DULCE DE LECHE COFFEE CAKE WITH PUMPKIN PIE SPICE CRUMBS



Dulce de Leche Coffee Cake with Pumpkin Pie Spice Crumbs image

The aromatic spices found in pumpkin pie will bring everyone to the kitchen for this dulce de leche-drizzled coffee cake.

3/4 cup all-purpose flour
2/3 cup packed light brown sugar
1 1/2 teaspoons pumpkin pie spice
Pinch of fine salt
5 tablespoons unsalted butter, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature, plus more, for the pan
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 cup sour cream
2/3 cup dulce de leche

Steps:

  • Combine the flour, brown sugar, pumpkin pie spice and salt in a small bowl and mix well. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Sprinkle half of the crumb topping over the batter. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the remaining crumb topping. Drizzle the dulce de leche over the top.
  • Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert back onto a rack to cool completely.

As I can't have neither dairy nor soy and rice milk cannot be steamed, I thought of another way to get a creamy "cappuccino". If you have fresh organic eggs which are safe to eat raw or warmed, make this as suggested. If not, just use steamed milk or soymilk on top of your coffee! But I found this to be a great protein post work out snack.

1 cup coffee, hot
1 large egg
1/4 cup rice milk
1 tablespoon molasses
1 teaspoon pumpkin pie spice

Steps:

  • Brew coffe as you're used to. It should be really steaming hot. Stir in molasses.
  • Place egg, rice milk and pumpkin pie spice in a blender and blend until foamy.
  • Slow speed down and slowly drizzle in the steaming hot, sweetened coffe.
  • As soon as all coffee is incorporated in the egg mixture, give it another whirl at high speed.
  • Serve immediately.
  • If made with steamed milk, stir half of the spice and molasses into the coffee and heat the other half of the spice with the milk. Steam milk and top coffee with steamed spiced milk.

If you should run out of coffee creamer at home, at times, if you have the ingredients on hand, you can make your own! That is what I did!

2 cup(s) regular powdered coffee creamer
3/4 cup(s) sugar (use 3/4 to 1 cup sugar to suit your taste)
2 tablespoon(s) pumpkin pie spices

Steps:

  • Combine all ingredients in a bowl; stir with a wire whisk. Pour in to an air tight container.
  • *This makes enough to fill a 15 oz. container; be sure that container is air tight.

This is a great fall recipe! It really warms your toes and gets you in the festive mood! I noticed that it was very difficult to find this coffee flavor so I started experimenting and came up with my own. Enjoy as I do (:

5 cup(s) ice water
5 - scoops of your favorite coffee
a few dash(es) pumpkin pie spice
1 teaspoon(s) vanilla extract
- whipped cream for topping
dash(es) cinnamon

Steps:

  • Add 5 cups of ice cold water to coffeemaker. (The colder the water the better the coffee!) Add 5 scoops of your favorite coffee beans/grinds to the coffeemaker. (Use more or less to suit your taste) To the grinds (before brewing) add pumpkin pie spice. To the bottom of the empty carafe/pot (before brewing) add vanilla extract. Brew coffee as usual. Prepare your coffee as you usually would however I would recommend less sweetener then usual. Add whipped cream and cinnamon to the top for an extra special treat! Enjoy
