½ gallon whole-milk buttermilk
1 cup heavy whipping cream

Steps:

  • Preheat oven to 200 degrees F (95 degrees C). Line a colander with cheese cloth and place over a large pot in the sink.
  • Gently mix buttermilk and cream together in a 2-quart ceramic casserole dish.
  • Cook in the preheated oven for 2 hours and 15 minutes.
  • Pour buttermilk mixture into the prepared colander; drain for 45 to 60 minutes. Transfer drained cheese to a bowl and beat with an electric hand mixer until smooth and creamy. Store in the refrigerator.

Many years ago while on vacation in Munich, Germany, I stopped in a bakery for a snack. The pastry I had has stayed at the back of my mind for about 10 years now. This is my attempt at re-creating it. It is still kind-of a work in process, so please feel free to add more sugar or lemon juice as you like.

8 ounces Quark
3 teaspoons fresh lemon juice (or to taste)
4 teaspoons sugar (or to taste)
1 egg
4 (8 ounce) cans crescent roll dough
4 teaspoons sugar, divided (for top)

Steps:

  • Preheat oven to 375°F.
  • Combine quark, lemon juice and 3-4 tsp sugar. Taste and adjust juice and sugar to taste if necessary.
  • Add egg and stir to combine.
  • Unroll crescents and separate into large (roughly) squares (two per package of dough). Pinch together seams as much as possible.
  • Measure out about 2 Tablespoons of cheese mixture and place in center of square.
  • Take hold of two opposite corners of dough and bring to a point in the center, bringing the other two corners in to meet them, so that you are left with roughly a square filled pastry.
  • Sprinkle squares with about 1/2 tsp sugar each and bake for about 14 minutes or until browned and puffed.
  • Allow to cool and enjoy at room temperature.
  • Refrigerate or freeze any leftovers.

1 1/3 cups all-purpose flour
1/3 cup granulated sugar
a pinch of salt
1/2 teaspoon baking powder
1 medium-sized egg
1/2 teaspoon vanilla extract
1/2 cup butter (cold)
1 cup granulated sugar
3 medium-sized eggs
2 cups Quark (see notes)
1 package instant pudding powder (vanilla (approximately 1/2 cup))
1 teaspoon lemon zest
1 teaspoon vanilla extract
1/2 cup vegetable oil
3/4 cup whipping cream

Steps:

  • Add the flour, sugar, salt, and baking powder into a medium-sized bowl and give everything a stir with a spoon.
  • Cut up the cold butter into small cubes and add them into the bowl. Also, add the vanilla extract and the egg into the bowl.
  • Mix everything with the spiral dough hooks of your electric mixer or your clean hands until the dough is well combined and forms a ball. Cover the bowl with cling film and place it in the fridge.
  • In a separate large bowl, mix the eggs with the sugar using the normal beaters of your electric mixer until you have a creamy mixture. Add the pudding powder and vanilla extract and mix again until everything is well combined. Then add the oil and the lemon zest and mix again.
  • In another bowl, whip the cream using clean (!) beaters of your electric mixer.
  • Fold the whipped cream and quark into the mixture in the large bowl little by little using a spatula or large spoon. Make sure everything is well combined and there are no lumps. Set the mixture aside.
  • Line the bottom of your 9 1/2 inch springform pan with parchment paper and grease the sides. Also preheat the oven to 330 degrees Fahrenheit.
  • Take out the dough from the fridge and sprinkle your countertop with a little bit of flour. Roll out your dough using a rolling pin until it is just a bit larger than your springform pan. Place the rolled out dough into the pan and press it into place. You should have a crust of approx. 1 inch going up the sides of the pan.
  • Once your crust is fitted well, pour the filling into the pan and make sure it is evenly distributed using a spatula or spoon.
  • Bake the cake in the lower third of your oven for 60-70 minutes. Remove the cake from the oven and let it cool fully before removing the ring of the springform pan. You can dust the cheesecake with powdered sugar before serving (optional).

1/2 cup (1 stick/4 ounces/113 grams) unsalted butter, plus more for the bowl and pan
1 cup (8 1/2 ounces/242 grams) milk
5 tablespoons (2 1/4 ounces/63 grams) granulated sugar
1 tablespoon active dry yeast
1 1/2 teaspoons kosher salt
1 large egg plus 1 large egg yolk
3 to 3 1/2 cups (13 1/2 to 15 1/2 ounces/383 to 439 grams) all- purpose flour as needed
sugar-pecan topping
3/4 cup (1 1/2 sticks/6 ounces/170 grams) unsalted butter
3/4 cup (4 1/2 ounces/128 grams) packed brown sugar
1/4 cup (3 ounces/85 grams) light corn syrup
3/4 cup (3 ounces/85 grams) chopped pecans
cinnamon-sugar filling
4 tablespoons (1/2 stick/2 ounces/57 grams) unsalted butter
1 cup (7 ounces/200 grams) granulated sugar
1 tablespoon ground cinnamon

