4 lb pork shoulder (, or butt)
2 Tablespoons oil (optional if searing)
1 Tbsp brown sugar
1 tablespoon chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon kosher salt
1 teaspoon black pepper
12 ounces coke (not diet)
bbq sauce for coating meat (optional)

Steps:

  • Slow Cooker Method: Place pork in slow cooker and pour coke around it. Cover and cook on LOW (recommended) 8 hours or high for 4-5 hours, until pork is tender and shreds easily with a fork.
  • Instant Pot Method: Place pork in instant pot and pour coke around it. Cook on Manual/High pressure for 70 minutes. When timer beeps, allow the pot to naturally release pressure, about 15 minutes longer. Remove lid and shred the meat.

Instant Pot® Applesauce Pork Loin image

Applesauce and apple cider add sweetness to a savory pork loin. This is good served with rice or mashed potatoes with the pan gravy on top.

1 tablespoon olive oil
½ teaspoon garlic powder
½ teaspoon kosher salt
ground black pepper to taste
1 (2 1/2 pound) pork loin
½ cup chicken broth
½ cup apple cider
¼ teaspoon ground thyme
½ cup applesauce
1 medium yellow onion, quartered
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat olive oil. Sprinkle garlic powder, salt, and pepper all over the pork loin and sear in the hot oil on all sides, about 2 minutes per side. Remove pork from the pot. Pour in chicken broth and scrape up all the browned bits so none are stuck on the bottom. Turn off Saute function.
  • Pour in apple cider and add pork loin back to the pot. Mix ground thyme into the applesauce and spread over the top and sides of the pork loin. Place onion slices around the pork loin. Close and lock the lid. Select High pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 15 minutes. Unlock and remove the lid.
  • Remove pork and onion slices from the pot. Mix cornstarch with cold water in a bowl.
  • Turn on Saute function and stir cornstarch mixture into the pan juices. Bring to a boil and cook until gravy has slightly thickened, 3 to 5 minutes. Serve gravy with the pork loin.

4 -5 lbs pork roast (Shoulder or Butt)
2 large sweet onions
18 ounces jack daniel's spicy original barbecue sauce
18 ounces applesauce
6 tablespoons brown sugar
3 teaspoons chili powder
buns or roll, of your choice

Steps:

  • Combine applesauce, BBQ sauce, brown sugar, and chili powder in mixing bowl.
  • Stir until blended evenly.
  • Cover and refrigerate until needed.
  • Cut onions in half, placing 2 halves in bottom of CrockPot.
  • Place pork roast on top of onions in the CrockPot.
  • Cover pork with remaining onion halves.
  • Cover and cook on low for 12 hours.
  • Remove onions and strain all liquid from CrockPot.
  • Using 2 forks, shred pork. Remove bones once meat has been removed during shredding process.
  • Stir in BBQ sauce.
  • Cook on low for another 4-6 hours.

1 tablespoon butter
¼ cup chopped onion
1 apple - peeled, cored, and sliced
2 (1/2-inch thick) pork chops
¾ cup applesauce
2 tablespoons brown sugar
½ teaspoon ground mustard
⅛ teaspoon ground cinnamon
½ teaspoon salt
ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat; cook and stir onion and apple slices in the melted butter until tender, about 5 minutes. Transfer onion and apple to a bowl.
  • Place pork chops in the same skillet; cook over medium heat until pork chops are browned on both sides, about 5 minutes per side.
  • Mix applesauce, brown sugar, mustard, and cinnamon into onion and apple mixture.
  • Place pork chops in a 9x9-inch baking dish; season with salt and black pepper. Spoon applesauce mixture over pork chops; cover dish.
