3 sweet potatoes, cut in 3/4 inch slices then cubed
2 tablespoons corn starch
1 cup water
1/4 cup sugar
1/4 cup light brown sugar
1/4 cup maple syrup
2 tablespoons butter
1/2 cup chopped pecans
Marshmallows, optional

Steps:

  • Place diced potatoes and cornstarch in plastic bag, shake to coat evenly. Place potatoes in cooker, cover with remaining ingredients, EXCEPT pecans, and stir. Lock on lid and cook on HIGH for 4 minutes. Quick release, remove lid and stir in pecans. You can transfer potatoes to casserole dish, top with a layer of marshmallows and brown under broiler. Makes a delicious and pretty sweet potato casserole.

2 large sweet potatoes
¼ teaspoon salt, or to taste
½ cup dark brown sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cup orange juice
2 tablespoons butter, cut into pieces

Steps:

  • Peel and cut sweet potatoes in half lengthwise, then cut each half into 1/4-inch slices. Place the slices into the pressure cooker's steamer basket. Sprinkle slices with salt.
  • Combine brown sugar, cinnamon, and nutmeg in a small bowl. Mix well.
  • Pour orange juice into the cooker (see Editor's Note, below). Place the trivet and the steamer basket with the sweet potatoes into the pot. Sprinkle the potatoes with brown sugar mixture. Place butter pieces on top.
  • Lock the lid into place and bring the cooker up to full pressure (15 pounds per square inch) over high heat. Once pressure is reached, reduce heat to low and cook for 7 minutes.
  • Quickly release the pressure using the method recommended by your cooker's manufacturer. Do not discard the cooking liquid.
  • Remove the steamer basket from the cooker and carefully place potatoes into a serving dish. Return the cooker to the stove and bring cooking liquid to a boil over high heat. Reduce the heat to medium and simmer, stirring frequently, until the cooking liquid is reduced and syrupy, 5 to 7 minutes. The mixture should coat the back of a spoon.
  • Pour syrup over sweet potatoes and serve.

Slow-Cooker Spiced Sweet Potatoes with Pecans image

Candied sweet potatoes have long been a celebrated side dish during the holiday season but we have removed some of the sweetness (no marshmallows!) and made them even easier by cooking them in a slow cooker. We cut the potatoes into thick rounds so they hold up during the cooking process. The resulting tender sweet potatoes glazed with butter and spices are just sweet enough to make them the perfect accompaniment to your favorite poultry or pork dish.

3/4 cup packed dark brown sugar
1 teaspoon ground cinnamon
Kosher salt
1 stick (8 tablespoons) unsalted butter, melted
1 teaspoon vanilla extract
5 pounds medium sweet potatoes (about 7), peeled and sliced into 1-inch thick rounds
2 tablespoons cornstarch
1/4 cup orange juice
1 cup pecan halves

Steps:

  • Position an oven rack in the middle of the oven and preheat the oven to 350 degrees F.
  • Stir together the dark brown sugar, cinnamon and 1/2 teaspoon salt in a small bowl. Stir together the melted butter and vanilla extract in another small bowl.
  • Toss the sweet potatoes with the cornstarch in a large mixing bowl. Put 1 layer of the sweet potatoes on the bottom of a 6-quart slow cooker. Drizzle with a third of the butter mixture then sprinkle with a third of the brown sugar mixture. Repeat to make 2 more layers. (If there are not enough sweet potatoes to make a complete third layer, that is okay.)
  • Cover the slow cooker and cook on low until the sweet potatoes are tender but not mushy, about 4 hours.
  • Meanwhile, spread the pecans out on a baking sheet and bake until very golden brown, 10 to 12 minutes. Let cool and finely chop.
  • When the sweet potatoes are tender, gently stir in the orange juice. Transfer the potatoes to a shallow serving dish and allow to sit for 10 minutes (the sauce will thicken as it sits). Toss the potatoes in the sauce to coat, sprinkle with the chopped pecans and serve.

This is my favorite style of a Thanksgiving or Christmas time sweet potato side dish, since I'm not really a big fan of whipped sweet potatoes with marshmallow toppings. This is a very sweet dish (candied) but more to my liking. The spice and pecans add a whole new level of taste and texture.

4 pounds orange-fleshed sweet potatoes
1 cup packed dark brown sugar
½ cup unsalted butter, softened
½ cup chopped pecans
1 teaspoon pumpkin pie spice
2 teaspoons unsalted butter, softened

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Prick potatoes several times with a fork and place on a baking sheet.
  • Bake potatoes in the preheated oven until you can easily pierce them halfway through with a sharp knife, about 1 1/2 hours. Remove from the oven and allow to cool until easily handled, at least 20 minutes. Leave the oven on.
  • Meanwhile, mix brown sugar, 1/2 cup butter, pecans, and pumpkin pie spice for topping in a bowl until thoroughly combined.
  • Peel the cooled sweet potatoes and cut crosswise into 3/4-inch thick slices.
