8 oz. container frozen whipped topping
1/2 of a can (15 oz.) of pureed pumpkin
1 tsp. pumpkin pie spice
1 small package (3 oz.) of instant vanilla pudding
Gingersnap cookies (or graham crackers)
Apples, sliced

Steps:

  • Using an electric blender, blend the first four ingredients in a large mixing bowl. Then just refrigerate the dip until you are ready to serve. Share the dip with cookies and/or apples.

20 - graham cracker squares, crushed
1/2 cup(s) melted butter
1/3 cup(s) white sugar
60 - large marshmallows
2/3 cup(s) milk
2 1/2 cup(s) pumpkin
1 teaspoon(s) cinnamon
1 teaspoon(s) ginger
1/2 teaspoon(s) nutmeg
1/2 teaspoon(s) salt
1 pint(s) whipping cream, plus more to dollop top
6 tablespoon(s) white sugar
1 teaspoon(s) vanilla

Steps:

  • Mix crushed crackers with melted butter and white sugar. Pat into 9x13 pan, saving a little to crumble over top.
  • Melt 60 large marshmallows in 2/3 cup milk. Add 2 1/2 cups pumpkin, cinnamon, ginger, nutmeg and salt. Stir well and cool.
  • Whip 1 pint whipping cream with white sugar and vanilla. Fold into cooled pumpkin mixture. Pour into crust and sprinkle crumnbs over top. Cool in refrigerator several hours or make the date before. Top with dollops of more whip cream.
