An easy, yummy, pound cake in cupcake form. I got this recipe out of a Southern Living magazine and modified it a little. Enjoy!

½ cup unsalted butter, softened
½ (8 ounce) package cream cheese, softened
2 cups white sugar
4 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
1 (8 ounce) carton sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat butter and cream cheese together until creamy; add sugar and beat until fluffy. Add eggs one at a time, beating until each one is blended. Stir in vanilla extract.
  • Combine flour, baking powder, and baking soda in a separate bowl. Gradually add to the butter mixture, alternating with sour cream, beating until blended.
  • Spoon batter into the prepared muffin cups, filling each 2/3 full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 24 minutes.

Have fun with favorite baked goods by assembling them together to make sweet faux hamburgers with this recipe from Nicki Puza.

24 Yellow Butter Cupcakes
2 recipes Brownies, cut into 24 (2-inch) circles
Basic Vanilla Buttercream
Green, yellow, red, and blue liquid food coloring
White nonpareils
Homemade or store-bought pound cake

Steps:

  • Remove cupcake liners (if necessary) and cut each cupcake in half horizontally; place a brownie on the bottom half of each cupcake. Set top halves aside.
  • Divide buttercream evenly between three bowls. To one bowl, add 1/4 teaspoon green food coloring and 2 drops yellow food coloring; mix well to combine. To the second bowl, add 1/2 teaspoon yellow food coloring and 1 drop red food coloring; mix well to combine. To the third bowl, add 1 teaspoon red food coloring and 1 drop blue food coloring; mix well to combine.
  • Transfer each colored buttercream to a resealable plastic bag. Snip a 1/4-inch opening from one bottom corner of each plastic bag. Using the yellow buttercream, pipe a large hollow square on each brownie. Using the red buttercream, pipe a circle in the center of the square. Top with a squiggle of the green buttercream over the red circle.
  • Brush reserved top halves of cupcakes lightly with water. Sprinkle with nonpareils, pressing to adhere. Top frosted brownies with cupcake tops to create cupcake burgers.
  • Preheat broiler.
  • Using a crinkle-cut knife, slice pound cake into 1/2-inch-thick slices. Cut each slice into a 1/2-inch-thick strip. Place pound cake strips on a baking sheet and transfer to broiler. Broil until golden and toasted, 30 seconds. Drizzle pound cake fries with red buttercream and serve with hamburger cupcakes.

1 package yellow cake mix
1 cup sour cream
3 eggs
1/3 cup butter, melted (5 1/3 Tbsp.)
1/4 cup milk
1 cup jelly or 1 cup jam, your favorite flavor
1 cup butter, softened
4 ounces cream cheese, softened
1/2 cup creamy peanut butter
1 (16 ounce) box powdered sugar
chocolate chips or Reese's pieces, for garnish

Steps:

  • MAKE THE CUPCAKES: Preheat oven to 325*F; line 24 muffin cups with paper or foil liners.
  • Combine the cake mix, sour cream, eggs, melted butter, and milk; beat with an electric mixer on low speed for 30 seconds.
  • Increase mixer speed to medium; beat 2 minutes more.
  • Divide batter evenly in the prepared tins; bake for 30 minutes, or until the tops spring back when lightly pressed and a toothpick inserted in the center comes out clean.
  • Cool for 10 minutes in the tins; invert onto wire racks, turn right-side up, and cool completely.
  • With a knife at a slight angle, starting about 1" from the edge, cut a 1" deep circle in the center of each cupcake top.
  • Use the knife to slip out the cake scraps; trim the pointed ends.
  • Spoon the jelly into a large zip-lock bag; snip 1 corner.
  • Pipe the jelly into each cupcake hole; replace cut out centers.
  • MAKE THE FROSTING: With an electric mixer on medium-high speed, beat together the butter, cream cheese, and peanut butter until smooth.
  • Reduce mixer speed to low; gradually blend in the powdered sugar, then enough milk until smooth and spreadable, 2-4 Tbsp.

A quick and simple recipe that tastes even better the next day when flavors had time to blend. - Instead of baking 3 or 4 cupcakes for the two of us, I bought a miniature bundt cake form, holding 2 cups of batter. I like to chop good quality chocolate with a knife making uneven-sized chips better than ready made chips for the difference in flavor and texture. Nice with a cup of tea or coffee.

2 tablespoons cake flour
1/2 teaspoon baking powder
1 ounce unsweetened chocolate square (1 square)
4 tablespoons unsalted butter
1/4 cup sugar
1 pinch salt
1 egg
1/4 teaspoon vanilla extract
1 1/2 tablespoons milk
2 teaspoons powdered sugar

Steps:

  • NOTE: If you want to bake the cake as cupcakes, bake at 375F for 20-25 minutes.
  • Preheat oven to 350°F Grease form.
  • Mix cake flour and baking powder in a small bowl. If not using chocolate chips, chop chocolate with a large knife into 1/8 inch pieces (average).
  • Cream butter and sugar and salt until well blended. Add egg and vanilla and beat until batter is light in color and increased in volume.
  • Add flour and milk and mix until well blended, but don't overbeat. Mix in chocolate chips. Fill form with batter, level top and bake in the middle of the oven for 30-35 minutes, until a wooden skewer inserted in the middle comes out clean.

  • Prepare Cupcakes as directed, omitting vanilla and adding 1 Tbsp. orange zest and 2 Tbsp. fresh orange juice to batter. Pipe or spread Orange Buttercream onto cupcakes.
  • Orange Buttercream
  • Substitute 1 Tbsp. orange zest for vanilla. Reduce milk to 2 Tbsp. Prepare Buttercream as directed in Steps 1 and 2, beating in 2 Tbsp. fresh orange juice with 1 Tbsp. milk in Step 2. Beat in remaining 1 Tbsp. milk as directed in Step 3. Beat in 1 drop red food coloring and 1 drop yellow food coloring until blended, if desired.
  • Mocha Latte Cupcakes

  • Prepare Cupcakes as directed, substituting 1 1/4 cups granulated sugar and 3/4 cup firmly packed dark brown sugar for 2 cups granulated sugar. Microwave 8 oz. chopped semisweet chocolate and 1/4 cup whipping cream in a microwave-safe bowl at HIGH 1 minute, stirring at 30-second intervals. Whisk in 2 Tbsp. whipping cream until smooth. Dip tops of cupcakes in chocolate mixture, and let stand until chocolate is set (about 30 minutes). Pipe or spread Salted Caramel Buttercream onto cupcakes. Garnish with sea salt flakes and caramels, cut into quarters.
  • Note: We tested with Artisan Salt Company Cyprus Mediterranean Flake Salt.

Steps:

  • Preheat oven to 325.
