MINI QUICHES WITH PEAS AND BACON



Mini Quiches with Peas and Bacon image

6 slices bacon
5 eggs
1/2 cup heavy cream
1/4 teaspoon sweet paprika
1/4 teaspoon cayenne pepper
2 teaspoons Dijon mustard
Kosher salt and freshly ground black pepper
1 cup frozen peas
3 ounces shredded Gruyere cheese
One 14.5-ounce package refrigerated pie dough
Nonstick cooking spray

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the bacon to a medium skillet, turn the heat to medium high and cook until browned and crispy on both sides, about 7 minutes. Drain on paper towels, then dice. Set aside.
  • To a medium bowl, add the eggs, heavy cream, paprika, cayenne, Dijon and some salt and pepper; whisk to combine. Add the bacon, peas and Gruyere; fold to combine. Set aside.
  • Unroll the pie dough and cut out 7 rounds using a 3-inch round cookie cutter. (If necessary, roll out the scraps and cut out more rounds.) Spray a 12-cup muffin tin with nonstick spray. Press each dough round into a muffin tin cup, crimping the edges.
  • Divide the egg mixture between the 7 pie dough cups. Bake until just set, about 30 minutes. Let cool slightly before serving.

GEORGIA'S FAMOUS PECAN PRALINES image

My daughter-in-law is from Georgia and when we go and visit I just love to go downtown Savannah to eat Pralines.

2 c white sugar
1 c half-and-half
1/3 stick butter
1/8 tsp baking soda
1 1/2 c whole pecans

Steps:

  • 1. Combine all ingredients except the pecans in a heavy saucepan. Over medium heat stir mixture until it comes to a boil. Turn heat down to medium low and continue to stir. Spoon mixture up on sides of pan to melt any sugar the hasn't melted.
  • 2. Cook until mixture reaches 238 to 241 degrees on a candy thermometer or soft ball stage. Stir in the pecans.
  • 3. Remove from heat Stir until the mixture begins to thicken and becomes creamy and cloudy. Drop onto parchment paper, buttered pan or butterd marble slab, using a spoon or ice cream scoop. Let cool.

1 cup sugar
1 cup brown sugar
1 cup cream
2 tablespoons butter
1 1/2 cups roasted chopped pecans

Steps:

  • In a heavy saucepan combine the sugar, brown sugar, and cream and bring to a boil. Cook on medium heat to softball stage (238 degrees F), then add the butter and pecans. Continue cooking until hardball stage (245 degrees F). Spoon large dollops of it onto a silicone mat or parchment lined baking tray. The pralines will spread and crystallize as they cool.

1 (9-inch) prepared pie shell (unbaked), recipe follows
1 cup grated Swiss
1/2 cup grated marbled jack
3 tablespoon grated Romano, plus 1 tablespoon
1/2 cup chopped medium onion
1 cup fresh broccoli florets
1 1/2 cup sliced fresh mushrooms
1/4 teaspoons dried marjoram
1/2 teaspoon dried basil
1/4 teaspoon salt
1/2 teaspoon garlic powder
3 eggs
1 cup milk
1/2 cup half-and-half
7 or 8 cherry tomatoes
1 cup flour
6 tablespoons butter flavored shortening
1/2 teaspoon salt
1/4 teaspoon sugar
3 tablespoons cold water

Steps:

  • Preheat oven to 425 degree F.
  • Sprinkle the cheese over the bottom of the pie shell, then evenly distribute the onion, broccoli, and mushroom over the cheese layer. Mix the eggs and the spices together in a bowl. Add the milk and half-and-half and mix well. Pour over contents in the pie shell.
  • Cut the cherry tomatoes in halves and place, cut side up, in a ring on top of the mixture. Sprinkle the 1 tablespoon of Romano over top. Bake for 15 minutes. Turn oven down to 300 degrees F and bake an additional 45 to 55 minutes or until cake tester inserted in middle comes out clean.
  • Blend together with pastry blender until crumbly (like coarse cornmeal). Add cold water, 1 tablespoon at a time, mixing with a fork until mixture will hold together. Handle as little possible. Wrap in plastic wrap in a "patty" and chill for at least an hour. Roll out between Saran Wrap with very little flour. Place carefully in a pie plate, being careful not to stretch dough. Trim the edges.
