1/3 cup (packed) fresh basil leaves plus sprigs for garnish
1 medium shallot, quartered
1 small (about 2-pound) cantaloupe, halved crosswise, seeded, cut into 6 wedges, peeled
6 small fresh water-packed mozzarella balls or one 8-ounce ball,* drained
6 thin slices prosciutto, cut in half lengthwise, gathered into ruffle
6 8-inch wooden skewers

Steps:

  • Using on/off turns, puree olive oil, 1/3 cup basil, and shallot in processor until basil and shallot are finely chopped.
  • Cut each cantaloupe wedge crosswise in half. If using large mozzarella ball, trim and cut into 6 cubes. Alternate 1 melon piece, 1 piece ruffled prosciutto, 1 mozzarella ball or cube, 1 more prosciutto piece, and 1 more melon piece on each skewer. (Can be prepared 2 hours ahead; cover and refrigerate. Bring to room temperature 15 minutes before serving.)
  • Arrange skewers on platter. Drizzle with basil oil and sprinkle with cracked black pepper. Garnish with basil sprigs.

2 legs lamb, boned
3/4 cup plus 3 tablespoons olive oil, divided
4 garlic cloves, chopped and divided
1 teaspoon each curry powder, dried fine herbs, dried rosemary
1/4 cup pastis or pernod
1 loaf fresh baked bread
1 tomato, cubed
4 cups baby spinach
3 tablespoons Stilton cheese
1/8 cup balsamic vinegar
1/2 cantaloupe
1/2 cup apple juice
1/2 cup each mango, orange, peach
4 basil leaves
3 thin slices prosciutto

Steps:

  • Cut leg of lamb in loin sections then marinate with 1/2 cup olive oil, 3 gloves garlic, curry powder, dried herbs and rosemary. Marinate for 30 minutes or overnight if possible. Then grill the loins for 15 to 20 minutes turning just once. Carefully flambe with pastis.
  • Cut bread into 1-inch cubes and toss with remainder of garlic and 3 tablespoons of olive oil then season with salt and pepper. Toast croutons for about 15 minutes in a preheated 350 degree oven turning 2 to 3 times for even browning. Then toss croutons with spinach, Stilton, tomatoes, remaining olive oil and balsamic vinegar, season with salt and pepper.
  • In a food processor, puree cantaloupe, apple juice, mango, orange and peach. Season with salt and pepper and garnish with basil and prosciutto.

1/2 cup freshly grated Parmesan
2 tablespoons olive oil
4 ounces sliced prosciutto, cut into thin strips
1/2 cantaloupe, rind removed, cut into wedges
1 pound farfalle pasta, cooked and cooled
1 cup pitted Castelvetrano olives, halved

Steps:

  • For the dressing: In a large bowl, whisk together the mustard, vinegar, extra-virgin olive oil and salt until emulsified. Add the basil, parsley, tarragon and Parmesan and stir to combine.
  • For the salad: Heat a medium skillet over medium heat. Add the olive oil and prosciutto and cook, stirring often with a wooden spoon, until the prosciutto is brown and crispy, about 6 minutes. Using a slotted spoon, remove the prosciutto to a paper towel-lined plate. Let cool.
  • Heat a grill pan over high heat. Place the melon wedges in the pan and grill until nice grill marks appear and the melon is slightly caramelized, about 1 minute per side. Remove to a cutting board and chop into bite-size pieces.
  • Add the grilled melon, pasta and olives to the bowl with the dressing and toss well to coat. Sprinkle with the crispy prosciutto.

16 large shrimp, peeled and deveined (about 1 pound)

3 tablespoons white balsamic vinegar
1 teaspoon honey
Freshly ground pepper
8 thin slices prosciutto, halved lengthwise
1/2 cup fresh basil
1/2 cup fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the shrimp and simmer until cooked through, about 2 minutes. Drain and rinse under cold water; pat dry and transfer to a large bowl. Add the melon, 4 tablespoons olive oil, 2 tablespoons vinegar, the honey, 1/2 teaspoon salt and a few grinds of pepper; gently stir. Let marinate 15 minutes.
  • Wrap 1 melon slice and 1 shrimp in a piece of prosciutto; secure with a toothpick. Repeat with the remaining ingredients.
  • Transfer the remaining marinade to a blender. Add the remaining 2 tablespoons olive oil, 1 tablespoon vinegar and the herbs; puree. Season with salt and pepper. Serve the prosciutto-shrimp bundles with the dressing.

