CHEESEBURGER EMPANADAS

These hand-held bites have all of the classic flavors of a cheeseburger, wrapped up in crispy puff pastry and dipped in "special sauce." They're perfect to put out for a sports-loving crowd or at a potluck.

Number Of Ingredients 12

1/2 cup ketchup
1/2 cup mayonnaise
1/2 cup finely chopped dill pickle chips plus 18 whole dill pickle chips
1/4 cup yellow mustard
Kosher salt and freshly ground black pepper
1 tablespoon canola oil
8 ounces ground beef chuck
1/2 small red onion, finely chopped
4 slices American cheese, roughly chopped
1 large egg
One 1.1-pound package frozen puff pastry (2 sheets), thawed
All-purpose flour, for dusting

Steps:

  • Position 2 racks in the middle of the oven and preheat the oven to 425 degrees F. Line 2 large baking sheets with parchment.
  • Stir together the ketchup, mayonnaise, chopped pickles and mustard in a medium bowl. Season with salt and set the sauce aside.
  • Heat the oil in a large skillet over medium-high heat. When it starts to shimmer, add the ground beef, a pinch of salt and a few grinds of pepper. Cook, breaking the meat apart with a wooden spoon or heatproof spatula, until lightly browned in spots and just cooked through, 3 to 4 minutes. Add the onion and cook, stirring constantly, until crisp-tender, about 2 minutes. Use a large slotted spoon to scoop the meat mixture into a medium bowl and stir in 1/3 cup of the sauce. Allow to cool slightly. Fold the American cheese into the cooled mixture.
  • Lightly beat the egg with 1 tablespoon of water in a small bowl for the egg wash and set aside.
  • Unfold 1 puff pastry sheet onto a lightly floured surface. Roll out into a 12-inch square. Cut out 9 rounds with a 4-inch round cookie cutter. Spoon 1 leveled tablespoon of the meat filling just off center on each round. Top the filling with 1 whole pickle chip. Brush the edge of each round with the egg wash and fold the puff pastry over the filling, slightly stretching if necessary. Press the edges together and crimp the edges with a fork. Transfer to one of the prepared baking sheets and brush each empanada with more egg wash. Repeat this process with the remaining sheet of puff pastry and filling. Bake until puffed and golden brown, about 15 minutes. Serve hot with the remaining sauce for dipping.

Petite burgers get jazzed up with melted cheese and puff pastry to create an appetizer everyone will adore. Vary the cheese and ground meat in a multitude of ways for ever-new, go-to hors d'oeuvres.

1 1/4 pound lean ground beef
1 tablespoon steak sauce
1 teaspoon seasoned salt
1/4 teaspoon freshly ground black pepper
4 green onion, finely chopped (about 1/2 cup)
1 package (17.3 ounces) Pepperidge Farm® Puff Pastry Sheets(2 sheets), thawed according to package directions
12 slices (1-inch square each ) Havarti or Cheddar cheese, about 1/4-inch thick

Steps:

  • Thoroughly mix the beef, steak sauce, seasoned salt, black pepper and green onions in a medium bowl. Shape the beef mixture firmly into 12 (2-inch) patties.
  • Cook the patties in a 12-inch skillet over medium-high heat for 10 minutes or until they're well browned on both sides. Remove the patties from the skillet and let them cool to room temperature.
  • Heat the oven to 350°F. Lightly grease or line a baking sheet with parchment paper.
  • Sprinkle the work surface with flour. Unfold 1 pastry sheet on the floured surface. Roll the pastry sheet into a 10-inch square. Cut the pastry sheet into 6 (about 3 x 5-inch) rectangles. Repeat with the remaining pastry sheet to make 12 rectangles in all.
  • Place 1 patty onto the center of each pastry rectangle and top each with 1 cheese slice. Fold the corners of the pastries up over the filling and twist the corners to seal. Place the pastries onto the prepared baking sheet. Bake for 20 minutes or until the pastries are golden brown.
  • Make-Ahead: The assembled bundles can be prepared up to 1 day in advance. Cover and refrigerate until ready to bake.
  • Recipe Note: Parchment paper keeps the pastry from sticking to the baking sheet and also makes for easier cleanup. If you don't have parchment paper, you can spray the baking sheet with cooking spray instead. However, cooking spray may cause the bottoms of the pastries to brown more quickly, so begin checking for doneness 5 minutes early.

These little cheeseburgers wrapped in flaky puff pastry are a great appetizer or snack.

1 lb ground chuck
2 teaspoons steak seasoning
1 teaspoon Paula Deen Silly Salt
freshly ground black pepper
1/2 minced Vidalia onion
1 package puff pastry sheets
20 (1 inch) slices cheddar cheese

Steps:

  • Preheat oven to 350º.
  • Combine the first 5 ingredients. Hand-form patty to 1/4 normal burger size, about 2-inches in diameter. In a grooved black skillet, cook burgers to medium. Turn once. Do not overcook.
  • Roll out thawed puff pastry. Cut 10 (6-inch) even panels. Place burger in center of square and top with 2 slices of cheese. Fold edges up and twist on top. Bake 20 to 25 minutes and serve warm.
  • * Paula Deen Silly Salt is a blend of salt, dehydrated onion and garlic, spices, soybean oil and lemon flavor.
  • Cook's Notes:
  • -Try serving with bacon or tomatoes.
  • -Havarti and ground pepper boursin cheeses are good substitutes for cheddar.

Here's what you need: ground beef, salt, pepper, medium yellow onion, garlic, fresh spinach, puff pastry, cheddar cheese, egg, sesame seed

2 lb ground beef
salt, to taste
pepper, to taste
1 medium yellow onion, sliced
3 cloves garlic, minced
2 cups fresh spinach
2 sheets puff pastry
8 slices cheddar cheese
1 egg, beaten
sesame seed, for sprinkling

Steps:

  • Preheat the oven to 400°F (200°C).
  • In a medium 8-inch (20-cm) cast-iron skillet, press down half of the ground beef with a spatula to mold into a patty. Season with salt and pepper.
  • Place the cast-iron skillet over medium-high heat and sear the patty until browned, about 4 minutes on each side.
  • Remove the patty from the skillet and set aside. Repeat with remaining beef.
  • Return the pan to low heat and add the onion. Cook, stirring occasionally, until the onion is caramelized, about 20 minutes.
  • Add the garlic and spinach, stirring until the spinach is cooked down, about 5 minutes.
  • Lay one sheet of puff pastry on a baking sheet and top with 1 patty.
  • Layer 4 slices of cheese over the patty, then top with the caramelized onion mixture.
  • Top with the remaining 4 slices of cheese and the other patty.
  • Cover with the other sheet of puff pastry.
  • Trim the edges of the pastry with a knife and discard.
  • Crimp the edges of the pastry, then press with a fork to seal.
  • Brush the top and sides of the pastry with the beaten egg and sprinkle with sesame seeds.
  • Bake for 30 minutes, or until the pastry is golden brown and cooked through.
  • Slice and serve with additional toppings of your choice.
