This recipe makes wonderfully soft butternut flavoured rolls with brown sugar and pecan nut filling, topped with cinnamon and pecan icing. You can swop out the butternut for sweet potato or pumpkin for an alternative flavoured bun.

1 1/4 cups warm milk (300ml)
1 cup cooked mashed butternut squash (alternatively Sweet Potato or Pumpkin)
2 eggs, beaten
4 tablespoons butter
1/4 cup sugar
3/4 teaspoon salt
4 cups bread flour (580g)
2 teaspoons active dry yeast
1 teaspoon ground cinnamon
1/2 cup butter, to spread on rolled out dough (120ml)
1/2 cup finely chopped pecan nuts
1/2 cup tightly packed brown sugar
4 teaspoons ground cinnamon
2 cups icing sugar
1/4 cup finely chopped pecan nuts
1 teaspoon ground cinnamon
hot water, to make a liquid icing

Steps:

  • Method for Buns:.
  • 1. Place flour, sugar, cinnamon, yeast, salt and butter in the pan of your bread machine.
  • 2. Mix milk, butternut and eggs together and pour this on top of dry ingredients and butter already in your bread machine pan.
  • 3. Select the dough cycle of your machine according to your manufacturer's directions (about 2hours), (alternatively you can mix by hand, kneading and allowing time to rise).
  • 4. When cycle is complete, remove dough to a lightly floured board and punch down.
  • 5. Line a baking tray about 9 x 12 x 2 with butter.
  • 6. Mix together the dry ingredients for the filling (pecan nuts, brown sugar and cinnamon) and put to one side.
  • 7. Roll the dough out to form a rectangle about 18 x 12 inch's.
  • 8. Spread the 120ml of butter from the filling evenly on the one side of the rolled out dough.
  • 9. Evenly spread the filling ingredients (pecan nuts, brown sugar and cinnamon) over the buttered dough rectangle and roll up from the shortest side to make a cylinder of rolled up dough.
  • 10. Divide the rolled up dough by cutting it into 12 equal pieces and place these in the baking sheet 3 rows of 4. .
  • 11. Now cover and let rise in a warm place until doubled (about 40mins to 1 hour).
  • 12. Bake at 160°C or 350°F for 18 to 20 minutes or until lightly browned.
  • 13. Remove from the oven and let cool for 5 mins before topping with the icing.
  • Method for Icing:.
  • 1. In a bowl mix together the icing sugar, finely chopped pecan nuts and ground cinnamon and pour in a few teaspoons of warm boiled water to get a stiff liquid consistency.
  • 2. Pour a tablespoon of the icing liquid on top of each bun and allow it to cool and the icing to set.
  • 3.Enjoy with a cuppa.

2 tablespoons active dry yeast
1/2 cup warm water (110° to 115°)
4 large eggs, room temperature
1 cup shortening
1 cup canned pumpkin
1 cup warm whole milk (110° to 115°)
1/2 cup sugar
1/2 cup packed brown sugar
1/3 cup instant vanilla pudding mix
1/3 cup instant butterscotch pudding mix
1 teaspoon salt
8 to 9 cups all-purpose flour
FILLING:
1/4 cup butter, melted
1 cup packed brown sugar
2 teaspoons ground cinnamon
ICING:
3 tablespoons water
2 tablespoons butter, softened
1 teaspoon ground cinnamon
2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the eggs, shortening, pumpkin, milk, sugars, pudding mixes, salt and 6 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down; divide in half. Roll each portion into a 12x8-in. rectangle; brush with butter. Combine brown sugar and cinnamon; sprinkle over dough to within 1/2 in. of edges., Roll up jelly-roll style, starting with a long side; pinch seams to seal. Cut each into 12 slices. Place cut side down in 2 greased 13x9-in. baking pans. Cover and let rise until doubled, about 30 minutes., Bake at 350° until golden brown, 22-28 minutes. In a small bowl, combine the water, butter and cinnamon. Add confectioners' sugar and vanilla; beat until smooth. Spread over buns. Serve warm.

