1 pound lean ground beef (90% lean)
1 medium onion, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups water
3 medium potatoes, peeled and cut into 3/4-inch cubes
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 can (11-1/2 ounces) V8 juice
1 cup chopped celery
1 cup sliced carrots
2 tablespoons sugar
1 tablespoon dried parsley flakes
2 teaspoons dried basil
1 bay leaf

Steps:

  • In a nonstick skillet, cook beef and onion over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Stir in salt and pepper. , Transfer to a 5-qt. slow cooker. Add the remaining ingredients. Cover and cook on low for 9-11 hours or until vegetables are tender. Discard bay leaf before serving.

Hearty Italian Vegetable Beef Soup is filled with chunks of ground beef, plenty of vegetables, and generous Italian spices. This soup freezes quite well making it perfect for easy lunches.

2 pounds ground beef
4 cloves garlic (minced)
1 small yellow onion (diced small, about 1 cup)
10 medium carrots (sliced thin, about 4 cups)
6 stalks celery (sliced thin, about 3 cups)
6 cups water
16 ounce diced tomatoes
28 ounce crushed tomatoes
14 ounce tomato sauce
2 teaspoons dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
1 teaspoon kosher salt (adjust to taste)
1 teaspoon freshly ground black pepper
1/2 head of green cabbage (roughly chopped, about 4 cups)

Steps:

  • In the bottom of a large pot, over medium high heat, cook and crumble the ground beef along with the garlic and onion. When the beef has browned, about 8 minutes, add the carrots, celery, and water to the pot.
  • Increase heat to high and add the diced tomatoes, crushed tomatoes, tomato sauce, oregano, basil, thyme, salt, and pepper. Cover with a lid.
  • Once the soup is boiling, stir, and reduce heat to medium; simmer uncovered for about 15-20 minutes, until the carrots are tender.
  • Taste the soup and adjust the salt as desired. Stir in the cabbage. Simmer a few more minutes, just until the cabbage has wilted. Top with cheese, if desired, just before serving. Enjoy!

1 ½ pounds beef stew meat, cut into 1/2-inch cubes
2 (14 ounce) cans beef broth
1 (15 ounce) can green beans, drained
1 (15.25 ounce) can whole kernel corn, drained
1 (14.5 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 (46 fluid ounce) bottle tomato-vegetable juice cocktail (such as V8®)
¼ teaspoon garlic powder, or to taste
¼ tablespoon onion powder, or to taste
salt and ground black pepper, to taste

Steps:

  • Mix beef broth and beef stew meat in a large pot over medium heat. Bring broth to a simmer, reduce heat to low, and cook beef at a simmer until tender, about 45 minutes.
  • Stir corn, green beans, tomato sauce, and tomato paste with the beef. Pour tomato-vegetable juice cocktail into the pot; season with garlic powder, onion powder, salt, and pepper. Bring the mixture to a boil, reduce heat to low, and cook for 5 hours.

1 ½ pounds beef chuck roast (trimmed and cubed into ½" pieces)
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
1 onion (chopped)
2 cloves garlic (minced)
6 cups beef broth
15 ounces canned tomatoes (with juices)
1 teaspoon Italian seasoning
2 cups potatoes (cubed ½")
3 carrots (sliced ½")
1 rib celery (sliced ½")
1 cup green beans (cut into 1" pieces)
½ cup frozen corn (thawed or canned )

Steps:

  • Season beef with salt & pepper.
  • Heat olive oil over medium-high heat in a large pot and add beef in small batches cooking until browned, about 2 minutes per side.
  • Add cooked beef back to the pan, reduce heat to medium and add onion and garlic. Cook 2 minutes more.
  • Add broth, tomatoes with juices, and Italian seasoning, scraping up any brown bits from the bottom of the pan. Bring to a boil, reduce heat, and simmer 45-65 minutes or until beef is fork-tender.
  • Add potatoes, carrots, and celery and simmer 15 minutes more. Add beans and corn, simmer 10 minutes more. (If you prefer softer beans, they can be added earlier).
  • Season with salt & pepper to taste and serve.

1 medium onion, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) beef broth

1 cup uncooked spiral or small shell pasta
1 medium green pepper, chopped
2 teaspoons chili powder
