Serve up these pumpkin trifles for a no-bake pumpkin dessert this fall. Angel food cake, pumpkin cheesecake, and cinnamon whipped cream.

3 cups of angel cake (about ⅓ of a cake, cut into ½ inch squares or smaller)
1 1/2 cups of whipping cream
½ tablespoon granulated sugar
½ teaspoon of cinnamon
8 ounces of cream cheese
1 ½ cup of pumpkin puree
4 tablespoons brown sugar
2 teaspoons pumpkin pie spice
½ teaspoon vanilla
¼ cup toasted pecans (chopped)
Caramel drizzle

Steps:

  • Start by making your whipped cream. In a stand mixer or bowl whip up your whipping cream, granulated sugar, and cinnamon. Once it forms stiff peaks set aside.
  • Now you will work on your cheesecake layer. In a bowl or stand mixer, add your softened cream cheese, pumpkin puree, brown sugar, pumpkin pie spice, and vanilla. Whip until a thick creamy texture. Fold in 1/3 cup of the whipped cream. Use a spatula and fold it in.
  • Now dice your angel food cake into small cubes.
  • To assemble your pumpkin trifles grab 8-ounce jars or a large bowl. Add in some angel food cake, top with the no-bake pumpkin cheesecake layer, and then add more angel food cake and repeat.
  • When you are done top with cinnamon whipped cream, top with toasted pecans, and drizzle with caramel sauce.
  • Store your pumpkin trifles in the fridge until ready to serve.

I found this recipe on-line from email I receive from Taste of Home. This is what the author of the recipe states: "It looks so elegant with alternating layers of gingerbread cake and pumpkin/butterscotch pudding," she writes from New London, Missouri. "Try making it ahead of time for a fuss-free dessert when you're planning to entertain guests." Updated 12/2010: I made this for our Christmas dessert and only used 2 boxes (rather than 4 boxes) of the pudding (which works out to be 4 cups of pudding once milk was added and it was more than enough for this trifle dessert).

4 cup(s) nonfat milk
2 package(s) (1 ounce)sugar-free instant butterscotch pudding mix
15 ounce(s) canned solid-pack pumpkin
1 teaspoon(s) ground cinnamon
1/4 teaspoon(s) ground ginger
1/4 teaspoon(s) nutmeg
1/4 teaspoon(s) allspice
12 ounce(s) frozen reduced-fat whipped topping, thawed

Steps:

  • In a large bowl, combine the cake mix, water and egg, beat on low speed for 30 seconds. Beat on medium for 2 minutes. Pour into an ungreased 8-in. square baking pan.
  • Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. When completely cooled, crumble the cake. Set aside 1/4 cup crumbs for garnish.
  • In a large bowl, whisk milk and pudding mixes for 2 minutes or until slightly thickened. Let stand for 2 minutes or until soft-set. Stir in pumpkin and spices until well blended.
  • In a trifle bowl or 3-1/2-qt. glass serving bowl, layer a fourth of the cake crumbs, half of the pumpkin mixture, a fourth of the cake crumbs and half of the whipped topping. Repeat layers. Garnish with reserved cake crumbs. Serve immediately or refrigerate until serving.

Here's a nice alternative to pumpking pie at the end of a holiday meal! Your guests will ooh and ahh, but you'll laugh because this is a no cook recipe! Prep time does not include 2 hour chilling time. I've substituted Cool Whip for the regular whipping cream, and it's fine!

2 -3 cups muffins or 2 -3 cups gingerbread
1 (16 ounce) can pumpkin (about 2 cups)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
2 1/2 cups cold milk
4 (1 ounce) packages instant butterscotch pudding mix
2 cups whipping cream

Steps:

  • Set aside 1/4 cup of cake crumbs for top.
  • Divide remaining crumbs into four portions; sprinkle one portion into the bottom of a trifle bowl or 3 quart serving bowl.
  • In a large mixing bowl, combine pumpkin, spices, milk and pudding mixes; mix until smooth.
  • Spoon half into the serving bowl.
  • Sprinkle with a second portion of crumbs.
  • Whip cream until stiff, spoon half into bowl.
  • Sprinkle with a third portion of crumbs.
  • Top with the remaining pumpkin mixture, then last portion of crumbs and remaining whipped cream.
  • Sprinkle the reserved crumbs around top, around edge of bowl.
  • Cover and chill at least 2 hours before serving.

This is a great dessert for the fall time of year. It looks especially nice done in a glass fluted bowl or a footed raised one. It's very light in taste but also has a certain richness. Yummy!! Feel free to use regular instant butterscotch pudding in place of the SF.

1 1/4 cups water
1 egg
4 cups milk
4 (1 ounce) packages sugar-free instant butterscotch pudding mix
15 ounces pumpkin

Steps:

  • Combine the cake mix, water, and egg in a bowl.