1/2 ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon kosher salt
Pinch of cloves
6 ounces unsalted butter, room temperature
CARAMEL:
8 ounces unsalted butter, room temperature
1/2 cup dark brown sugar, packed
6 tablespoons light corn syrup
1/2 teaspoon kosher salt
1/3 cup bourbon
2 cups pecan halves, lightly toasted

  • STICKY BUNS: Melt the butter in heavy-bottomed saucepan over medium-high heat until it foams, about 5 minutes. As soon as it subsides and begins to have a nutty aroma, pull the saucepan immediately off the heat. The butter will burn quickly so be careful. Set aside to cool. Begin making the sticky dough in a large mixing bowl by sprinkling the yeast over the warm water. Let the yeast sit until slightly foamy and creamy, 5 to 6 minutes. Heat the milk and sugar in a small saucepan over low heat just until the sugar dissolves. Add the browned butter and set aside to cool. Add the cooled milk mixture to the yeast and whisk to combine. Add 15 ounces of the pumpkin puree and the salt and mix with a spatula. The dough will become sticky. Start adding the flour, one cup at a time until you have added all the flour. I place my dough in the laundry room, it's the warmest place in my house. When the dough has doubled in size, punch down the dough and either cover and chill the dough overnight or use it right away. In a medium bowl, combine the brown sugar, cinnamon, ginger, nutmeg, salt and cloves. Toss to mix and set aside. Divide the dough into 2 equal pieces. Remove one piece at a time while keeping the other half covered with plastic wrap. Lightly flour a work surface. Shape the dough into a rectangle. Since the dough is super soft, you may need additional flour. Keep in mind too much flour will make the dough heavy and dry. Roll each piece of dough into a 12- by 18-inch rectangle. Brush off any excess flour. Spread half the softened butter on each rectangle of dough, leaving a 1-inch border across the top length of the dough, followed by the remaining 7 ounces pumpkin puree - it will be messy, thats ok - and then half the brown sugar mixture. Starting with the wider edge, start rolling the dough from the bottom upwards. Roll this as tightly as you can. When you come up to the 1-inch border, slightly pinch it together. Once completed, set the first log on a baking pan and chill while rolling the remaining dough. Repeat the steps with the remaining dough, making sure to chill each log in between. These logs can be chilled overnight or for 2 hours if you want to bake them the same day. These are much easier to cut when cold. CARAMEL: While the dough is chilling, place a small pan over low heat and melt the butter. Add the brown sugar, corn syrup and salt. Increase the heat to medium and whisk until the sugar and syrup are dissolved, 3 to 4 minutes. Remove from the heat, whisk in the bourbon. The caramel should look shiny. If not, put back on the heat for 1 minute. Preheat the oven to 350°F. Spray the muffin pans. Pour about 1 1/2 tablespoons of the warm caramel into each muffin mold. Drop 2 to 3 toasted pecan halves into the caramel. Set aside and allow the caramel to cool to room temperature. Set aside the extra caramel sauce and pecans. Cut each log of buns into eight 1 1/2-inch slices. Round up the buns and fit them into pans, cover with a damp cloth and place in a warm spot until they double in size, about 30 minutes. Bake the buns, 22 to 25 minutes. Its a bit hard to test for doneness due to the sticky (and yummy) caramel. I tend to slightly under-bake them by 1 to 2 minutes rather than over-bake. Carefully remove the buns from the oven and allow them to cool in the pan, 5 to 10 minutes. Place a baking pan on top of the muffin pan and quickly invert. The buns should slowly unmold. Make them a new family tradition -- a show stopper for sure, but don't expect any leftovers!

We used Bisquick and canned pumpkin to make our streusel sticky buns and glazed them with maple sugar, brown sugar and chopped pecans.

