This unusual combination of pumpkin and shrimp is a surprise. Curry powder and chicken broth add flavor and aroma to an already fantastic fall soup. Serve it in a hollowed out pumpkin for company or for fun.

1 small sugar pumpkin
¼ teaspoon celery salt
½ teaspoon curry powder
3 cups milk
1 cup chicken broth
salt and pepper to taste
⅓ pound small shrimp - peeled and deveined
1 whole (6 pound) pumpkin, for serving

Steps:

  • Clean out the cooking pumpkin; remove the skin and cut into 1/2inch dice.measure 3 cups of cut-up pumpkin.
  • In a saucepan, simmer the pumpkin, celery salt, curry powder, milk, and broth for about 30 minutes.Stir to keep the milk from burning. Season with salt and pepper.
  • If you are going to serve the soup in a pumpkin, boil 2 quarts of water. Cut the top off of the pumpkin and clean out carefully.Cut a notch in the top for the ladle to stick through. Pour the boiling water into the pumpkin and swish around and then pour into sink. Pour the soup into the pumpkin and serve with lemon wedges.
  • Add half the shrimp to the pumpkin mixture and process in a food processor or blender until smooth. Return to saucepan and simmer. Add the remaining whole shrimp and simmer for 5 more minutes.

2 pound of pumpkin;
1 cup of cream cheese;
1 carrot;
½ cup of shrimp;
1 teaspoon of fresh ground pepper;
1 teaspoon of Italian seasoning mix;
½ mid-sized onion;
2 teaspoons of salt;
½ cup of fresh basil;
1 red bell pepper;

Steps:

  • Boil in a saucepan (4 qtr.) ½ onion, 1 carrot (peeled), 1 red bell pepper, sliced pumpkin until soft. When the veggies are ready, take them out, don't drain the stock, let them cool a little and blend them together with cream cheese. ***Note from Helen*** I peeled the pumpkin after I boiled it, because it was too hard to peel. All the other veggies should be peeled (and washed) before boiling.'''' Add the blended mix to your stock (you should have 3-4 cups of stock). Season the soup with salt, pepper. Simmer at the minimum heat for 10 minutes and then add shrimp. (***Note from Helen*** the shrimp should be washed, peeled and boiled in salt water separately. It takes only 3-5 minutes to cook your shrimp if it's raw.***) When you added the shrimp, boil your crème-soup for additional 3-5 minutes. Serve warm and add basil just before serving! Enjoy. 2 medium onions, sliced
2 medium carrots, thinly sliced
1 tablespoon snipped fresh cilantro
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1/2-1 teaspoon ground allspice
2 tablespoons butter or 2 tablespoons margarine
1 (14 1/2 ounce) can chicken broth, divided
1 (15 ounce) can pumpkin
1 cup milk
1 (16 ounce) package frozen peeled and deveined cooked shrimp, thawed

Steps:

  • In a large pot, melt butter.
  • Add onions, carrots, cilantro, ginger, garlic, and allspice; stir to mix.
  • Cover and cook 10-12 minutes or until vegetables are tender, stirring occasionally.
  • Transfer vegetable mixture to the container of an electric blender.
  • Add 1/2 cup chicken broth to the blender.
  • Cover and process until almost smooth.
  • In a saucepan, stir the pumpkin, milk, and rest of the chicken broth.
  • Add in the vegetable mixture and shrimp; cook until heated thoroughly; season with salt/pepper to taste.
