These Italian-style sandwiches are loaded with zesty flavors. To lighten them a little, use fat-free mayo. We serve them with minestrone or a crisp salad. -Priscilla Yee, Concord, California

2 tablespoons mayonnaise
4 teaspoons prepared pesto
8 slices sourdough bread
8 ounces thinly sliced deli ham
1/2 cup loosely packed basil leaves
4 pickled sweet cherry peppers, chopped
1 plum tomato, thinly sliced
3/4 cup shredded provolone cheese
2 tablespoons butter, softened

Steps:

  • In a small bowl, mix mayonnaise and pesto; spread over 4 slices of bread. Layer with ham, basil, peppers, tomato and cheese. Top with remaining bread. Spread outsides of sandwiches with butter., Using a large cast-iron skillet or electric griddle, toast sandwiches over medium heat until golden brown and cheese is melted, 2-3 minutes on each side.

8 slice(s) thick-cut multigrain, whole wheat, poppy seed, white, or pumpernickel bread
- margarine or butter, softened
4 teaspoon(s) mayonnaise or salad dressing
4 ounce(s) provolone and/or cheddar cheese, thinly sliced
1/2 - of a 7-ounce jar roasted red sweet peppers, well drained
1/2 - of a small pear or apple, thinly sliced, or 2 canned pineapple rings, well drained and patted dry
4 ounce(s) thinly sliced cooked ham or prosciutto
2 tablespoon(s) mango chutney
- fresh fruit, such as sliced pears and apples, pineapple wedges, or grapes (optional)

Steps:

  • Spread one side of each bread slice with margarine or butter. Place four bread slices, buttered sides down, on griddle. Spread mayonnaise on the four slices on the griddle. Top with provolone cheese. Top two of the bread slices with red sweet peppers and two with slices of fruit. Top all four with ham or prosciutto.
  • Cut up large pieces of chutney; spread the unbuttered sides of four remaining bread slices with chutney. Place over bread slices on griddle, buttered sides up.
  • Cook sandwiches over medium heat about 4 minutes each side or until bread is toasted and cheese is melted, turning once halfway through cooking. Serve with additional fruit slices, if desired. Makes 4 servings. 11 Points per sandwich

1/4 lb sliced provolone cheese
1/4 lb deli honey ham sliced thin
4 oz cream cheese softened
1 medium sliced tomato
alittle sliced red onion
alittle sliced bellpepper
alittle shredded lettuce
3 flour tortillas or your favorite wrap

Steps:

  • 1. place 3 flour tortillas room temp on flat surface. Spread entire tortillas with softned cream cheese. (soften in microwave 15-20 seconds)place a few slices of povolone cheese on tortilla and lettuce, onion, bellpepper, tomato and shredded lettuce..(or your favorite toppings)
  • 2. roll up tight and place on cutting board
  • 3. slice 1/2 inch thick ... enjoy