1 cantaloupe melon, cut into chunks (about 5 cups)
1 (14-ounce) can tomatoes (recommended: San Marzano)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
6 fresh basil leaves, very thinly sliced

Steps:

  • Preheat the oven to 350 degrees F. Place the prosciutto slices on a foil-lined baking sheet. Place in the oven and bake until firm, golden around the edges, and almost crisp, about 18 minutes. Set aside and let cool.
  • Place half the melon in the blender with half the tomatoes. Pulse the blender until the mixture is pureed. Pour the soup in a large bowl. Puree the remaining melon and tomatoes and add to the bowl. Add the salt and pepper.
  • Ladle the soup into bowls. Crumble the cooled prosciutto crisps over the top of the soup. Sprinkle with basil and serve.

1/2 cup olive oil
1/3 cup fresh basil leaf (packed)
1 medium shallot, quartered
1 small cantaloupe, halved, crosswise, seeded
6 ounces water-packed fresh mozzarella balls, cut into about the same size of the melon balls
6 -8 slices thin prosciutto, cut into 4 pieces

Steps:

  • Puree olive oil, basil and shallot in processor until basil and shallot are finely chopped.
  • Can be made the day before and bring out to room temperature for an hour before serving.
  • Make round balls from the smaller end of a melon baller, leave at least a half inch around the edges. Hold a toothpick with 2 fingers, stick in a melon ball with the rounded side down.
  • Next, roll up a piece of prosciutto and place it on top of the melon ball.
  • Then stick in a mozzarella piece at the end.
  • Stick the toothpick with the mozzarella side down into the rim of the cantaloupe.
  • Repeat until both half of the cantaloupe rims are filled with these little brochettes.
  • Can be made 2 hours ahead, cover and refrigerate.
  • Divide and pour the sauce into the 2 bowls of the cantaloupe.
  • Dip a brochette into the sauce and put the whole thing in your mouth at once.
  • Enjoy!

Strawberry Granita:
1/2 pound strawberries, hulled
1 tablespoon sugar
1/2 teaspoon sherry vinegar
pinch curry powder
1/2 ounce basil leaves
Salad:
1/2 Cantaloupe, rind removed and sliced into four wedges
4 paper thin slices good quality prosciutto
mesclun greens
2 tablespoons butter
juice of 1 lemon

Steps:

  • Combine the strawberries, sugar, curry powder and sherry vinegar in a processor or blender and blend until smooth. Add the basil and process until finely minced. Transfer the mixture to a metal pan and place in the freezer. Freeze until mixture becomes a firm slush, mixing several times with a fork, about an hour. Heat a non-stick pan over medium high heat. Wrap the melon wedges with prosciutto. Melt the butter in the hot pan, add the melon wedges and saute each side until the prosciutto is browned. Remove the melon wedges and deglaze the pan with the lemon juice. To serve, put a small handful of mesclun greens on each of four plates. Place a melon wedge on top and drizzle the glaze from the pan over the greens. Divide the strawberry granita between the plates and serve.

1 medium shallot, quartered
1 teaspoon fresh lemon juice
1/2 teaspoon salt
1 small cantaloupe
16 small fresh mozzarella balls
1 (3 ounce) package prosciutto
16 wooden skewers (6 inch)

Steps:

  • Place first 5 ingredients in a blender or food processor.
  • Blend or pulse until the shallot and basil are finely chopped.
  • Cut melon in half and scoop out the seeds. Using a small melon baller (about the same size as the cheese balls), create as many melon balls as you can.
  • Create your masterpiece! To arrange your skewer, start with a melon ball. Next ruffle a piece of prosciutto and slide that on. Next add a mozzarella ball then another piece of ruffled prosciutto and finally another melon ball. Continue until all skewers have been created. Arrange on your platter.
  • You can make this a couple of hours ahead but you should cover and place in the refrigerator. (Do not put the basil oil in the refrigerator).
  • When ready to serve, drizzle skewers with the basil oil and garnish with a few basil leaves.

  • Bring 6 cups vegetable broth to a simmer. Melt 3 tablespoons butter in a large saucepan over medium-high heat. Add 1/2 medium cantaloupe (peeled, seeded, grated), 2 chopped shallots, and 1 chopped garlic clove; cook, stirring, until liquid is thickened, 8-10 minutes. Add 2 cups arborio rice and 1/4 cup dry white wine; cook for 2 minutes. Add broth by 1/2-cupfuls, stirring often and cooking until liquid is almost absorbed before adding more, until all broth has been added and rice is tender, 25-30 minutes.
