1 can (15 ounces) pumpkin
1/3 cup apricot spreadable fruit
1/4 cup packed brown sugar
1 teaspoon pumpkin pie spice
1 bottle (64 ounces) apple cider or unsweetened apple juice

Steps:

  • Place pumpkin, spreadable fruit, brown sugar and pie spice in a blender; cover and process until blended. Transfer to a pitcher; stir in cider until combined. Serve hot or chilled.

1 (12 fluid ounce) can frozen apple juice concentrate
3 cups water
½ cup pumpkin puree
2 tablespoons apricot preserves
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
4 tablespoons whipped cream, divided, or to taste

Steps:

  • Place apple juice concentrate in a blender. Use the empty juice can to add 2 cans water to the blender. Add pumpkin puree, apricot preserves, vanilla extract, and cinnamon. Blend on high until smooth, about 10 seconds. Pour into serving mugs and top with whipped cream.

Pumpkin juice recipe that isn't too sweet or thick and works well for any autumn party. I stumbled onto this recipe years ago to use at a party we gave for the theatrical release of the last Harry Potter movie. It was surprisingly delicious and is the best recipe I've ever seen for pumpkin juice. This works well with spiced rum if you've got an interest in a bit of an adult twist.

2 quarts apple cider, divided
1 (2 inch) piece fresh ginger, sliced
1 cinnamon stick
½ teaspoon whole cloves
½ cup brown sugar
¼ cup honey
1 (28 ounce) can pumpkin puree

Steps:

  • Stir 3 cups apple cider, ginger, cinnamon stick, and cloves together in a saucepan; bring to a boil, reduce heat to low, and simmer until slightly reduced, about 15 minutes.
  • Remove saucepan from heat and immediately stir brown sugar and honey into the cider mixture until dissolved into the liquid.
  • Pour the liquid into a wide glass dish and refrigerate until chilled completely, at least 45 minutes.
  • Mix the chilled apple cider mixture with the remaining apple cider and the pumpkin puree in a large pitcher; stir until the puree dissolves into the liquid.

1 kg pumpkin, cubed
3 tablespoons oil
250 g spinach leaves
250 g lettuce leaves
1 red capsicum, chopped
2 tomatoes, chopped
1 small cucumber, cubed
3 tablespoons chopped coriander
3 tablespoons chopped basil
1 red onion, thinly sliced
1 tablespoon chile pepper jam
2 tablespoons lime juice
1 tablespoon soy sauce
1 tablespoon palm sugar
1/4 cup stock

Steps:

  • To make dressing bring chili jam, lime juice, soy, sugar and stock to boil.
  • Set aside.
  • Toss cubed pumpkin in oil and and roast till golden 200c about 45minutes.
  • Mix all salad ingredients together add pumpkin and drizzle over dressing!
  • Can add 1-2 tablespoons roasted peanuts, and fresh sliced chili.

30 oz unsweetened pumpkin puree
30 oz water
1 cup sugar
1 cup water
4 whole cinnamon sticks
3 whole nutmeg pods, split in half
¾ cup apricot juice
¾ cup apple juice
1 tablespoon lime juice
1 teaspoon freshly grated nutmeg
1 teaspoon freshly grated cinnamon

Steps:

  • Make the pumpkin juice: In a medium pot, combine the pumpkin purée and water. Bring to a boil over medium-high heat, then remove the pot from the heat. Strain through a cheesecloth into a large jar or container. Cover and transfer to the refrigerator to chill for about 30 minutes. You should have about 4 cups.
  • Make the spiced syrup: In a small saucepan, combine the sugar, water, cinnamon sticks, and nutmeg pods. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, stirring occasionally, until the sugar dissolves and the syrup thickens, 3-4 minutes. Transfer to an airtight container and refrigerate until ready to use, up to 1 month.
  • Make the juice: In a large pitcher, combine the pumpkin juice, apricot juice, apple juice, ½ cup of the spiced syrup, the lime juice, grated nutmeg, and grated cinnamon. Mix well to combine. Serve chilled.