1/2 cup packed light brown sugar
3/4 teaspoon pumpkin pie spice
1/3 cup maple syrup
2 tablespoons butter, melted
3/4 cup packed light brown sugar
3/4 cup chopped pecans
2 1/2 cups Original Bisquick™ mix
1/3 cup milk
1/3 cup canned pumpkin (not pumpkin pie mix)
2 tablespoons granulated sugar

Steps:

  • In 1-quart saucepan, melt 1/2 cup butter over medium heat. Stir constantly until butter turns a caramel brown color. Immediately remove from heat. Pour butter through strainer into a cup to remove blackened bits. Place cup in freezer to solidify butter.
  • When butter is solid, place it in medium bowl with remaining Streusel ingredients. Cut butter into mixture until crumbly; set aside.
  • Heat oven to 375°F. Lightly grease or spray 13x9-inch pan. In small bowl, mix maple syrup and 2 tablespoons melted butter; pour evenly in bottom of pan. Sprinkle with remaining glaze ingredients.
  • In large bowl, stir Bun ingredients until dough forms. Place dough on surface lightly sprinkled with Bisquick mix. Knead to smooth dough, about 10 turns. Roll out dough to 15x9-inch rectangle. Sprinkle dough with streusel. Roll up dough tightly from one long side; pinch seam to seal. Use sharp knife to cut dough into 12 equal slices. Place cut side down in pan; sprinkle with any extra streusel that falls out.
  • Bake 23 to 25 minutes or until golden brown. Immediately turn pan upside down, releasing buns onto serving plate; spoon any extra glaze that sticks to pan over buns. Serve warm.

1/2 teaspoon pure vanilla extract

Steps:

  • For the dough: Add the milk and 1/2 cup water to a medium saucepan and warm over low heat until it is about 100 degrees F (but no more than 110 degrees F). Remove from the heat and sprinkle the yeast over the surface over the liquid. Sprinkle a pinch of the granulated sugar over the top and set aside without stirring, until foamy, about 5 minutes.
  • Whisk in 4 tablespoons of the butter, the vanilla and egg yolk until well combined.
  • Whisk the flour, remaining granulated sugar and 3/4 teaspoon of salt together in a large bowl. Make a well in the center of the flour and use a wooden spoon to stir in the yeast mixture until the dough becomes thick and slightly sticky. Turn the dough onto a floured work surface and knead until it is soft and elastic, about 6 minutes. Shape the dough into a ball.
  • Brush the inside of a large bowl with the remaining melted butter. Place the dough in the buttered bowl, turning to coat lightly. Cover the bowl with plastic wrap and use a permanent marker to trace a circle the size of the dough onto the plastic, noting the time.
  • Let rise at room temperature until doubled in size, about 1 hour 30 minutes.
  • Turn the dough out of the bowl and knead briefly on a floured surface to release excess air; reshape the dough into a ball and return it to the bowl. Lightly butter a large piece of plastic wrap and tightly cover the entire bowl. Let the dough proof in the refrigerator for 4 hours and up to overnight.
  • For the filling: Grease a 9- by 13-inch baking dish with some of the butter. Whisk the granulated sugar and pumpkin pie spice together in a small bowl. Turn the prepared dough onto a floured work surface and press flat. Then roll into a 10- by 18-inch rectangle, with a long edge facing you. Spread the remaining 1 1/2 sticks of butter evenly over the surface of the dough, leaving about an inch border on the side opposite you.
  • Dollop the pumpkin puree over the butter and spread over to cover the same area as the butter. Evenly scatter the pumpkin spice-sugar mixture over the pumpkin puree. Starting from the long side facing you, roll the dough up into a tight 18-inch-long cylinder.
  • Lightly brush the clean edge of the dough with water, then press it to the cylinder to seal.
  • Slip a long taut piece of string or unflavored dental floss under the roll, about 1 1/2 inches from the end. Lift and cross the string ends over the roll, and then pull the ends tightly in opposite directions to cut a single roll. Repeat, cutting every 1 1/2 inches, to make 12 buns. Place the buns cut-sides-down in the prepared pan, leaving 1 inch of space between them. Cover the baking dish loosely with plastic wrap and set aside in a warm place to rise until the buns double in size, about 1 hour 30 minutes.
  • Position the rack in the center of the oven and preheat to 350 degrees F. Bake the buns until golden brown and the tops spring back when pressed lightly, about 30 minutes. Cool in the pan for 10 minutes.
  • For the glaze: Whisk together the confectioners' sugar, butter, milk, vanilla and a pinch of salt in a medium bowl until smooth. Drizzle over the warm buns and serve.
