ROASTED PORTOBELLO AND PROSCIUTTO LASAGNA

Filling
3 tablespoons plus 2 teaspoons olive oil
2 1/2 pounds (about 10) portobello mushrooms, stems trimmed
1 cup chopped prosciutto (about 6 ounces)
2/3 cup chopped shallots (about 2 large)
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
Sauce
4 cups whole milk
1 14-ounce can low-salt chicken broth
1 bay leaf
1/2 cup (1 stick) butter
2/3 cup all purpose flour
2 cups (about 8 ounces) shredded Gruyère cheese
1/3 cup grated Parmesan cheese
1/8 teaspoon ground nutmeg
Lasagna
1 pound lasagna noodles
1/2 cup grated Parmesan cheese
2 tablespoons butter, cut into 1/2-inch pieces

Steps:

  • For filling:
  • Preheat oven to 400°F. Brush rimmed baking sheet with 1 tablespoon olive oil. Toss mushrooms with 2 tablespoons olive oil in large bowl to coat. Arrange mushrooms, gill side up, in single layer on prepared baking sheet. Sprinkle with salt and pepper. Roast until tender, about 45 minutes. Cool. Cut mushrooms into 1/3-inch-thick slices.
  • Meanwhile, heat remaining 2 teaspoons oil in medium nonstick skillet over medium heat. Add prosciutto; sauté until browned, about 3 minutes. Add shallots, rosemary, and thyme. Cook until shallots are tender, stirring frequently, about 5 minutes. (Mushrooms and prosciutto-shallot mixture can be made 1 day ahead. Cover separately and chill).
  • For sauce:
  • Bring milk, broth, and bay leaf to simmer in heavy large saucepan over medium heat. Remove from heat. Let stand 10 minutes; discard bay leaf.
  • Melt butter in heavy medium saucepan over medium-low heat. Whisk in flour; stir 2 minutes. Whisk in hot milk mixture; bring to boil, whisking frequently. Reduce heat to low; simmer 5 minutes, stirring frequently. Remove from heat; stir in Gruyère, Parmesan, and nutmeg. Season to taste with salt and pepper.
  • For lasagna:
  • Cook noodles in large pot of boiling salted water until almost tender but slightly undercooked (noodles will finish cooking in oven). Drain and rinse with cold water. Drain again; pat dry.
  • Butter 13x9x2-inch glass baking dish. Spread 1 cup sauce over bottom of prepared dish. Arrange 1/3 of noodles over sauce, overlapping to fit. Spread about 1 2/3 cups sauce over noodles. Arrange 1/2 of mushrooms over sauce. Scatter 1/2 of prosciutto mixture over mushrooms. Arrange 1/2 of remaining noodles over mushrooms, overlapping to fit. Spread 1 2/3 cups sauce over noodles. Arrange remaining mushrooms over sauce, sprinkle with remaining prosciutto, and top with remaining noodles. Spread remaining sauce over noodles, sprinkle Parmesan cheese over, and dot with butter. (Can be made 1 day ahead. Cover and refrigerate.)
  • Preheat oven to 350°F. Bake lasagna until top is golden brown and sauce is bubbling, about 45 minutes (about 1 hour if refrigerated). Let stand 20 to 30 minutes before serving.

2 ounces thinly sliced prosciutto, cut into 1/2-inch pieces
2 tablespoons chopped fresh basil
1 1/2 cups canned diced tomatoes with Italian seasonings, undrained
4 (about) no-boil lasagna noodles from one 8-ounce package
1 1/3 cups mixed roasted vegetables from deli (such as eggplant, squash and bell peppers)

Steps:

  • Stir Alfredo sauce, prosciutto and basil in small bowl to blend. Spread 2 tablespoons Alfredo sauce mixture in bottom of two 1 1/2-cup oval-shape gratin dishes or two 2-cup soufflé dishes. Top each with 1/4 cup tomatoes with juices. Place 1 noodle in each dish, breaking into pieces to fit. Spread each with 2 tablespoons sauce mixture, then 1/4 cup tomatoes with juices. Top each with 2/3 cup roasted vegetables. Sprinkle with salt and pepper. Make another layer of noodles, breaking to fit. Top with remaining sauce mixture, dividing equally. Top each with 1/4 cup tomatoes with juices.
  • Cover dishes tightly with plastic wrap. Microwave on high until noodles are tender but still firm to bite, about 10 minutes. Uncover lasagna and let stand 5 minutes before serving

SPINACH AND PROSCIUTTO LASAGNA ROLLS

I saw these on the Food Network show "Everyday Italian" yesterday and had to make them. They are so good! I added a few extra ingredients like the basil and mushrooms. You could probably use alfredo in place of the marinara sauce, and the bechamel sauce added a nice touch. This takes a little long, but it is worth it!

