Instant Pot® Chicken Tagine with Apricots and Chickpeas image

In this dish, the Instant Pot® is used to create a dish reminiscent of a slowly braised stew in a traditional clay tagine. It's a sweet-and-savory, highly flavorful combo that will take you back to your Moroccan trip or inspire you to start planning for that Sahara camel-trek. Chicken is cooked until tender with onions, garlic, turmeric, ginger, and cinnamon. Apricots steep in the broth. Serve with rice or couscous and Greek yogurt.

1 tablespoon olive oil
4 skin-on, bone-in chicken thighs
1 large onion, sliced
3 cloves garlic, minced
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon red pepper flakes
1 pinch saffron
1 (15 ounce) can diced tomatoes
1 cup chicken broth
⅓ cup halved dried apricots
salt and ground black pepper to taste
1 (15 ounce) can chickpeas, rinsed and drained
2 tablespoons chopped fresh mint

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Place olive oil in the hot cooker and fry chicken thighs until browned, 2 to 3 minutes per side. Remove chicken from the inner pot and set aside.
  • Add onion and garlic to the pot, followed by cinnamon, cumin, turmeric, red pepper flakes, and saffron. Cook and stir until onion is soft, about 5 minutes. Press Cancel to leave Saute mode.
  • Place chicken back into the pot on top of onion mixture. Pour in tomatoes and chicken broth. Sprinkle apricots over the top. Season with salt and pepper. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid. Stir in chickpeas and mint leaves.

2 tablespoons olive oil
2 garlic cloves, minced
2 teaspoons paprika
1 teaspoon ground ginger
1 teaspoon ground cumin
1/2 teaspoon salt

1 small butternut squash (about 2 pounds), peeled and cut into 1/2-inch cubes
2 medium zucchini, cut into 1/2-inch pieces

1 medium onion, coarsely chopped
12 dried apricots, halved

Steps:

  • Select saute setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, add garlic, paprika, ginger, cumin, salt, pepper and cinnamon; cook and stir until fragrant, about 1 minute. Press cancel., Add squash, zucchini, chickpeas, red pepper, onion, apricots, water, harissa and honey. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. 2 tablespoons minced fresh garlic
1 ¼ teaspoons paprika
¾ teaspoon ground ginger
¾ teaspoon ground turmeric
⅛ teaspoon saffron powder
1 ½ pounds skinless, boneless chicken breasts, cut into bite-sized pieces
1 preserved lemon
2 tablespoons extra-virgin olive oil
2 tablespoons butter
2 medium red onions, sliced
1 cinnamon stick
1 cup pitted and halved Mediterranean olives
1 cup chicken broth
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon chopped fresh cilantro

Steps:

  • Combine garlic, paprika, ginger, turmeric, and saffron in a large bowl. Add chicken pieces and mix until coated with spices. Cover and refrigerate, 3 to 4 hours or overnight.
  • Cut preserved lemon into quarters. Remove pulp from the peel and remove seeds from pulp. Mince pulp and set aside. Cut lemon peel into strips and set aside.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat olive oil and butter in the cooker; add chicken. Cook chicken until browned, about 3 minutes per side. Transfer chicken to a plate, reserving drippings in the pot.

This Moroccan tagine recipe combines three popular vegetables with a ginger and saffron flavored sauce.

1 to 1 1/2 pounds/500 to 700 grams beef, lamb or goat meat (cut into 2- or 3-inch pieces)
2 onions (chopped or sliced)
3 cloves of garlic (finely chopped or pressed)
1/4 cup finely chopped fresh cilantro and/or parsley
1 1/2 teaspoons ground ginger
1 teaspoon salt (or to taste)
1 teaspoon turmeric
1/2 teaspoon black pepper
1/4 teaspoon ground cinnamon or 1 cinnamon stick
Optional: Pinch of saffron threads (crumbled)
Optional: Cayenne pepper (to taste)
1/3 to 1/2 cup olive oil

1 pound/500 grams carrots, peeled and quartered lengthwise
1 pound/500 grams potatoes, peeled and quartered lengthwise
2 cups chickpeas (cooked or canned)
1/2 cup red or green olives
1 preserved lemon (cut into quarters and seeds removed)

Steps:

  • Gather the ingredients.
  • Mix the meat with onion, garlic, cilantro/parsley, spices and olive oil in a pressure cooker. Brown the meat, uncovered, over medium heat for about 10 minutes, stirring occasionally.
  • Add 3 cups of water, cover, and cook the meat with pressure for 25 minutes if using beef, and about 35 minutes if using lamb or goat meat.
  • Add the carrots, adding water if necessary so that the broth almost reaches the top of the carrots. Cover and cook with pressure for about 7 minutes. Add the potatoes and chickpeas, and cook with pressure until the potatoes are tender about 5 to 6 minutes. Add the preserved lemon and olives, and reduce the sauce until it is thick.
  • Transfer the tagine to a large serving platter, garnished with freshly chopped parsley if desired.

