2 teaspoons canola oil
4 ounces thin slices prosciutto, chopped
2 large sweet onions, chopped (4 cups)
1 carton (8 ounces) egg substitute
2-1/2 cups 2% milk
1/4 teaspoon ground mustard
1/8 teaspoon pepper
8 cups cubed French bread
1-1/2 cups shredded Gruyere or Swiss cheese, divided

Steps:

  • In a large skillet, heat oil over medium-high heat. Add prosciutto; cook and stir until crisp. Remove from pan with a slotted spoon. Add onions to the same pan; cook and stir until tender., In a large bowl, whisk egg substitute, milk, mustard and pepper. Stir in bread and onions. Reserve 2 tablespoons cooked prosciutto for topping; stir remaining prosciutto into bread mixture. , Transfer half of the mixture to a greased 13x9-in. baking dish; sprinkle with half of the cheese. Top with remaining bread mixture. Separately cover and refrigerate strata and reserved prosciutto overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats. Bake, uncovered, 20 minutes. Sprinkle with remaining cheese; top with reserved prosciutto. Bake 15-20 minutes longer or until a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.

1 pound sliced bacon, cut into 1/2-inch pieces
2 cups chopped fully cooked ham
1 small onion, chopped
10 slices white bread, cubed
1 cup cubed cooked potatoes
3 cups shredded cheddar cheese
8 large eggs
3 cups whole milk
1 tablespoon Worcestershire sauce
1 teaspoon ground mustard
Dash salt and pepper

Steps:

  • In a large skillet, cook bacon over medium heat until crisp; add ham and onion. Cook and stir until onion is tender; drain. , In a greased 13x9-in. baking dish, layer half the bread cubes, potatoes and cheese. Top with all of the bacon mixture. Repeat layers of bread, potatoes and cheese. , In a large bowl, beat the eggs; add the milk, Worcestershire sauce, mustard, salt and pepper. Pour over all. 2 pounds bulk Italian sausage
2 medium green peppers, coarsely chopped
1 medium onion, chopped
8 large eggs
2 cups whole milk
2 teaspoons salt
2 teaspoons white pepper
2 teaspoons ground mustard
12 slices bread, cut into 1/2-inch pieces
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 cups shredded Swiss cheese
2 cups shredded cheddar cheese
1 medium zucchini, cut into 1/4-inch slices

Steps:

  • In a large skillet, cook the sausage, green peppers and onion over medium heat until meat is no longer pink; drain. Meanwhile, in a large bowl, whisk the eggs, milk, salt, pepper and mustard. Golden Onion Strata With Gruyere & Prosciutto image

I made this several years back as a side dish for Thanksgiving and it was a big hit. The recipe comes from Cooking Light's 2001 Annual Recipes. I think bacon could easily be substituted for the proscuitto too. Prep time does not reflect the time for sauteeing the onions and proscuitto or the chilling time.

4 cups chopped vidalia onions or 4 cups other sweet onion
1 cup very thin slices prosciutto or 1 cup ham, chopped
1/3 cup water
2 1/2 cups nonfat milk
1/4 teaspoon dry mustard
1/8 teaspoon black pepper
1 (8 ounce) carton egg substitute
8 cups cubed French bread (about 9 oz)
1 cup jarlsberg cheese or 1 cup swiss cheese, divided

Steps:

  • Heat a large nonstick skillet over medium high heat.
  • Add onion & proscuitto, and saute 5 minutes or until onion begins to brown.
  • Add water; cover, reduce heat and simmer 30 minutes. Uncover and simmer 30 minutes or until liquid almost evaporates. Cool.
  • Combine milk, mustard, pepper, and egg substitute in a large bowl and stir with a whisk until mixture is well blended.
  • Stir in onion mixture. Add bread, tossing gently to coat.
  • Arrange half of bread mixture in a single layer in an 11x7" baking dish. Sprinkle with 1/2 cup cheese and top with remaining bread mixture.
  • Cover strata and chill for 8 hours or overnight.
  • Preheat oven to 350 degrees.
  • Uncover strata and bake at 350 for 25 minutes. Sprinkle with 1/2 cup cheese; bake an additional 20 minutes or until set.

6 tablespoons fat-free milk
1 green onion, thinly sliced

8 slices sourdough bread
8 thin slices prosciutto or deli ham
1/2 cup shredded sharp cheddar cheese
8 teaspoons butter

Steps:

  • In a small bowl, whisk the eggs, egg whites, milk and onion. Coat a large skillet with cooking spray and place over medium heat. Add egg mixture; cook and stir over medium heat until completely set., Combine mustard and syrup; spread over 4 bread slices. Layer with scrambled eggs, prosciutto and cheese; top with remaining bread. Butter outsides of sandwiches., Cook on a panini maker or indoor grill for 3-4 minutes or until bread is browned and cheese is melted. Cut each panini in half to serve.

Easy Pressure Cooker Roast With Gravy image

It makes its own gravy while cooking! You can add other vegetables if you want, they just come out with gravy all over them. You won't need to add salt, it is in the gravy mix.

3 lbs beef chuck roast (bone free)
1 large onion, diced
1 cup baby carrots
1 (1 1/4 ounce) package brown gravy mix
1 (14 1/2 ounce) can beef stock (low sodium)
1/2 teaspoon garlic powder
black pepper (to taste)

Steps:

  • To seal roast, sear all sides in skillet with a little oil.
  • Place roast in pressure cooker pan.
  • Sprinkle with garlic powder and gravy mix.
  • Pour beef stock over.
  • Toss onions, carrots and any other items you want.
  • Seal pan and bring pressure up to gentle rocking and then lower down to medium and cook for 45 minutes.
  • Remove from heat and let stand for 5 minutes.
  • Run under cold water to release the pressure and serve.
  • If the gravy is not thick enough for you, add some cornstarch or flour with a little water and heat until thicker.
