A classic recipe for southern peas, in this case, fresh purple hulls, simply seasoned with bacon, onion, garlic, salt and pepper, perfect as a side dish or as a feature on a vegetable plate.

2 pounds freshly shelled purple hull peas
1 tablespoon bacon drippings or cooking oil
4 slices bacon
1 medium onion, chopped
2 large garlic cloves, whole but smashed
1-1/2 teaspoons kosher salt, or to taste
1/4 teaspoon freshly cracked black pepper, or to taste
1/4 teaspoon Creole or Cajun seasoning, or to taste, optional
1/2 teaspoon granulated sugar, optional
Water to cover peas in the pot, plus an inch
6-8 whole okra pods, optional

Steps:

  • Shell peas, rinse and drain; set aside.
  • Place oil or bacon drippings in a large pot over medium high heat. Add chopped bacon, onion and garlic. Add seasonings, sugar, peas and enough water to cover them.
  • Bring to a boil, reduce to a medium high simmer, and cook about 30 minutes, skimming off any foam that accumulates.
  • Lower the fire to medium low, cover and continue cooking another 20 to 30 minutes, or until the peas are tender, stirring occasionally. Add more water if necessary, keeping about 1 inch of water over the peas.
  • To add okra pods, rinse pods and place on top of the beans during the last 10 to 15 minutes of cooking time.
  • Taste, adjust salt and pepper as needed and transfer to a serving bowl.
  • Serve as a side or with sliced, fresh or pickled sweet onion, sliced garden tomatoes and skillet cornbread for an excellent vegetable plate.

1 tbsp Butter
½ Onion (diced)
2 Garlic cloves
¼ cup Bacon ((Optional) - chopped; or one ham hock )
2 cups Purple hull peas (fresh and shelled; or frozen)
2 cups Water (enough to cover peas by 1 inch or so)
2 tsp Caldo de tomate bouillon or chicken bouillon (*(Optional) - or replace 2 cups of water and bouillon with pre-made chicken broth)
1 tsp Salt
1 tsp Pepper
1 tsp Cajun seasoning ((Optional) )

Steps:

  • Add butter, onions, and bacon (if using) to medium pot. Sautee for a couple minutes until onions are soft but not caramelized.
  • Add the rest of the ingredients in the order listed. (If using a ham hock instead of bacon, add the ham now with the other ingredients.)
  • Bring peas to boil and then turn down to simmer.
  • Simmer fresh peas, covered with a slight open gap, for 90 minutes until peas are soft and tasty. (For frozen peas, you will cook, covered with the lid at a slight gap, for around 60 minutes.) You will need to add a bit water occasionally as water evaporates during the cooking process as peas thicken.
  • Test the seasoning in the peas toward the end of cook time and add more seasoning, if necessary.

This is a great recipe that I've had for a long time; however, the original called for black eyed peas. You can substitute them in this recipe if you like, but to me, the fresh purple hull peas gives it a better flavor.

1 lb pork sausage
1 sweet onion, chopped
1 cup cornmeal (not self-rising)
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
2 eggs
1 cup buttermilk
1/3 cup vegetable oil
3/4 cup creamed corn
2 cups purple hull peas, cooked (or you can substitute cooked black eyed peas)
8 ounces mild cheddar cheese, grated

Steps:

  • Brown sausage and onions in a medium skillet.
  • In a large bowl, combine the cornmeal and all other dry ingredients and mix well.
  • In a small bowl, beat the eggs, buttermilk and oil together, then add the wet mixture to the dry ingredients.
  • To this mixture, in the large bowl, add the cooked sausage and onions and stir well.
  • Then, add the remaining ingredients and mix well.
  • Pour this into a 13 X 9 inch, lightly greased, baking dish and bake at 350°F degrees for 50-55 minutes.
  • If you would like, sprinkle a little more cheese on top for garnish before serving.

1 ½ pounds frozen purple hull peas
8 ounces fresh okra
4 ounces bacon, cut into 1/2 inch pieces
1 tablespoon white sugar
⅛ teaspoon baking soda
salt and pepper to taste

Steps:

  • Place the purple hull peas into a large pot and cover with water. Bring to a boil over high heat, add okra if using and boil for 2 minutes, stirring twice. Reduce heat to medium-low, add the bacon, sugar, baking soda, salt, and pepper. Cover and simmer until tender, 1 1/2 to 2 hours.
