1/2 lbs hamburger
1/2 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon italian seasoning
1/4 teaspoon garlic powder
2 (32 ounce) jars spaghetti sauce
15 ounces dry curd ricotta cheese
1/4 cup grated romano cheese or 1/4 cup parmesan cheese
1 egg
12 ounces mozzarella cheese

Steps:

  • Preheat oven to 375 degrees.
  • Brown the hamburger and onion.
  • Add the salt, pepper, Italian seasoning, and garlic powder.
  • Stir the spaghetti sauce into the hamburger mixture and set aside.
  • Combine the ricotta cheese, grated romano or parmesen cheese, egg, and 1/2 of the mozzarella cheese.(save the rest for the top).
  • Grease a 9x13 pan.
  • Place a small amount of the hamburger spaghetti sauce on the bottom of the pan.
  • Lay 3 uncooked lasagna noodles lengthwise on top of the sauce.
  • On top the the noodles, place 1/3 of the remaining sauce.
  • On top of this, put 1/3 of the cheese mixture.
  • Continue layering until everything is gone.
  • Cover dish with foil and bake for 30 minutes.
  • Remove foil, and bake for 30 more minutes.
  • During the last 15 minute place the remaining mozzarella cheese on top.
  • Let set 10 minutes, cut and enjoy!