Steps:

  • 1. To make the dough, melt the 1/2 cup butter in a small saucepan over medium-low heat. Add the milk and sugar and heat just to lukewarm (about 110°F), stirring to dissolve the sugar. Pour the warm milk mixture into a bowl. Stir in the yeast. Allow the mixture to sit for 10 minutes, then stir in the salt.
  • 2. Beat the whole egg and egg yolk together and add to the yeast mixture. Stir in the flour 1 cup at a time until you have a sticky dough. Scrape the dough out onto a floured work surface and knead for about 5 minutes, until you have a nice smooth dough. Butter a large bowl. Place the dough in the prepared bowl and cover with plastic wrap. Put the bowl in a warm place and allow the dough to rise for 2 hours, until tripled in volume.
  • 3. Meanwhile, brush a 9 × 13-inch baking pan with some melted butter (or spray it with vegetable oil spray). To prepare the sugar-pecan topping, melt the butter with the brown sugar and corn syrup in a small saucepan over medium-low heat, stirring to combine. Remove from the heat and spread the mixture in the bottom of the pan. Sprinkle with the chopped pecans.
  • 4. Punch down the dough and turn it out of the bowl onto a lightly floured work surface. Knead for a minute, then use a lightly floured rolling pin to roll the dough into a rectangle about 15 × 12 inches and 1/8 inch thick. To make the cinnamon-sugar filling, melt the butter in a small saucepan over medium-low heat and allow it to cool. Brush the butter thoroughly over the surface of the dough. In a bowl, mix together the sugar and cinnamon. Sprinkle the cinnamon sugar evenly over the melted butter. Roll the rectangle up, like a jelly roll, along one long edge.
  • 5. Slice the log of rolled dough into 1-inch-thick slices and arrange the slices, cut sides up, in the prepared pan. Cover the pan with a piece of plastic wrap (you can spray the plastic wrap first with vegetable oil spray to be sure it doesn't stick to the dough) and allow it to rise in a warm place for about 40 minutes.
  • 6. Preheat the oven to 350°F. Bake the schnecken until golden brown, 35 to 40 minutes, rotating the pan halfway through the baking time. Check them occasionally during the baking time, and if they seem to be browning too quickly, loosely cover them with a sheet of aluminum foil.
  • 7. Remove the pan from the oven and cool on a wire rack for 5 to 10 minutes. Turn the schnecken out of the pan while still warm by inverting the pan over a large platter or baking sheet. Serve the schnecken warm.

3 tablespoons sugar, plus more for dusting
1 teaspoon lemon juice
1/4 teaspoon vanilla extract
One 17.3-ounce box frozen puff pastry sheets, thawed

Steps:

  • Preheat the oven to 400 degrees F. Line 2 baking pans with parchment paper.
  • Beat the whole egg with 1 teaspoon of water in a small bowl; set aside.
  • Beat the egg yolk, cream cheese, sugar, lemon juice and vanilla in a medium bowl with an electric mixer on medium-high speed until smooth.
  • Lay out the 2 sheets of puff pastry and cut each into 4 squares. Fold the corners of the squares over by about 1 inch to make octagon shapes. Spoon the cream cheese mixture evenly into the center of each (about 2 tablespoons per); do not spread the cream cheese. Brush all of the exposed pastry with the egg wash, then dust generously with sugar.
  • Bake until puffed and golden brown all over, about 18 minutes. Cool slightly before serving.

Steps:

  • Preheat oven to 350°F.
  • To prepare Pastry: Combine flour, 1 Tbsp sugar, dash of salt in a small bowl. Combine cream cheese, butter and milk in large bowl; beat with a mixer at medium speed until well blended.
  • Add flour mixture; beat at low speed until just blended and crumbly.
  • Press into a ball. Turn dough onto a lightly floured surface, knead lightly 3 to 4 times.
  • Divide dough into 24 portions, Place 1 portion in each of 24 mini muffin cups coated with the cooking spray.
  • Using your fingers, press dough into bottom and up sides of cups.
  • To prepare filling: divide pecans evenly among muffin cups.
  • Combine brown sugar and remaining ingredients in a small bowl; spoon about 2 teaspoons filling over pecans in each muffin cup.
  • Bake at 350°F for 20 minutes or until pastry is lightly browned and filling is puffy.
  • Cool in cups for 10 minutes on a wire rack.

