1 8 or 9 inch baked pie crust
FILLING
1 ½ c sugar
7 Tbsp cornstarch
3 egg yolks beaten
1 1/2 cups hot water
2 Tbsp butter
1/2 c lemon juice
1 tsp lemon peel finely grated
MERINGUE
3 egg whites
1/4 tsp cream of tartar
1 tsp lemon peel finely grated
1 Tbsp lemon juice

Steps:

  • 1. Prepare or bake the pie crust of your choice.
  • 2. Measure the sugar, cornstarch, and salt into a pan and whisk to mix. Slowly add the hot water stirring constantly and cook over direct heat until the mixture is thick and clear, about 10 minutes. Remove from heat and stir. Stir ½ cup of the hot mixture into the beaten yolks then stir the yolk mixture back into the hot mixture. Cook over low heat, stirring constantly, for 2 to 3 minutes. Remove from heat and stir in butter. Add lemon peel and juice and stir until smooth. Cool and pour into baked pie shell.
  • 3. Meringue: Beat egg whites with the cream of tartar until frothy. Gradually beat in the 6 Tbs. of sugar a little at a time. Beat until the meringue stands in firm, glossy, peaks. Add lemon juice and lemon peel and continue to beat a few more minutes. Spread meringue on pie making sure it touches the inner edges of the crust. Bake in a slow oven (325F) 10 minutes, or, until delicately browned. Cool.

30 lemon-cream-filled vanilla sandwich cookies, finely crushed
1/4 cup (1/2 stick) butter, melted
2 (4-serving size) packages instant lemon pudding, prepared according to package directions
1 (8-ounce) container frozen whipped topping, thawed
1/2 cup finely crushed lemon drop candies (see Note)

Steps:

  • Preheat oven to 350 degrees F. In a medium bowl, combine the crushed cookies and butter; mix well. Spread into the bottom and up the sides of a 9-inch deep-dish pie plate, forming a crust. Bake 10 minutes, then remove from the oven and allow to cool completely. Spoon the pudding evenly into the pie crust. In a large bowl, combine the whipped topping and crushed candy; mix well. Spread over the pie filling, then cover loosely and chill at least 2 hours before serving. Notes You can use a blender or a food processor to crush the lemon drops. And you can even put them in a resealable plastic storage bag, seal, and pound with a mallet! Make sure to crush the lemon drops to a very fine powder before mixing with the whipped topping. Otherwise, they'll weigh it down.

1 (4 ounce) package lemon pie filling mix
1/2 cup granulated sugar
2 cups water
1 egg
2 tablespoons lemon juice (fresh is best)
1/2 cup butter or 1/2 cup oleo
3/4 cup brown sugar
1 1/2 cups quaker harvest crunch cereal, original blend
1 cup flour
2/3 cup coconut
1/4 teaspoon salt

Steps:

  • Preheat oven to 350.
  • Filling: Combine pie filling mix, sugar, and 1/4 cup of water in a saucepan; blend in egg Add remaining water and cook according to directions on package.
  • Stir in lemon juice and cool slightly.
  • Crunch: Cream butter and brown sugar together.
  • Toss cereal, coconut, flour and salt together.
  • Add to butter/sugar mix and blend until crumbly.
  • Press 1/3 of mixture into bottom of an ungreased 8" square pan.
  • Spread lemon filling over bottom layer.
  • Squeeze handfuls of crumble mixture together and break into large pieces over the surface of the filling to form chunky topping Bake for 30-35 minutes until golden brown.
  • Cool slightly and serve.
