Using queso as a base, you don't need sauce or cheese - so here's a quick, easy dinner without many ingredients! The queso used in the original Pace Foods recipe (Pace Mexican Four Cheese Salsa con Queso) is spicy and flavorful, so if yours is plain you may want to jazz up your toppings with chopped jalapenos, diced green chilis, black olives or red pepper flakes. The original recipe called for basil which competed with the queso, but some fresh cilantro added at the end would be nice. The original recipe called for sun dried tomatoes; the second time we made it, we used roasted red peppers instead, and thought they were better.

1 (10 inch) prepared pizza crust
1 cup jarred queso sauce (Pace Mexican Four Cheese Salsa con Queso recommended)
1/2 cup shredded cooked chicken breast (cooked ground turkey or hamburger would also be good)
1/2 cup sliced roasted red pepper
2 tablespoons grated parmesan cheese

Steps:

  • Preheat the oven to 400 degrees.
  • Spread the queso on the bread shell to within 1/4-inch of the edge.
  • Top with the meat, tomatoes and cheese.
  • Bake for 15 minutes or until the queso is hot and bubbly.

A smooth and creamy queso is quintessential game-day food, so we took the classic recipe and kicked-it up a notch with jack and Cheddar cheeses. Enjoy it with tortilla chips or any of your favorite dippers for serving.

10 ounces processed block cheese, diced, such as Velveeta (see Cook's Note)
4 ounces Monterey jack cheese, coarsely shredded
2 ounces sharp Cheddar, coarsely shredded
One 10-ounce can diced tomatoes and green chiles, such as RoTel Original (see Cook's Note)
Tortilla chips, for serving

Steps:

  • Add the processed cheese, Monterey Jack, Cheddar and canned tomatoes (along with the juice) to a medium saucepan or 10-inch cast-iron skillet (see Cook's Note) and turn the heat to medium. Cook, stirring frequently with a rubber spatula, until all the cheese has melted and the queso is smooth, about 5 minutes. Serve immediately with tortilla chips.
  • To make the queso spicy, use hot diced tomatoes and green chiles, such as RoTel Hot, instead of the Original.
  • Processed block cheese is crucial due to its meltability and what it adds to the queso's texture. Do not try to substitute other cheeses.

This is a quick and easy way to put together a weeknight meal, created by my daughter. Using jarred queso as "sauce", it creates a mexi-cheesy alternative to your regular pizza night! Can be made as a vegetarian dish as well by leaving out the taco meat.

4 Boboli pizza crusts, mini
1 lb ground meat (beef, turkey, venison, etc.)
1 (1 1/4 ounce) package taco seasoning
1 (15 1/2 ounce) jar queso fresco
1 (16 ounce) can black beans
1 cup four-cheese Mexican blend cheese, shredded
sour cream
guacamole
salsa
taco sauce

Steps:

  • Prepare meat as specified on the taco seasoning packet.
  • Lay out the Boboli minis on a pizza pan.
  • Spread queso on the crusts (use as much or as little as you'd like).
  • Layer beans and meat on the crusts. Top with shredded cheese.
  • Bake for 8 minutes at 450°F.
  • Remove from oven and top with your choice of sour cream, guacamole, salsa, taco sauce, or any other taco favorites.
