½ cup brown sugar
2 teaspoons pumpkin pie spice
1 ½ teaspoons baking powder
½ teaspoon salt
¼ teaspoon baking soda
¾ cup pumpkin puree
2 eggs
¼ cup milk
¼ cup butter, softened
1 cup confectioners' sugar, sifted
¼ teaspoon vanilla extract
½ teaspoon pumpkin pie spice
4 teaspoons milk, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease 2 baking sheets.
  • Stir flour, brown sugar, 2 teaspoons pumpkin pie spice, baking powder, salt, and baking soda together in a large bowl.
  • Mix pumpkin, eggs, milk, and butter into flour mixture; beat until completely incorporated.
  • Spoon pumpkin mixture into a pastry bag fitted with a large star tip with a 1/2-inch opening. Pipe 3-inch circles onto prepared baking sheets.
  • Bake in the preheated oven until golden brown, about 13 minutes. Remove doughnuts to a wire rack to cool.
  • Stir confectioner's sugar, 1/2 teaspoon pumpkin pie spice, and vanilla together in a bowl. Gradually stir in enough milk to reach a glaze consistency. Brush glaze over doughnuts with a pastry brush or spoon over the tops.

1 cup sugar
1 teaspoon ground cinnamon
1 stick unsalted butter, room temperature, plus 4 tablespoons, melted, and more for pans
2 1/4 cups unbleached all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/4 teaspoons kosher salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
2/3 cup granulated sugar
1/3 cup packed light-brown sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract
3/4 cup buttermilk
3/4 cup pumpkin puree

Steps:

  • Pepita Sugar:Pulse pepitas in a food processor until fine. Add sugar and cinnamon; pulse to combine. Sugar can be stored in an airtight container up to 1 week. (Makes 1 cup.)
  • Donuts:Preheat oven to 425 degrees. Lightly brush 3 standard donut pans with butter. Whisk together flour, baking powder, baking soda, salt, cinnamon, and allspice.
  • Beat butter with both sugars on medium-high speed until light and fluffy, about 2 minutes. Add eggs, one at a time, beating to combine after each addition. Beat in vanilla, then flour mixture in two additions, alternating with buttermilk and pumpkin.
  • Transfer batter to a piping bag fitted with a large plain tip (such as Ateco #807), or to a resealable plastic bag, then snip a 1/2-inch hole in one corner. Pipe 3 tablespoons batter into each cup of pans. Bake until tops spring back when lightly touched, about 11 minutes. Let cool in pans 10 minutes, then transfer to wire racks set in rimmed baking sheets and let cool until just warm to the touch, 10 minutes more.

  • 10/7/2010 -- OK -- lots of bad reviews -- I even noted at the bottom of my recipe that this has bad reviews and people continue to make and complain. This also has really good reviews, I've checked and double checked. If you're a cook and don't agree with the recipe -- move on to another recipe This is not my own, it came from Todd Wilbur who does the CopyCat recipes. I've made these -- they were great. If you think 30 oz. of Pumpkin is too much -- move in to another recipe, or use less. I am going to delete this, as my other recipe's have great reviews.
  • Preheat oven to 350. Mix together spice cake mix, pumpkin, pudding and vanilla. Add sour cream, eggs, oil and spice. When blended well, drop a large scoop of batter into lined muffin tins. Fill to the top. Sprinkle the tops with brown sugar. Bake for 30 minutes, or until toothpick comes out clean.
  • The first reviewer of this recipe thought a 30 ounce can of pumpkin was too much, but that is the correct amount, and it comes out wonderfully moist. I've given this recipe to people who've raved over the results. I'm sorry to the reviewer that it didn't work out. It's frustrating to invest in ingredients, only to be disappointed.

  • make the donuts: whisk together the flour, baking powder, salt, cinnamon, ginger, baking soda, nutmeg and cloves. beat sugar and butter in large bowl until blended (mixture will be grainy). beat in egg, then yolks and vanilla. gradually beat in buttermilk; fold in pumpkin in 4 additions. cover with plastic and chill 3 hours.

  • Make the chai spice mix: In a small bowl, stir together the cinnamon, cardamom, cloves, nutmeg, and anise seeds until well combined.
  • Make the donuts: In a medium bowl, whisk together the flour, baking powder, salt, and 1 tablespoon of the chai spice mix.
  • In a small bowl, mix together the pumpkin purée and sour cream.
  • In a large glass bowl, combine the butter, ginger, and sugar. Beat with an electric hand mixer on medium speed until smooth and creamy, about 1 minute.
  • With the mixer running, add the egg and egg yolks, 1 at a time, and mix until fully incorporated.
  • Add ⅓ of the flour mixture and continue mixing until just combined. Then, add half of the pumpkin mixture and mix until just combined. Continue alternating additions, finishing with the flour mixture and mixing until the dough just comes together.
  • Cover the bowl with plastic wrap and refrigerate for 1 hour.
  • Line a baking sheet with parchment paper.
  • Turn the dough out onto a floured surface and dust the top with more flour. Use a rolling pin to roll out to ¼ inch thick. Use a 3½-inch round cutter to cut out 9 rounds. Then, use a 1-inch round cutter to cut out the centers of each round (gather and re-roll the scraps once if needed to get 9 donuts). Place the donuts on the prepared baking sheet and refrigerate for 30 minutes.
  • Heat the oil in a large pot over medium heat until the temperature reaches 350°F (180°C).
  • Working in batches to avoid overcrowding the pot, fry the donuts in the hot oil until golden brown and crisped, flipping once, about 2 minutes per side. Transfer to a wire rack set over paper towels to drain.
  • Make the chai glaze: In a medium bowl, whisk together the powdered sugar, remaining ½ teaspoon of the chai spice mix, and the milk until smooth.
  • Dip the top of each donut in the glaze to coat, then return to the rack to let any excess glaze drip off.