4 teaspoons flour
1 1/4 cups whole milk

1/8 teaspoon nutmeg
1 (15 ounce) container whole milk ricotta cheese
1 (10 ounce) package frozen spinach (thawed and drained)
1 cup grated parmesan cheese
3 ounces prosciutto, chopped
1 cup baby portabella mushrooms, chopped
1 egg
8 lasagna noodles
2 cups marinara sauce
1 cup shredded mozzarella cheese
1/4 cup fresh basil, chopped

Steps:

  • Melt the butter in a medium saucepan over med-low heat.
  • Add the flour and whisk.
  • Once combined and smooth, whisk in the milk.
  • Whisk until the sauce is smooth and thick, about 3 minutes, then add the salt, pepper, and nutmeg.
  • Pour sauce into a large glass baking dish and set aside.
  • Preheat oven to 450 degrees.
  • In a medium bowl, whisk the ricotta, spinach, Parmesan, prosciutto, egg, and mushrooms till blended.
  • Boil the noodles in a large pot of salted water until they're al dente; a little tender, but still firm to bite.
  • Drain the noodles when done and arrange on a clean surface.
  • Spread the ricotta mixture evenly over each noodle, about 3 tablespoons per noodle.
  • Roll the noodle like a jelly roll and place seam-down in the pan with bechamel sauce.
  • Repeat with remaining noodles and cheese mix, and don't let the rolls touch in the pan.
  • Cover the rolls with the marinara and mozzarella.
  • Cover the dish with foil and bake for 20 minutes.
  • After that, uncover and sprinkle the rolls with the basil.
  • Bake for 15 more minutes until cheese is golden.
  • Let stand for 10 minutes before serving.

16 uncooked lasagna noodles
2 tablespoons olive oil
20 oz ground turkey
1 teaspoon salt
1 package (8 oz) finely chopped mushrooms (2 1/2 cups)
1 box (9 oz) frozen spinach, thawed, squeezed to drain
1 container (15 oz) ricotta cheese
2 eggs, slightly beaten
1 teaspoon Italian seasoning
1 teaspoon red pepper flakes
3 oz prosciutto, torn into small strips
1 jar (15 oz) Alfredo pasta sauce (about 1 1/2 cups)
1 cup shredded 6-cheese Italian blend (4 oz)
1/2 cup shredded fresh basil leaves

Steps:

  • In 5-quart Dutch oven, cook lasagna noodles as directed on package. Drain; rinse with hot water. Drain well.
  • Meanwhile, in 12-inch nonstick skillet, heat olive oil over medium-high heat. Add turkey and salt; cook 5 to 6 minutes, stirring frequently, until turkey is no longer pink. Add mushrooms; cook 5 to 8 minutes or until browned. Transfer to medium bowl; cool 10 minutes.
  • Stir spinach, ricotta cheese, eggs, Italian seasoning and pepper flakes into bowl with turkey mixture.
  • Divide prosciutto into 16 portions, and place evenly along center of each cooked lasagna noodle. Spread slightly less than 1/3 cup turkey mixture over prosciutto, to within 1 inch of one short end. Roll up firmly toward unfilled end. Line 15x10x1-inch pan with foil. Place roll-ups seam side down in pan; cover loosely with foil. Freeze about 30 minutes or until firm.
  • Place frozen rolls in two labeled 1-gallon freezer bags. Freeze up to 3 months.
  • To bake 16 lasagna roll-ups, spray two 13x9-inch (3-quart) glass baking dishes with cooking spray. Remove roll-ups from freezer bag; place 8 in each baking dish. Cover with foil; thaw in refrigerator at least 8 hours but no longer than 24 hours.
  • Heat oven to 350°F. Pour 3/4 cup sauce over and down sides of roll-ups in each baking dish. Cover tightly with foil; bake 40 to 50 minutes or until hot and bubbly. Remove foil; sprinkle each dish with 1/2 cup cheese. Bake 3 to 5 minutes longer or until cheese is melted. Let stand 5 minutes before serving. Top with basil.

