4 cups vanilla almond milk
1 cup steel-cut oats
1 cup dried cherries
1/3 cup packed brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
Additional vanilla almond milk, optional

Steps:

  • In a 6-qt. electric pressure cooker coated with cooking spray, combine first 6 ingredients. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 12 minutes. Allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure. Serve with additional almond milk if desired.

1-1/4 cups steel-cut oats
3 tablespoons brown sugar
1-1/2 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon
3/4 teaspoon salt
3 cups water
1-1/2 cups 2% milk
1 can (15 ounces) pumpkin
Optional toppings: toasted chopped pecans, ground cinnamon, additional brown sugar and 2% milk

Steps:

  • Stir together first seven ingredients in a 6-qt. electric pressure cooker. Lock lid; close pressure-release valve. 1/2 cup butter, softened
1/2 cup shortening
1 cup packed brown sugar
1/2 cup granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 1/2 cups all-purpose flour
3 cups rolled oats
1 1/4 cups dried cherries, sniped
1/2 cup triple sec or 1/2 cup hot water
1/4 cup chopped almonds

Steps:

  • Preheat oven to 375.
  • In a small bowl combine cherries and kirsch, triple sec or hot water. Let stand for 30 minutes; drain well.
  • Meanwhile, combine butter and shortening until well blended. Add brown sugar, sugar, baking soda and salt until well blended. Beat in eggs. Beat in flour until well mixed. Stir in oats. Add drained cherries and almonds.
  • Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet. Bake in preheated oven for 7-9 minutes or until tops are golden. Let cookies stand on cookie sheet for 1 minute. Transfer to wire rack; let cool.
  • To store: layer cookies between waxed paper in an airtight container; cover. Store at room temperature for up to 3 days or freeze for up to 3 months.
