LEMONY PRAWNS & AVOCADO



Lemony prawns & avocado image

Make these starters up to two hours ahead and serve in glasses to show off the layers of colour

Number Of Ingredients 9

4 ripe avocados , chopped into small chunks
juice 2 lemons or 4 limes
12 cherry tomatoes , chopped
4 tbsp snipped chives
good dash Tabasco sauce
600g large peeled, cooked prawns , defrosted and patted dry if frozen
300g fromage frais
2 baguettes , sliced
olive oil for brushing

Steps:

  • Mix the avocado in a bowl with the lemon or lime juice. Add the tomatoes to the bowl with 2 tbsp chives and the Tabasco, then season to taste.
  • Divide the prawns between 12 glasses or glass dishes. Spoon over the avocado mixture. Mix the fromage frais with 1 tbsp chives, then season to taste. Spoon over, then sprinkle with the remaining chives. You can now chill for up to 2 hrs before serving. Brush the baguette slices with olive oil and toast on the barbecue to serve alongside.

3 large avocados, chopped
1 1/3 cucumbers, peeled, seeded and chopped
1 small red onion, chopped
1 rib celery, chopped
1/2 bunch fresh cilantro, chopped
2 lb medium shrimp, peeled, de-veined and steamed
6 c spicy v-8 vegetable juice
2 limes, juiced
tabasco sauce
lime wedges to serve

Steps:

  • 1. Gently mix first six ingredients together in a large glass container.
  • 2. Add the V-8 juice and lime juice. Stir gently until thoroughly combined. Cover tightly with plastic wrap and refrigerate for at least 1 hour.
  • 3. Serve in chilled margarita glasses or other attractive glass containers.
  • 4. Garnish each glass with a lime wedge and add extra Tabasco sauce as desired.

4 tbsp extra-virgin olive oil
1 segmented orange , plus the juice from the trimmings
juice 1 lemon
1 fennel bulb , trimmed, halved and finely sliced
1 avocado , quartered, peeled and sliced
200g cooked king prawn
3 spring onions , sliced
55g bag wild rocket

Steps:

  • Make the dressing by mixing the oil and citrus juices together in a small bowl with some salt and pepper, then set aside.
  • In a bowl, toss all the other ingredients, except the rocket, together with the orange segments and half of the dressing. Scatter the rocket leaves into 4 Martini glasses or small bowls, pile the salad into the centre, then drizzle with the remaining dressing just before serving.

The ultimate makeover: Prawn cocktail image

Try a lighter, modern version of this ever-popular retro starter

650g prawns in their shells, cooked (to give 200g/8oz cooked, peeled prawns)
2 tbsp lime juice
100g/4oz cucumber
1 tbsp white wine vinegar
1 tbsp snipped dill
1 small ripe avocado
50g watercress
pinch cayenne pepper, for sprinkling
2 tbsp mayonnaise
5 tbsp fromage frais
1½ tbsp tomato ketchup
splash Tabasco sauce
splash Worcestershire sauce
1 tsp brandy

Steps:

  • Peel the prawns. Rinse them in a large sieve under a cold tap, then pat dry with kitchen paper. Lay the prawns in a shallow dish and squeeze over 1 tbsp of the lime juice, then add a twist of pepper. Set aside.
  • Chop the cucumber into small dice and tip into a dish. Spoon over the vinegar, scatter over the dill and a grating of pepper, then set aside. Halve, stone and peel the avocado, then chop into small dice. Spoon over the rest of the lime juice and toss together gently with a twist of pepper.
  • For the sauce, mix together the mayonnaise, fromage frais and ketchup. Stir in the Tabasco, Worcestershire and brandy with a twist of pepper.
  • To serve, put a small spoonful of the sauce into the bottom of each cocktail glass. Very coarsely chop most of the watercress, leaving a few sprigs whole. Lay the chopped watercress on top of the sauce. Drain the cucumber well, then spoon it over the watercress with the avocado. Pile over the prawns, then spoon over the rest of the sauce. Tuck in the sprigs of watercress and serve with a sprinkling of cayenne.

2 avocados
1 lemon, sliced
1 1/2 cups baby shrimp, cooked and peeled
3 tablespoons mayonnaise
1 tablespoon heavy cream
1 dash Tabasco sauce
1 dash Worcestershire sauce
salt, to taste
pepper, to taste
paprika
cucumber, sliced for garnish
lemon, sliced for garnish

Steps:

  • Halve avocados, remove pits, rub surface with lemon slice.
  • Combine mayonnaise, cream, Tabasco, Worcestershire, salt and pepper; fold in shrimp.
  • Spoon into avocados; sprinkle with paprika and chill.
  • Garnish with cucumber and lemon slices.
  • Serve chilled on bed of lettuce.
