1 loaf whole wheat bread
4 ½ cups low-moisture mozzarella, cut into about twenty pieces
2 cups white chedder, grated, or comte cheese
salt, to taste
pepper, to taste
1 handful parsley, chopped
3 tablespoons butter

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Cut the bread diagonally to form diamond shapes, making sure not to cut all the way down to the base of the bread.
  • Place the pieces of white cheddar between cuts.
  • Cover with shredded mozzarella.
  • Sprinkle salt, pepper, parsley, and melted butter on top.
  • Bake for 15-20 minutes or until all the cheese is melted and the bread is lightly toasted.

Queso fundido is a tasty comfort food that originated in northern Mexico as a campfire dish of chorizo, tomatoes, onions, and poblano peppers in a pool of gooey, stringy, melted cheese. The dish is often prepared tableside in restaurants, where it is flambéed and presented bubbling hot in small casserole dishes as an appetizer. In this version, chorizo is sautéed until crisp and golden, then combined with queso Oaxaca for a simple, yet no less delicious, snack. Spoon the queso onto soft tortillas and serve individually, or set the pot between a group of people and dig in.

½ lb ground chorizo
5 flour tortillas, 6 in (15 cm)
6 oz Oaxaca queso
kosher salt, to taste

Steps:

  • Preheat the oven to 450°F (230°C).
  • Crumble the chorizo into a large pan over high heat and cook until the fat has rendered and the chorizo caramelized and cooked through, about 10 minutes. Turn off the heat and arrange the tortillas on top of the chorizo to warm.
  • Meanwhile, tear the cheese by hand into a small baking dish. Season the cheese with salt, if needed. Transfer to the oven and bake until the cheese is melted and bubbly. Top with the chorizo.

1 ⅓ cups ground chorizo
½ onion, chopped
1 cup mushroom, chopped
1 teaspoon salt
½ teaspoon pepper
1 large bread boule
2 cups oaxaca cheese, or melting cheese
5 tablespoons butter, melted
3 cloves garlic, finely chopped
3 tablespoons fresh parsley, chopped
3 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 350°F (180°C).
  • In a pan over medium-high heat, cook the chorizo until brown.
  • Add the onions, mushrooms, salt, and pepper, cooking until the chorizo is deep brown and the onions and mushrooms are crispy. Remove from heat.
  • Slice across the top of the bread in 1-inch (2 ½ cm) lines, being careful not to cut all the way through. Rotate the bread 90 degrees and repeat, creating a grid pattern across the bread.
  • Sprinkle half of the cheese evenly between the cracks of the bread.

2 cups grated manchego cheese

1 lb prepared pizza dough, chilled and cut into 1 1/2 inch (4 cm) pieces

Steps:

  • In a medium saucepan over medium-high heat, sauté the chorizo until cooked through for about 5 minutes. Use a slotted spoon to transfer the chorizo to a paper towel-lined plate and add the butter to the pan.
  • When the butter is melted, turn off the heat and whisk in the paprika.

8 oz camembert cheese

⅓ cup fresh parsley, chopped
2 cloves garlic, crushed
½ cup bacon, cooked, chopped

Steps:

  • Preheat the oven to 350°F (180°C).
  • Slice the camembert into thick matchsticks.
  • Make deep, thick slits into the bread without cutting all the way through, about 90% down is good.
  • Rotate the bread 90° and make more cuts, 90% through again, creating little sticks of bread that are all held together by the crust at the bottom.
  • Combine the butter, parsley and garlic.