12 uncooked lasagna noodles
2 tablespoons olive oil
1 1/2 lb. boneless skinless chicken breast halves, cut into 1/2-inch pieces
1/2 cup chopped onion (1 medium)
1/4 lb. prosciutto, chopped
1 (16-oz.) jar Parmesan and mozzarella cheese pasta sauce
1/4 cup chopped fresh basil
2 medium red and/or yellow bell peppers, chopped
1 (15-oz.) can Italian-style tomato sauce
1/2 cup chopped fresh parsley
8 oz. (2 cups) shredded fontina cheese
1 oz. (1/4 cup) shredded fresh Parmesan cheese

Steps:

  • Heat oven to 350°F. Cook noodles as directed on package. Drain.
  • Meanwhile, spray 13x9-inch (3-quart) glass baking dish with nonstick cooking spray. Heat 1 tablespoon of the oil in 12-inch nonstick skillet over medium-high heat until hot. Add chicken and onion; cook 6 to 8 minutes or until chicken is no longer pink in center, stirring occasionally. Stir in prosciutto, pasta sauce and 2 tablespoons of the basil; mix well. Set aside.
  • Heat remaining tablespoon oil in medium skillet over medium-high heat until hot. Add bell peppers; cook 3 to 4 minutes or until tender, stirring occasionally. Stir in tomato sauce. Reduce heat; simmer 10 minutes or until slightly thickened. Stir in parsley and remaining 2 tablespoons basil.

15 oz. fresh ricotta cheese
1 egg
1 can of artichoke hearts, finely chopped
1 clove garlic, minced
1/2 c. finely grated parmigiano cheese

4 oz. paper thin slices of prosciutto di parma
2 cloves of garlic, minced
3 T. butter
2 T. flour
2 cups whole milk
1 cup freshly grated parmigiano
cheese
salt and pepper
Fresh parsley
Freshly ground pepper

Steps:

  • 1. Preheat oven to 350. Cook the lasagna noodles according to the package directions. After draining, lay each noodle flat on paper towel. 2. Prepare the filling. Combine the ricotta, egg, finely chopped artichoke hearts, minced garlic, 1/2 c. parmigiano, salt and pepper. 3. To prepare the rolls, place one strip of prosciutto on each noodle, spreak 1-2 T. of the ricotta mixture on top of the prosciutto, and roll up jelly-roll style. Repeat for each noodle. 4. Prepare the white sauce. Melt the butter in a heavy sauce pan. Add minced garlic and saute for 1-2 minutes over medium heat. Add flour and stir constantly until if forms a paste. Add hot milk and continue to stir until slightly thickened. Bring to a boil, stirring constantly, slowly add the 1 c. grated parmigiano. Reduce heat and add salt and pepper to taste. 5. In a 9x13 casserole dish, pour 3/4 cup of the sauce. Place each lasagna roll, seam down, in the dish. Pour remaining sauce over the rolls and bake in preheated oven for 30 minutes. Remove from oven and let stand for 7-10 minutes. Garnish with finely chopped fresh parsley and freshly ground pepper.

  • To make the sauce: Melt the butter in a heavy medium saucepan over medium-low heat. Add the flour and whisk for 3 minutes. Whisk in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, about 3 minutes. Whisk the salt, pepper, and nutmeg into the bechamel sauce. Preheat the oven to 450 degrees F. Whisk the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper in a medium bowl to blend. Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking. Butter a 13-by-9-by-2-inch glass baking dish. Pour the bechamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, then spread about 3 tablespoons of ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the bechamelsauce in the dish. Repeat with the remaining noodles and ricotta mixture. Spoon 1 cup of marinara sauce over the lasagna rolls. Sprinkle the mozzarella and remaining 2 tablespoons of Parmesan over the lasagna rolls. Cover tightly with foil. Bake until heated through and the sauce bubbles, about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes. Meanwhile, heat the remaining marinara sauce in a heavy small saucepan over medium heat until hot, and serve alongside.

