LOW FAT OATMEAL PUMPKIN SPICE MUFFINS

This is a recipe I adapted from an old favorite, applesauce muffins. They are high in fibre and low in fat.

1 1/4 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup oats
1 1/4 cups pumpkin puree
1/4 cup oil
2 eggs, beaten
1/2 cup milk

Steps:

  • Preheat oven to 350.
  • Oil or spray muffin tins with cooking spray.
  • Sift together the dry ingredients.
  • Add the rest of the ingredients and stir until just moistened.
  • Divide into 12 muffins and bake for 15-20 minutes until cooked in centre.
  • Remove from pan after 5-10 minutes and let cool.
  • place in a airtight container and try not to eat for 24 hours as they will become more moist.

1 ½ cups milk
¾ cup rolled oats
2 tablespoons brown sugar
1 tablespoon white sugar
2 teaspoons ground cinnamon
1 teaspoon pumpkin pie spice
¼ teaspoon salt
¼ cup canned pumpkin

Steps:

  • Bring milk to boil in a small pot over medium-high. Stir oats, brown sugar, white sugar, cinnamon, pumpkin pie spice, and salt into the boiling milk. Place a cover on the pot, reduce heat to medium-low, and cook, stirring occasionally, for 3 minutes. Stir pumpkin puree into oat mixture until smooth; cook and stir continually another 2 minutes.
  • Remove from heat; let oatmeal set 2 minutes before serving.

1 can (15 ounces) solid-pack pumpkin
1 cup steel-cut oats
3 tablespoons brown sugar
1-1/2 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon
3/4 teaspoon salt
3 cups water
1-1/2 cups 2% milk
Optional toppings: Toasted chopped pecans, ground cinnamon, and additional brown sugar and milk

Steps:

  • In a large bowl, combine the first 6 ingredients; stir in water and milk. Transfer to a greased 3-qt. slow cooker. Cook, covered, on low 5-6 hours or until oats are tender, stirring once. Serve with toppings as desired.

Even though we like it made with whole milk for a rich and creamy taste, it is equally delicious made with 1 or 2 percent milk. Make a large batch and thin it out with a little milk or water before reheating for a speedy morning meal.

One 15-ounce can pure pumpkin puree
2 cups milk, plus more for serving
1/2 cup dried cranberries or raisins
1/4 cup light brown sugar (packed), plus more for sprinkling
1 teaspoon pumpkin pie spice
1 teaspoon pure vanilla extract
Kosher salt
2 cups old-fashioned rolled oats
Pepitas (toasted pumpkin seeds), for serving

Steps:

  • Whisk the pumpkin puree, milk, 2 cups of water, the dried cranberries, brown sugar, pumpkin spice, vanilla and a large pinch of salt together in a medium saucepan. Bring to a simmer over medium heat, then add the oats and reduce the heat to medium-low. Gently simmer, stirring frequently, until the oats are tender and the oatmeal is the consistency you like, 10 to 15 minutes (15 minutes for very thick oatmeal).
  • Ladle the oatmeal into bowls and serve drizzled with milk and sprinkled with a little extra sugar and pumpkin seeds.

Pumpkin, cinnamon, nutmeg, and other wonderful pumpkin spices are the perfect addition to your traditional oatmeal cookies.

3/4 cups unsalted butter (softened (1 1/2 sticks))
1 cup dark brown sugar
1/2 cup granulated sugar
1 egg
3/4 cup pumpkin puree
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon freshly ground nutmeg
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
3 cups rolled oats

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Grease a baking sheet, or line it with parchment paper or a silicone mat.
  • In a large bowl with a hand mixer or in the bowl of a stand mixer affixed with the paddle attachment, beat the butter and sugars on medium speed until well-blended, about one minute. Add the egg and beat until incorporated. Add the pumpkin puree and vanilla extract. Mixture may appear slightly curdled, but don't worry! It's all good. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. With the mixer on slow speed, add the dry ingredients to the wet, and mix just until blended. Add the oats and mix just until incorporated - overmixing will lead to a tough cookie. Nobody likes tough cookies.
  • Scoop onto cookie sheet in three-tablespoon mounds (I use a 50 mm cookie scoop). Place about two inches apart.
  • Bake at 350 degrees for 10 - 12 minutes, until set and beginning to turn golden.
  • Let sit for 5 minutes then transfer to a cookie sheet to cool completely. They keep well at room temperature in an airtight container for 3 - 4 days, or freeze in a zipper bag for 1 - 2 months.

1/2 teaspoon salt
1 cup (2 sticks) butter, softened
1 ¼ cups packed brown sugar
1 cup canned pure pumpkin
1 large egg
1/2 cup Torani Pumpkin Spice syrup
1 teaspoon Torani French Vanilla syrup
3/4 cup chopped walnuts
1 cup raisins
For glaze (optional):
1 ½ cups powdered sugar
1 ½ teaspoons Torani French Vanilla syrup
4 teaspoons water

Steps:

  • Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper. Combine flour, oats, baking soda, cinnamon, nutmeg and salt in medium bowl. With an electric mixer, beat butter and brown sugar in a bowl until light and fluffy. Add pumpkin, egg, Torani Pumpkin Spice syrup and Torani French Vanilla syrup and mix well. Add flour mixture, mix well. Stir in nuts and raisins. Drop a large tablespoon of dough onto baking sheets, and spread the batter into a circle. Repeat with remaining dough. Bake for 14 to 16 minutes, or until cookies are firm and lightly browned. Cool on baking sheets for 2 minutes and then remove to wire racks to cool completely. For optional glaze: Combine powdered sugar, Torani French Vanilla syrup and water in a small bowl and mix well. Drizzle glaze over cooled cookies.

Its pumpkin everything season , my son loves pumpkin anything and sent me this recipe to try for him, it was a big hit.

1 1/2 cup(s) sugar
1/2 cup(s) brown sugar
12 tablespoon(s) butter
2/3 cup(s) milk
sm box(es) instant pumpkin spice pudding (if you can not find it and i did not , use either vanilla or butterscotch instant pudding mix (i used sugar free cause there is enough sugar already in recipe) and add 1 tablespoon pumpkin pie spice to the dry pudding
3 1/2 cup(s) quick oatmeal
1 teaspoon(s) pumpkin pie spice (on top of what you have already added to pudding mix)
1 teaspoon(s) vanilla extract

Steps:

  • Bring to a boil in a medium sauce pan both sugars,butter and milk, boil for 2 minutes. Remove from heat and add dry pudding mix. stir completely and add oatmeal and vanilla. Let it sit for 5 minutes and drop by rounded tablespoons onto wax paper and cool completely. I use a sm ice cream scoop.

1 dash Salt (to taste)

Steps:

  • Add Mom's Best Cereals Old Fashioned Oats, water, almond milk, pumpkin puree, vanilla, spice and salt to pot. Stir to combine.
  • Bring to a boil over medium high heat.
  • Stir, reduce heat, and simmer about 3 minutes, stirring occasionally.
  • Stir, remove from heat, and cover for 5 minutes.
  • Serve with maple syrup and optional toppings (walnuts, dates, craisins, apple slices, etc.)
