PUTTIN' ON THE RITZ SALAD

Puttin' on the Ritz Salad image

This salad is very simple to put together, but the taste is so much more than simple. I have been making this salad for a few years now and when I have leftovers, my family members fight for them. Increase or decrease the ingredients per your own taste buds, but I am sure that this simple salad will be enjoyed no matter what.

Number Of Ingredients 8

1 bunch(es) organic green leafy lettuce
1 medium organic carrot, thinly sliced
5 slice(s) mesquite turkey breast, thin sliced
1/2 cup(s) grape tomatoes
1/4 cup(s) onion, thinly sliced
3-5 tablespoon(s) ranch or caesar dressing
1/2 package(s) ritz crackers, crushed
- salt and pepper to taste

Steps:

  • Wash, dry and then tear up the lettuce into bite sized pieces. Place in the refrigerator until ready to put the salad together. Doing this step will create a crispy texture in the lettuce.
  • In a bowl large enough to hold all of these ingredients, add the lettuce, carrot, chopped up turkey meat, tomatoes, onion and dressing. Mix well so that every ingredient has been lightly coated with the dressing.
  • Top with the crushed crackers, using more or less per your own tastes. Make sure to season as you want with salt and pepper.

I make these quite often and they are so good and easy. I first ate these at a family reunion and could not find out who made them so I looked around until I found the recipe.

Number Of Ingredients 9

1 c pecans, chopped
1 can(s) eagle brand milk
1 c dates, chopped
1 box ritz crackers
ICING:
8 oz cream cheese, room temperature
1/4 c butter, softened
1 tsp vanilla extract
1 box confectioners' sugar

Steps:

  • 1. Cook pecans, dates and milk over low heat until thick. Cool. Put a spoonful on each cracker. Place on a cookie sheet and bake for 8 min. at 350 degrees. Cool.
  • 2. ICING: Mix cream cheese, butter, vanilla and confectioner's sugar until smooth. Blend well. Ice every cracker. I make one stripe down each cracker. This makes them look prettier but you will have some icing left-over. I also rather use Town House Original Topper crackers because they have an indentation on top.

These yummy crackers are delicious, if you like chocolate and peanut butter! They also make a nice accompaniment to a cookie tray. Not hard at all to make. Nothing but spreading and dipping...they are a cinch!... Enjoy! My photos

Time 20m

Number Of Ingredients 5

2 sleeves, ritz crackers
1 - 11.5 oz package, semi sweet or milk chocolate chips
1 tsp crisco, shortening
peanut butter - i use crunchy
crushed nuts ( optional )

Steps:

  • 1. Spread about a teaspoon of peanut butter on 1 sleeve of crackers.
  • 2. Top with the other sleeve of crackers.
  • 3. In a microwave safe bowl, melt the chocolate chips and Crisco. Stir several times to blend well. You may need to microwave for a couple seconds in between when dipping the crackers to keep the chocolate soft.
  • 4. Dip crackers, covering well and place on cookie sheets covered with wax paper. ( I then sprinkled with some chopped pecans.) Chill to set and store in air tight containers. Note: I find that using clean fingers to swirl on the chocolate works well. Also, kids and big kids, love to join in the fun...as they get to lick off their fingers when done...lol!
