Easy Pumpkin Beer Bread with Pepitas image

Use a bottle of your favorite pumpkin ale to make this easy and delicious beer bread. We've cut down on ingredients with baking mix (use store-bought Bisquick or make your own DIY mix with a few pantry staples you probably already have on hand.) This recipe is super customizable, so feel free to adjust the sugar to suit your taste. You can also get creative with the spices you use--cinnamon, nutmeg, and cardamom would all work well here.

3 cups baking mix
3 tablespoons white sugar
3 tablespoons brown sugar
2 ½ teaspoons pumpkin pie spice
1 (12 fluid ounce) bottle pumpkin ale
2 tablespoons pepitas (shelled green pumpkin seeds)

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x5-inch loaf pan with baking spray.
  • Stir baking mix, white sugar, brown sugar, and pumpkin pie spice together in a bowl. Add beer and stir until smooth. Pour batter into the prepared loaf pan and sprinkle the top with pepitas.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 50 minutes. Let cool in the pan for 10 minutes, then remove to a wire rack to cool completely.

**update 01/14/2014 I have made this twice and both the first time it turned out perfect the second time I doubled the recipe, baking both loafs at the same time both took longer to get done and even thought the tooth pick came out clean the bread looked and acted a bit under done. 3 cups flour (I used half all-purpose, and half whole-wheat flour)
1 tablespoon baking powder
2 teaspoons pumpkin pie spice
1 teaspoon salt
3 tablespoons honey
1 cup pumpkin puree
1 (12 ounce) bottle beer (I recommend trying a pumpkin ale)

Steps:

  • Preheat oven to 375 degrees. Grease a 9x5-inch bread pan with cooking spray, or line with parchment paper.
  • Stir flour, baking powder, salt, pumpkin pie spice, honey and pumpkin puree together in a large mixing bowl until combined. Slowly add in the beer, and stir until combined and smooth.

14.6 oz all-purpose flour (about 3 1/4 cups)
2 tsp salt
2 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1 tsp pumpkin pie spice
1/2 c water
1/3 c ground flaxseed
2 1/2 c granulated sugar
2/3 c canola oil
2/3 c honey beer (at room temperature), such as Michelob Honey Lager
1/2 c egg substitute
2 large eggs
1 1/4 can(s) pumpkin (15-oz cans)
cooking spray

Steps:

  • 1. Preheat oven to 350°.
  • 2. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour, salt, and next 4 ingredients (through pumpkin pie spice) in a medium bowl; stir with a whisk.
  • 3. Combine 1/2 cup water and flaxseed.
  • 4. Place sugar and next 4 ingredients (through eggs) in a large bowl; beat with a mixer at medium-high speed until well blended. 3/4 cup(s) lager beer
1/2 cup(s) canola oil
2 large eggs
2 1/4 cup(s) all purpose flour

1 teaspoon(s) cinnamon
3/4 teaspoon(s) baking soda
1/4 teaspoon(s) freshly grated nutmeg
1/8 teaspoon(s) ground cloves
1/2 cup(s) plumped raisins

Steps:

  • Preheat oven 350° and grease and flour a (9x5 inch) loaf pan or 4 mini-loaves. Whisk the first 5 ingredients. Mix next 7 ingredients together in another bowl.
  • Combine mixtures with a whisk or wooden spoon til just moistened. Fold in nuts and raisins. Pour beer bread batter into pans and bake 65 minutes or til a toothpick inserted in center comes out clean. 1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup dark brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger

1 12 oz bottle of Weyerbacher Imperial Pumpkin Ale

Steps:

  • 1. Preheat oven to 350 degrees F. Grease a 9"x5" loaf pan. 2. In a large bowl, whisk together dry ingredients, making sure to break up any brown sugar lumps. Stir in nuts and raisins. 3. Make a well in the center of the bowl and pour 1/3 to 1/2 of the beer into the center. The beer will foam vigorously. Carefully fold some of the dry ingredients into the center, until enough foam subsides that you can safely pour in the rest of the beer. Gently fold the remaining beer into the dough until it is just absorbed. Be careful not to over mix or stir vigorously, as this will destroy the bubbles and make the bread dense. 4. Pour dough into loaf pan and smooth the top with a spoon or rubber spatula. Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
