2 cups flour
1 cup canola oil
2 cups sugar
3 eggs
1 cup buttermilk
1 teaspoon nutmeg
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking soda
1/4 teaspoon allspice
1 teaspoon vanilla
1 cup prune, cooked and chopped
1/2 cup sugar
1/2 cup buttermilk
1/4 cup butter
1/2 teaspoon baking soda

Steps:

  • Mix ingredients all together.
  • Pour into 13 x 9-inch greased pan.
  • Bake at 350°F for approximately 40 - 45 minutes. Check very carefully. My mom didn't put down the time in the oven.
  • While cake is cooking, put ingredients for topping in pan. Bring to a boil.
  • While cake is still hot, pierce the top with a fork.
  • Spoon topping over cake until it is absorbed.

Sweet, warm prune cake makes a perfect holiday traditional cake. It has been my husband's birthday cake every year since he was a child.

3 eggs
1 cup vegetable oil
1 1/2 cups sugar
2 cups a-p flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon nutmeg
1 teaspoon allspice
1 teaspoon cinnamon
1 cup buttermilk
1 cup prune, cooked, seeded and chopped
1 cup pecans, chopped
1 cup sugar
1/2 cup buttermilk
1/2 teaspoon baking soda
1 tablespoon white corn syrup
1/4 cup butter
1/2 teaspoon vanilla extract

Steps:

  • CAKE.
  • Blend sugar, oil and eggs.
  • Sift together all dry ingredients and add alternately with buttermilk.
  • Add vanilla, prunes and pecans.
  • Pour into buttered bundt pan.
  • Bake 350°F for 45 minute.
  • leave cake in pan and ice while warm.
  • ICING.
  • Combine last 6 ingredients in saucepan and bring to a boil.
  • Cook until soft ball stage (small amount dropped into cool water forms a soft ball).
  • Pour over cake while warm.
  • Serve with whipped cream and cherries or plain.

1 cup shortening
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
1 ⅓ cups buttermilk
1 ⅓ cups stewed prunes, chopped
2 ⅓ cups all-purpose flour
1 teaspoon allspice
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch tube pan.
  • In a large bowl, mix the shortening and sugar with an electric mixer until smooth. Mix in the eggs one at a time, then stir in the vanilla and prunes. Sift the flour, allspice, nutmeg, cinnamon, salt, baking powder and baking soda into a large bowl or onto a sheet of waxed paper. Stir in the dry ingredients 1/3 at a time, alternating with the buttermilk. Mix in the walnuts if using. Pour batter into the prepared pan.

Cake:
4 eggs
2 cups sugar
1 cup vegetable oil
1 tsp baking soda
1 cup buttermilk
2 cups all-purpose flour
1/2 tsp salt
1 tsp each nutmeg, cloves, and cinnamon
1 cup bite-sized pitted prunes, chopped
Frosting:
1 cup sugar
1/4 tsp baking soda
1/2 cup buttermilk
2 TBS butter
1/4 tsp salt
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350F. Grease and flour a 10-inch tube pan. 2. Beat eggs in a medioum bowl. Add sugar and beat well. Mix in oil. In a small bowl, dissolve baking soda in buttermilk. Sift flour, salt, nutmeg, cloves and cinnamon. Add flour mixture alternately with buttermilk mixture to egg mixture. Fold in Prunes. 3. Pour batter into pan and bake about 1 hour or until a toothpick inserted in the center comes out clean. 4. To prepare the frosting, combine sugar, baking soda, buttermilk, butter and salt in a medium saucepan. Bring to a boil, Remove from heat and stir in vanilla. Poke holes in cake with a fork or long toothpick and pour frosting over cake while both are still warm. Tip: Soak prunes briefly in boiling water so they can be chopped or torn apart easily by hand after they are drained and cooled. The baking powder causes the icing to foam while cooking.

1 cup buttermilk
1/2 cup shortening
1-1/2 cups sugar
3 eggs, unbeaten
1 cup cooked prunes, pitted and drained

Steps:

  • Put into a large bowl: shortening, sugar, eggs, beat for 1-1/2 minutes. Stop mixer and add cooked prunes. Then add sifted flour mixture alternatively with 1 cup buttermilk. While beating on no 3 speed, scrape sides of bowl and beat only enough to blend, about 2 minutes. Pour into angel food cake pan greased and floured. Bake at 350 degrees about 1 hour. Remove from pan and cool.