150 g all-purpose flour
150 g whole wheat flour
60 g sugar
12 g bread yeast
160 ml milk (lukewarm)
1 large egg
40 g butter (soft)
50 g instant vanilla pudding
250 g low fat cottage cheese
1 large egg
30 g sugar

Steps:

  • Preheat oven to 350°F.
  • If using a bread machine: Combine 1st 7 ingredients per instructions of your bread machine on dough setting and let rise about 45 minutes.
  • If making by hand: Combine Flour and 60 g sugar in mixing bowl. Combine yeast & milk and mix in another bowl. Mix Yeast/milk mixture with 1 egg and butter with the flour mixture. Combine both bowls and mix with the kneading hooks of the hand mixer for 3-4 minute Cover bowl and put in warm place for 30 min until it has risen noticeably.
  • If using food processor: Combine last 4 ingredients in food processor and blend until smooth. (You can do this by hand, but you will need to somehow whip the cottage cheese until smooth.).
  • Turn out dough on floured surface and knead again and roll out to a floured work surface to a rectangle of 12 x 8 in (30x20 cm). Spread the cottage cheese/pudding mix on the dough rectangle leaving a 1 inch edge. Roll pastry from the wide side, jelly roll style. Cut into 12 disks and place on baking sheet covered with baking parchment. Let rise for 10 minute Place baking pan in center of oven. Bake 25 - 30 minute.
  • Let cool slightly and serve warm.

300 g red onions
4 tablespoons oil
120 ml red wine
1 teaspoon sugar
salt and pepper, to taste
8 skinless boneless turkey breasts, thinly pounded (about 80 grams each)
40 g butter
12 fresh sage leaves

Steps:

  • Peel the onion and slice it into thin rings.
  • Heat a skillet and sweat the onions in 2 Tbsp of oil, covered, until they look translucent.
  • Add the red wine and the sugar and cook together 5-8 minutes, uncovered.
  • Sprinkle with salt and pepper to taste.
  • In another pan, heat 2 Tbsp oil and over fairly high heat brown turkey cutlets 2-3 minutes per side, or until almost cooked through.
  • Lower the heat and add the butter and the sage leaves and cook enough to heat through and to cook turkey completely (but be sure not to overcook or cutlets will get too dry).
  • Season with salt and pepper, to taste.
  • Set the cutlets, drizzled with any extra pan sauce, on serving plates and top with a bit of the red onions.
  • You may use boneless skinless chicken breasts, pounded very thin- but adjust cooking times.

1/2 cup fine Bulgar wheat
1/2 cup chopped onion
1/2 teaspoon fresh ground pepper
1 teaspoon salt
3 cups finely chopped parsley
1/2 cup finely chopped green onion
2 cups finely chopped tomatoes
1/4 cup fresh lemon juice
2 tablespoons olive oil

Steps:

  • Soak bulgur wheat in lukewarm water to cover by 1/2 inch for 45 minutes and then place in sieve to drain.
  • Combine minced onion pepper and salt.
  • Set aside.
  • In a large bowl, combine parsley, scallions and tomatoes,.
  • Gently fold in the soaked or rinsed wheat.
  • Stir in seasoned onion and dress with lemon and oil.Add parsley, scallions and tomatoes,.
  • Refrigerate at least an hour before serving.
  • Serve on lettuce leaves in individual dishes, or use tender lettuce heart leaves as scoops to eat the tabbouleh. In Lebanon tabouleh is generally served on a large platter and decorated with chopped tomatoes. The vegetable leaves are served on a separate dish in an attractive way.
  • I usually have a basket of mini pitas that we spoon our tabouleh on.

2 cups extra-sharp cheddar cheese, grated, Tillamook is best
1 1/4 cups flour
1/2 cup margarine (softened) or 1/2 cup butter (softened)
1/4 teaspoon cayenne pepper
20 large spanish green olives (X-large Queens from Costco)

Steps:

  • Mix the cheese and flour, and then mix in the margarine and cayenne, working the dough with your hands if it seems dry. Form a log in plastic wrap and chill in fridge over night. You want this to be fairly dry and crumbly. Mold approximately 1 tablespoon dough around each olive. The warmth from you hands will help keep it together. Bake at 400° for about 20 minutes or until golden. Serve hot, warm, or cold. (I prefer them hot ;-).

1 teaspoon vanilla

2 (8 ounce) packages refrigerated crescent dinner rolls
1/2 cup powdered sugar
3 teaspoons milk
1/4 cup chopped nuts (optional)

Steps:

  • In food processor blend togehter cream cheese, sugar, egg yolk, lemon juice and vanilla.
  • Unfold 1 package crescent rolls. Place the two lengths together, side by side on waxed paper. Cover with another piece of waxed paper. Roll out to fit a 10″×15″ jelly roll pan (cookie sheet).
  • Ease dough into ungreased pan, spreading with hands as needed to fit pan. Evenly spread cream cheese mixture over top and sprinkle with pineapple.
  • Roll out remaining package of dough. Cut into strips 3/4" wide. Crisscross strips on top of cheese mixture, lattice style. Use leftover strips if desired, to form a border around pastry.
  • Lightly beat egg white and brush over top. Bake at 350 for 25-30minutes or until golden. Cool 30 minutes.
