Time 25m

Number Of Ingredients 8

2 chicken breasts (cut in half lengthwise (so you have 4 thin pieces))
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic (finely minced)
1 ¾ cups heavy cream (whipping cream)
1 tablespoon cornstarch
1 teaspoon EACH: smoked paprika, onion powder, garlic powder, and Italian seasoning
½ teaspoon EACH: sea salt and pepper

Steps:

  • Mix the spice blend in a shallow bowl.
  • Heat the olive oil and butter in a large, high-sided frying pan over medium-high heat.
  • Dredge the chicken in the spice blend then place it into the frying pan. Reserve any remaining spices. Cook the chicken until golden brown, about 5 minutes per side. Reduce the heat to medium if the chicken is browning too quickly. Remove the chicken from the pan.
  • Add the garlic and let it cook for 1 minute. Add any remaining spice blend to the pan and mix it into the garlic. Add the cream and scrape the bottom of the pan to remove any bits that are stuck on.
  • Put the chicken and any accumulated juices back into the pan. Bring the pan to a boil then reduce the heat and simmer for 3-4 minutes, or until the chicken is cooked through and the cream begins to thicken.

Time 30m

Number Of Ingredients 13

2 large chicken breasts (cut in half lengthwise)
1/2 teaspoon garlic powder
Salt & pepper (to taste)
Flour (for dredging)
2 tablespoons butter
1 tablespoon olive oil
1 cup heavy/whipping cream
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
1 dash Italian seasoning
Fresh parsley (chopped, to taste (optional))

Steps:

  • Prep your chicken (cut it in half lengthwise so you have 4 thinner cutlets). Sprinkle both sides of each piece of chicken with the garlic powder and salt & pepper. Coat each piece in flour.
  • Add the butter and oil to a skillet over medium-high heat. Once the pan is hot, cook the chicken for 4-5 minutes/side until it's nice and golden. Take the chicken out of the pan and set it aside.
  • Stir in the cream and scrape up the brown bits from the bottom of the pan so they're incorporated into the sauce.
  • Add the remaining spices and whisk them in until you've got a smooth sauce.
  • Add the chicken back into the pan and cook it for 5 minutes or so until the chicken is cooked through and the sauce has thickened up a bit. Season with more salt & pepper if necessary (I do find the sauce needs a little more salt). Serve with parsley sprinkled over top if desired.

This recipe comes from the restaurant "Brennan's" located in New Orleans. No one has to know how simple and quick it is. I posted this recipe exactly as it was in the book, however, if you like a little "heat" please feel free to add some cayenne pepper to taste.
