24 European-style cookies for coffee (speculoos cookies), finely crushed (about 1-3/4 cups)
1 cup sugar, divided
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
3/4 cup canned pumpkin
2-1/4 tsp. pumpkin pie spice, divided
1 tsp. vanilla
3 eggs
1 Tbsp. MAXWELL HOUSE Instant Coffee
1 cup whipping cream

Steps:

  • Heat oven to 325°F.
  • Combine cookie crumbs and 2 Tbsp. sugar; press onto bottoms of 24 paper-lined muffin cups, adding about 1 Tbsp. crumb mixture to each cup.
  • Beat cream cheese and 3/4 cup of the remaining sugar in large bowl with mixer until blended. Add pumpkin, 2 tsp. pumpkin pie spice and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Stir in coffee granules until completely dissolved. Spoon over crusts.
  • Bake 26 to 30 min. or until centers are almost set. Cool completely. Refrigerate 2 hours.
  • Beat whipping cream with remaining 2 Tbsp. sugar in clean bowl with mixer on high speed until stiff peaks form. Spoon into pastry bag; use to pipe whipped cream over cheesecakes. Sprinkle with remaining pumpkin pie spice.

4 cups finely crushed gingersnaps
1 stick unsalted butter, melted
1 tablespoon grated fresh ginger
1 pound cream cheese, softened
1/2 cup packed light brown sugar
1/2 teaspoon ground cinnamon
Pinch of grated nutmeg
Pinch of ground allspice
Pinch of ground cloves
1/4 teaspoon salt
3/4 cup fresh or canned pumpkin puree
2 large eggs

Steps:

  • Preheat the oven to 325 degrees. To make the crust, combine the gingersnap crumbs with the melted butter and toss together until the mixture holds together when pressed. Add an additional tablespoon of melted butter if necessary. Pat evenly over the bottom and halfway up the sides of 8 (4 1/2-inch) tartlet pans. Bake about 7 minutes, or until set. Remove from oven.
  • Meanwhile, make the filling. Put the grated ginger in a fine sieve set over a small bowl and press against it to extract the juice. Set aside the ginger juice and discard the pulp. In the bowl of an electric mixer, combine the cream cheese, brown sugar, spices and salt. Beat until creamy and well-combined. Beat in the ginger juice and the pumpkin puree. Add the eggs one at a time, beating after each until blended but being careful not to overbeat. Pour the filling into the tartlet pans and bake 25 to 35 minutes, or until the center is just firm to the touch. Cool to room temperature then chill at least 2 hours or overnight before serving.

Steps:

  • Preheat oven to 325° F. Line an 8-inch-square baking pan with foil and let edges hang over edge of pan. Spray foil with baking spray.
  • Combine crust ingredients and press into the base of the pan to cover the entire bottom. Bake for 10 minutes. Let cool on rack.
  • Using a mixer, beat cream cheese until smooth. Add the sugar and combine. Mix in pumpkin, then the egg,. Then add cinnamon, cloves and flour. Combine the mixture.
  • Stir in 1 cup of the Morsels & More® mixture. Pour batter over crust in pan; spread evenly. Bake for 15 minutes and remove from oven.
  • Sprinkle remaining Morsels & More® mixture on top of cheesecake and bake cheesecake an additional 15-17 minutes. Remove from oven and place on cooling rack.
  • Let pan cool to room temperature, then refrigerate for at least 1 hour prior to cutting.
  • Use edges of foil to remove whole cheesecake from pan. Slice up your creamy dreamy cheesecake bars and share with your family and friends!"

6 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line an 8-inch baking pan with parchment paper, ensuring there is an overhang on both sides.
  • Mix graham crackers and butter together in a bowl. Press over the bottom of the lined baking pan to make a crust.
  • Beat 8 ounces cream cheese in a bowl with an electric mixer until smooth and creamy. Add 1 egg, 1/4 cup sugar, espresso powder, and 1/2 teaspoon vanilla extract; beat until blended and smooth. Pour latte layer over the graham cracker crust and smooth with a spatula. Clean beaters.