8 ounces italian prosciutto, chopped (imported preferably)
4 -5 vine ripe tomatoes, peeled and chopped
1 cup ricotta cheese
1/2 cup fresh grated romano cheese
1 cup fresh grated parmesan cheese
1 lb fresh mozzarella cheese, sliced
1 medium onion, chopped
1 lb lean ground beef or 1 lb pork sausage
4 tablespoons fresh basil, chopped
4 garlic cloves (minced or chopped)
1/4 teaspoon oregano
ground black pepper
1/2 cup dry white wine, I have also used red (optional)
2 tablespoons good quality balsamic vinegar
2 tablespoons olive oil
fresh basil sprig (to garnish)

Steps:

  • Cook lasagna noodles according to package directions or until tender but still firm. Drain, keep warm.
  • To make the lasagna sauce, in a large saucepan or cast iron skillet, over medium-high high heat, saute the garlic, onion and prosciutto in the olive oil for 4 minutes.
  • Add the lean beef/pork sausage, oregano, a touch of black pepper and saute 10 minutes.
  • Add the wine & Balsamic vinegar and cook until the wine is almost evaporated.
  • Add tomatoes and basil, reduce heat and simmer sauce 35 to 40 minutes or until most of the liquid has evaporated.
  • Grease a 9" x 12" or larger, baking pan.
  • Arrange a first layer of lasagna noodles, a layer of the beef and prosciutto tomato sauce, cottage cheese, parmesan and mozzarella cheese.
  • Add a second alternating layer of noodles, sauce and other ingredients.
  • Repeat until pan is full ending up with a top layer of sauce.
  • Sprinkle with Parmesan cheese and bake in a pre-heated oven at 400 degrees for 30 minutes.
  • Garnish with fresh basil.

  • Drain again; pat dry
  • Butter 13x9x2-inch glass baking dish
  • Spread 1 cup of sauce over bottom of prepared dish
  • Arrange 1/3 of noodles over sauce, overlapping to fit
  • Spread about 1 2/3 cups sauce over noodles
  • Arrange 1/2 of mushrooms over sauce
  • Scatter 1/2 of prosciutto mixture over mushrooms
  • Arrange 1/2 of remaining noodles over mushrooms, overlapping to fit
  • Spread 1 2/3 cups sauce over noodles
  • Arrange remaining mushrooms over sauce, sprinkle with remaining prosciutto and top with remaining noodles
  • Spread remaining sauce over noodles, sprinkle Parmesan cheese and dot with butter. (Can be made to this point 1 day ahead. Cover and refrigerate)
  • Preheat oven to 350F
  • Bake lasagna until top is golden brown and sauce is bubbling, about 45 minutes (about 1 hour if refrigerated)
  • Let stand 20 - 30 minutes before serving

1/2 cup unsalted butter, plus more for greasing
1/2 cup unbleached all-purpose flour
1/2 teaspoon freshly grated nutmeg
4 cups whole milk
1 cup chicken stock or low-sodium broth
1/2 cup Marsala
2 large eggs, lightly beaten
1 3/4 cups shredded fontina cheese
Sea salt and freshly ground white pepper
4 tablespoons olive oil, plus more if needed
1 small leek, white and tender green parts only, thinly sliced
3/4 pound white mushrooms, brushed clean and sliced
1/2 pound thinly sliced prosciutto, chopped
2 tablespoons chopped fresh basil
12 sheets no-boil lasagna, each about 7 by 3 1/2 inches
1/2 cup freshly grated Parmesan cheese

Steps:

  • Preheat the oven to 350°F. Butter an 8-by-11-inch baking dish. In a large saucepan, melt the butter over medium-low heat. Stir in the flour and cook, whisking constantly, for about 3 minutes. Whisk in the nutmeg. Raise the heat to medium-high and gradually whisk in the milk and stock. Bring the mixture to a boil and continue whisking until thickened and smooth, 10-15 minutes. Remove from the heat and let cool, stirring occasionally, until warm. Stir in the Marsala, eggs, and 1 cup (4 oz/125 g) of the fontina until the cheese melts and the sauce is smooth. Season with salt and white pepper. Set aside. In a large frying pan, heat 2 tablespoons of the olive oil over medium-high heat. Add the leek and sauté just until wilted, about 3 minutes. Transfer to a bowl. Add the remaining 2 tablespoons olive oil to the pan. When the oil is hot, add the mushrooms and sauté, stirring, until golden, about 5 minutes. Add the prosciutto and basil and cook, stirring, for 1 minute longer. Spread about 1 1/2 cups of the cheese sauce evenly over the bottom of the prepared baking dish. Spoon about one-third of the mushroom mixture evenly over the sauce, then arrange 4 of the lasagna sheets over the top. Repeat these layers twice. Spread the remaining sauce over the top layer, then sprinkle the remaining 3/4 cup fontina and the Parmesan evenly over the top. Bake until the top is golden and the juices are bubbling, about 45 minutes. Let the lasagna cool for 15 to 30 minutes, cut into squares, and serve right away.
