This is a recipe for classic BBQ chicken pizza with tangy BBQ sauce, chicken, and red onion. Gouda cheese gives the homemade pizza the most delicious smoky flavor and cilantro adds a touch of freshness. My pizza dough recipe makes enough for two 12-inch pizzas. Toppings listed are enough for one 12-inch pizza. Freeze the rest of the pizza dough for another time.

1/2 recipe homemade pizza crust
1-2 teaspoons olive oil
1/3 cup + 2 Tablespoons your favorite BBQ sauce
1 cup chopped or shredded cooked chicken (about one 8-ounce breast)
2/3 cup shredded mozzarella cheese
2/3 cup shredded smoked gouda cheese
1/2 small red onion, thinly sliced
optional: chopped fresh cilantro for topping

Steps:

  • Prepare pizza dough through step 5, including preheating the oven to 475°F (246°C). Cover the shaped dough lightly with plastic wrap and allow it to rest as the oven preheats.
  • To prevent the pizza toppings from making your pizza crust soggy, brush the shaped dough lightly with olive oil. Using your fingers, push dents into the surface of the dough to prevent bubbling. Top the dough evenly with 1/3 cup BBQ sauce. Toss the cooked chicken with the remaining BBQ sauce, then scatter all around the pizza. Add the cheeses and red onion.
  • Bake pizza for 12-15 minutes. Remove from the oven and top with fresh cilantro, if desired. Slice hot pizza and serve immediately.
  • Cover leftover pizza tightly and store in the refrigerator. Reheat as you prefer. Baked pizza slices can be frozen up to 3 months. See pizza crust recipe for instructions on freezing the pizza dough.

1 pound store-bought or homemade pizza dough (See Kelly's Notes)
Cornmeal, for dusting baking sheet
1/2 cup store-bought barbecue sauce, divided
1 cup diced rotisserie chicken
1 cup shredded mozzarella cheese
1/3 cup thinly sliced red onions
Chopped cilantro, for garnish

Steps:

  • Preheat the oven to 500ºF.
  • Roll out the pizza dough on a lightly floured surface until it is roughly 12 inches wide and 1/4-inch thick.
  • Invert a baking sheet and sprinkle it liberally with cornmeal. Transfer the dough to the baking sheet.
  • In a medium bowl, toss together the diced chicken with half (1/4 cup) of the barbecue sauce. Spread the remaining 1/4 cup barbecue sauce on the dough, leaving a 1/2-inch border around the edges. (See Kelly's Notes. Depending on the shape of your pizza, you may want to add more sauce.)
  • Sprinkle the mozzarella cheese atop the barbecue sauce, and then evenly distribute the coated chicken atop the cheese. Scatter the red onions atop the chicken.
  • Bake the pizza for 10 to 12 minutes, rotating it half-way through, until the crust is fully baked and golden brown. Remove the pizza from the oven to a cutting board, sprinkle it with chopped cilantro, slice and serve.

1 cup spicy barbeque sauce
2 skinless boneless chicken breast halves, cooked and cubed
½ cup chopped fresh cilantro
1 cup sliced pepperoncini peppers

2 cups shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

1 tablespoon olive oil
1 onion, diced
1 red bell pepper, diced
1 (4 ounce) package sliced fresh mushrooms, or to taste
1 (14.5 ounce) can diced tomatoes
1 (10 ounce) can chicken chunks, drained
1 (18 ounce) bottle barbeque sauce (such as Montgomery Inn)
1 (10 ounce) container refrigerated pizza crust
1 (8 ounce) package shredded 4-cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Heat olive oil in a skillet over medium heat; cook and stir onion, red bell pepper, and mushrooms until tender, 5 to 10 minutes. Add diced tomatoes; cook and stir until heated through, 2 to 3 minutes. Combine vegetable mixture and chicken in a large bowl; add barbeque sauce and mix well.
