PUMPKIN LOAF

This is a dense, moist loaf that is a great way to use up that extra pumpkin puree when you are tired of pumpkin pie. We love it for breakfast, and my daughter likes to take a slice in her lunch. It makes two loaves. Hope you enjoy!

2 cups pumpkin puree
2 cups white sugar
1 cup oil
4 eggs
2 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1/4 teaspoon ginger
2 cups raisins

Steps:

  • Preheat oven to 350 degrees and grease 2 loaf pans.
  • Mix together well the pumpkin, sugar, oil and eggs.
  • Add flour, baking powder, baking soda, cinnamon, ginger and raisins, and mix well.
  • Pour into loaf pans and bake for 60-65 minutes or until inserted knife comes out clean.

4 ounces cream cheese, softened
¼ cup margarine
1 ¼ cups white sugar
2 eggs
1 cup canned pumpkin
1 ¾ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
  • Put softened cheese, butter, and sugar in mixing bowl. Cream together well. Beat in eggs one at a time until blended. Mix in pumpkin.
  • In another bowl combine flour, soda, baking powder, salt, cinnamon, cloves, and walnuts. Stir until thoroughly mixed. Pour all at once over batter. Stir just enough to moisten. Turn into greased 9x5x3 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 60-70 minutes until inserted toothpick comes out clean. Cool 10 minutes in pan. Remove to rack to finish cooling.

Derived from Annette Symms' "Symply too good to be true" Low fat cookbook, this is a modified version of her "Moist Fruit Cake". It is especially delicious with a little ginger marmalade, and being a loaf, slightly heavier.

1/2 cup dates (diced)
1/2 cup dried apricot (diced)
1/2 cup brown sugar
1 cup water
1 teaspoon baking soda
1 teaspoon mixed spice
1 teaspoon ground ginger
1 cup pumpkin (mashed)
2 eggs
2 cups whole wheat flour
3 teaspoons baking powder
1/2 cup walnuts (crushed)

Steps:

  • Heat the oven to 425 degrees F.
  • Pour the water into a saucepan and add the diced fruit, sugar and spices. Boil for 3 mins and stir in the baking soda, leaving it to cool.
  • Microwave (or boil) the pumpkin until soft enough to mash. To microwave pumpkin, chop it up into chunks and place in a lidded (microwave safe) container with a little water. Microwave for four minutes, test softness, and then continue to microwave in two minute blocks until soft enough to mash easily. Let it cool a little before attempting to peel the skin off.
  • Combine the pumpkin with the fruit mix and mix well.
  • Add in the eggs.
  • Sift together flour and baking powder, then stir into the wet mixture.
  • Toss in the walnuts. Stir to combine.
  • Line your loaf tin with baking paper and pour in the mixture. Bake for approximately 30 mins, testing with a skewer after that time.

This started as zucchini bread; I changed to pumpkin, altered the spices, and cut out most of the fat. The applesauce makes it so moist that it's very difficult to tell that there's no fat in it; this is one of my favorites to bring in to work.

16 ounces canned pumpkin
1 2/3 cups sugar
1 cup applesauce
2 teaspoons vanilla
2 eggs
4 egg whites
3 cups white flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon nutmeg
1 teaspoon allspice
1/2 teaspoon baking powder
1/2 cup chopped nuts
1/4 cup raisins
1/2 cup dried cranberries

Steps:

  • Adjust oven rack so that the top of a loaf pan will be in the middle of the oven and heat the oven to 350.
  • Grease two 8.5 x 4.5 loaf pans.
  • Combine pumpkin, sugar, applesauce, vanilla, and eggs.
  • Stir in spices and salt.
  • Combine flour, baking powder, and baking soda, and stir into wet ingredients.
  • Blend in nuts, raisins, and cranberries.
  • Pour batter into loaf pans (While this could make 1 large loaf; it's unwieldy and doesn't cook well).
  • Bake 50-60 minutes, or until toothpick inserted in center comes out clean.
  • Cool 10 minutes in pans, them remove from pans to finish cooling.

2 cups all-purpose flour
2 teaspoons pumpkin pie spice
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 (15 ounce) can pumpkin puree
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup fat-free evaporated milk
1 large egg
1 large egg white
1 tablespoon vegetable oil
1/4 cup chopped nuts

Steps:

  • PREHEAT oven to 350°F Grease 9 x 5-inch loaf pan.
  • Combine flour, pumpkin pie spice, baking powder, salt and baking soda in medium bowl. Blend pumpkin, granulated sugar, brown sugar, evaporated milk, egg, egg white and oil in large mixer bowl. Add flour mixture; mix just until moistened. Pour into prepared loaf pan; sprinkle with nuts.
  • Bake for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes; remove to wire rack to cool completely.

1/4 cup butter, softened
1 1/4 cups packed brown sugar
2 eggs
1 3/4 cups all-purpose flour

1/2 teaspoon nutmeg
1 cup pumpkin puree (homeade or canned)
1 teaspoon grated orange rind
3/4 cup raisins or 3/4 cup chopped dates
1/2 cup chopped nuts (optional)
4 ounces spreadable cream cheese
2 tablespoons icing sugar
1 teaspoon grated orange rind

Steps:

  • Loaf-----------.
  • Beat cheese, butter, brown sugar and eggs to gether on electric mixer until light and creamy.
  • Combine next 6 dry ingredients.
  • Stir into creamed mixture alternately with pumpkin.
  • Mix well, Stir in orange rind, raisins and nuts.
  • Spread in greased 9 inch x 5 inch loaf pan.
  • Bake at 350 degrees for 50-60 minutes or until toothpick inserted in centre comes out clean.
  • Cool in pan 15 minutes, then turn out onto rack and cool completely.
  • Wrap cooled loaf and store 1 day before slicing to let flavours mellow.
  • Icing----------.
  • Beat all ingredients together until smooth.
  • Store covered in refrigerator until ready to serve loaf.
  • Can be served separately and spread on slices of loaf or ice entire loaf top and sides.

1/2 teaspoon salt
1 cup pumpkin, cooked and mashed (can use canned)
2/3 cup sugar
1/3 cup sour cream
1/3 cup vegetable oil
3 tablespoons orange marmalade
1 egg, beaten
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon nutmeg, freshly grated
1/8 teaspoon ground cloves
2/3 cup pecans, chopped
1 (8 ounce) package cream cheese, softened
1/2 cup orange marmalade

Steps:

  • Bread:.
  • Grease and flour a 9 x 5 x 3 inch loafpan; line with wax paper. Grease and flour the wax paper. Set aside.
  • Combine flour, baking powder, soda, and salt; stir well. Combine pumpkin and the next 9 ingredients in a medium mixing bowl; beat well at medium speed of an electric mixer. Add flour mixture to the pumpkin mixture, beating well. Stir in the pecans.
  • Pour batter into prepared pan. Bake at 350 degrees for 45 to 50 minutes or until a wooden pick inserted in the center comes out clean. Let it cool in the pan for 10 minutes. Remove from the pan; remove wax paper, and let it cool completely on a wire rack.
  • Cream Cheese Spread:.
  • Beat the softened cream cheese at medium speed of an electric mixer until smooth. Add 1/2 cup orange marmalade, beating mixture until it is well blended. Serve with the bread.
