125g microwave brown basmati rice
oil , for frying
2 baby pak choi , halved
2 spring onions , cut into 3cm slices
1 medium egg , lightly beaten
1 tbsp toasted sesame seeds , plus more to serve
50g raw king prawns
3 tbsp teriyaki sauce
2 tsp chilli sauce (such as sriracha)

Steps:

  • Microwave the rice for 1 min. Heat a glug of oil in a frying pan over a high heat. Fry the pak choi and spring onions for 2 mins. Stir in the egg until scrambled, then add the rice and sesame seeds and cook for 2 mins or until piping hot. Set aside.
  • In another frying pan, heat a glug of oil and fry the prawns for 2 mins. Add the sauces and cook until sticky. Serve with the veg, rice and sesame seeds.

This is a fantastic Chinese-style dish for the seafood lover. Rich in flavour it is the perfect dish to impress your friends even though it is fairly simple to make.

250 g fresh fish fillets
1 tablespoon peanut oil
1 small red Spanish onion, sliced
1 small red capsicum, sliced
1 cup broccoli floret
250 g raw prawns
300 g fresh hokkien noodles
3/4 cup teriyaki marinade

Steps:

  • Cut the fish into cubes.
  • Heat the oil in a wok or deep frypan.
  • Add onion, capsicum and broccoli, stir-fry for 2 minutes.
  • Add Seafood and carefully stir-fry for another 2 minutes.
  • Add hokkein noodles and the teriyaki marinade and stir fry until the noodles are heated through properly.
  • Serve.

2 heads baby bok choy
2 tablespoons vegetable oil
1 tablespoon grated fresh ginger root
½ pound uncooked medium shrimp, peeled and deveined
1 cup broccoli florets
1 cup sliced zucchini
2 tablespoons soy sauce
2 tablespoons sweet vermouth
2 tablespoons brown sugar
2 teaspoons rice vinegar
1 tablespoon cornstarch

Steps:

  • Slice the stem ends of the bok choy off to separate the leaves. Wash and drain the leaves; discard the ends. Cut the leafy green part of the leaves from the white part, keeping both parts separated.
  • Heat a large skillet or wok over high heat; add oil. Cook and stir ginger in the hot oil for 1 minute. Add shrimp and continue cooking until they are bright pink and opaque, reducing heat as necessary to prevent burning, 2 to 3 minutes.
  • Stir white pieces of bok choy, broccoli, zucchini, soy sauce, vermouth, brown sugar, and rice vinegar into the skillet. Cover and continue cooking until bok choy begins to soften, 4 to 5 minutes.
  • Stir to coat the vegetables with the liquid. Sprinkle with cornstarch and stir until it mixes in and disappears. Top with the green pieces of bok choy, cover, and continue cooking until leaves start to wilt and the sauce thickens, 1 to 2 minutes. Stir to coat everything with sauce. Serve hot.

2 nests thin vermicelli rice noodles
1 tbsp light soy sauce
1 tbsp oyster sauce
2 tsp mild curry powder
1 tbsp sesame oil
1 garlic clove , chopped
1 red chilli , thinly sliced (deseeded if you don't like it too hot)
thumb-sized piece ginger , grated
1 medium onion , sliced
1 red pepper or yellow pepper, cut into thin batons
4 spring onions , cut in half lengthways then into batons
8 raw king prawns
1 large egg , beaten
coriander leaves, to serve

Steps:

  • Soak the rice noodles in warm water for 5 mins until softened but still al dente. Drain and set aside.
  • In a small bowl, mix together the soy, oyster sauce and curry powder.
  • In a large wok, add half the oil and fry the garlic, chilli and ginger until golden, about 2 mins. Add the remaining oil, onion, pepper, spring onions, prawns and noodles and stir-fry for a few mins. Push everything to one side, add the egg and scramble. Add the soy sauce mixture, toss again for a few more mins, then remove from the heat. Sprinkle over the coriander leaves before serving.