Add the potatoes, chickpeas, olives and preserved lemon, and continue simmering, covered, until the potatoes are tender. Uncover and reduce the sauce until thick.
  • Transfer the tagine to a large serving platter, garnished with freshly chopped parsley if desired.

  • Gather the ingredients.
  • Slice the onion instead of chopping it, and tie the parsley or cilantro into a bouquet instead of chopping it.
  • Pour about half of the olive oil into the base of a large tagine. Distribute the onions over the bottom and then arrange the carrots on top of the onions.
  • In a bowl, mix the meat with the garlic and spices. Place the meat in the middle of the tagine, bone or fatty sides down. Swirl 2 cups of water in the bowl to rinse the spices, and then add this water and the remaining olive oil to the tagine.
  • Top the meat with the parsley bouquet and distribute the olives and preserved lemon wedges over the meat and carrots.
  • Cover the tagine and place on a diffuser over medium-low to medium heat and allow the tagine to reach a simmer. This can take some time so be patient. Once a simmer is achieved, reduce the heat to the lowest temperature necessary to maintain the simmer, and cook for about 3 hours. Add the chickpeas (and a little water if you feel it's necessary), and continue cooking for another 30 to 60 minutes, until the meat and carrots are very tender and the liquids are reduced. Discard the cilantro bouquet, and garnish with freshly chopped parsley if desired.
  • Serve directly from the tagine. Enjoy!

1 pound dried chickpeas, sorted and rinsed
1 teaspoon kosher salt

Steps:

  • Place the water, chickpeas, and salt in a 7-quart pressure cooker (the water should cover the chickpeas and come to the 1/3 full line). Cover and lock the lid. Bring to pressure over high heat, about 15 minutes. Reduce the heat to low, so that you barely hear hissing from the pot. Cook for 45 minutes. 2 tablespoons canola oil
1 large red onion, finely chopped
Kosher salt
1 (4-inch) piece fresh ginger, peeled and minced (about 1/4 cup)
6 large garlic cloves, chopped
1 cinnamon stick
2 teaspoons sweet paprika
1 teaspoon ground turmeric
3/4 teaspoon cumin
1/2 teaspoon hot smoked paprika
1/2 teaspoon ground ginger
1/4 teaspoon ground cayenne
1/8 teaspoon ground cloves
Black pepper
1 tablespoon tomato paste
1 cup chicken stock
1/4 cup fresh lemon juice (from about 1 large lemon), plus more to taste
2 pounds boneless, skinless chicken thighs
8 dates, such as Medjool, pitted and halved
1 (2- to 2 1/2-pound) butternut squash, peeled, halved lengthwise, seeded and cut into 1-by-3-inch wedges
1 small bunch flat-leaf parsley, chopped
4 scallions, thinly sliced
Cooked couscous or pita for serving (optional)

Steps:

  • Using the sauté setting, warm the oil in the pot of a 6- to 8-quart pressure cooker. Add the onion, season with salt, and cook, stirring occasionally, until the onion is softened and translucent, about 5 minutes. Add the fresh ginger and garlic and cook, stirring, until fragrant and softened, about 2 minutes. Add the cinnamon stick, sweet paprika, turmeric, cumin, smoked paprika, ground ginger, cayenne and cloves. Season generously with black pepper. Stir well.
  • Add the tomato paste and stir until fully combined, fragrant and brick-red in color, about 1 minute. Add the chicken stock and lemon juice, scraping any browned bits that have collected at the bottom of the pan. Turn off the heat. Add the chicken and the dates and stir to combine. Place the butternut squash wedges on top and season them generously with salt and pepper. Close the lid and cook on high pressure for 16 minutes.
  • Let the pressure release naturally for 10 minutes, then release remaining pressure manually. Open the lid, add the parsley and scallions and gently fold everything together. (The butternut squash will fall apart slightly to thicken the sauce.) Taste and add lemon juice and salt, if necessary. Serve with couscous or pita and top with yogurt and toasted almonds, if desired.
