1 cup part-skim ricotta cheese
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla
2 (1 g) packets Splenda sugar substitute
1 tablespoon crushed walnuts or 1 tablespoon pecans

Steps:

  • Mix all ingredients in a bowl.
  • Chill for about 30 minutes and serve.

1 (9 inch) unbaked 9-inch pie crust
1 cup ricotta cheese
2 eggs, lightly beaten
1 (16 ounce) can solid-pack pumpkin
¾ cup firmly packed brown sugar
1 (5.3 ounce) can evaporated milk
1 ½ teaspoons pumpkin pie spice
1 teaspoon vanilla extract
½ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Press pie crust into a pie plate.
  • Beat ricotta cheese into lightly beaten eggs in a large bowl until smooth. Stir pumpkin, brown sugar, evaporated milk, pumpkin pie spice, vanilla extract, and salt into the cheese mixture until smooth; pour into the pie crust.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

Whipped ricotta is a delicious dessert with tons of protein to keep you full and satisfied. This pumpkin-y fall twist makes it extra yummy with no treat swap needed!

3/4 cup of part skim ricotta cheese (WW use Fat Free)
1 1/2 T pumpkin puree (or more to taste!)
½ tsp vanilla
½ tsp pure maple syrup
1 tsp pumpkin pie spice
¼ tsp cinnamon
sprinkle of salt
½ tsp stevia (or a few drops of the liquid)

Steps:

  • Using a hand mixer, whip ricotta, maple syrup, and vanilla until smooth and creamy. (If you are in a rush, just mix with a spoon!) Then whip in the pumpkin.
  • Sprinkle with pumpkin pie spice, cinnamon, salt, stevia (a few drops or ½ tsp). Mix and taste, adjusting seasonings as desired. Sprinkle with some more cinnamon and drizzle with a bit more maple syrup before serving.
  • Eat with a spoon, add chocolate chips, or eat as a dip with apples! Yum!

This is being posted per a request. Recipe is printed in the SBD book page 182. Also listed is a Lime Zest version, an Almond and a Vanilla version. We have only tried the Mocha as this is our first week on SBD. Hope you enjoy and it satisfies your choco craving.

1/2 teaspoon unsweetened cocoa powder
1/4 teaspoon vanilla extract
1 package sugar substitute
1 dash espresso powder
5 mini chocolate chips

Steps:

  • Mix together the ricotta, cocoa powder, vanilla extract and sugar substitute in a dessert bowl.
  • Serve chilled with a dusting of espresso powder and sprinkle with the mini chocolate chips.
