3 pounds medium red potatoes, quartered
2 packages (3 ounces each) cream cheese, cubed
1/2 cup butter, cubed
1/2 cup half-and-half cream or milk
1 medium green pepper, chopped
4 green onions, thinly sliced
1 jar (2 ounces) sliced pimientos, drained
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese, divided
1/2 cup grated Parmesan cheese, divided

Steps:

  • Place potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain. , In a large bowl, mash the potatoes. Add the cream cheese, butter and cream; beat until blended. Stir in the green pepper, onions, pimientos, salt and pepper. Stir in 1/3 cup cheddar cheese and 1/3 cup Parmesan cheese. , Transfer to a greased 11x7-in. baking dish. Sprinkle with remaining cheeses. Bake, uncovered, at 350° for 20-25 minutes or until heated through.

1-1/2 teaspoon Heinz Prepared Yellow Mustard
1/2 cup heavy cream or evaporated milk
1/2 cup grated cheese
Salt and pepper (to taste)

Steps:

  • Season hot mashed potatoes with Heinz Prepared Yellow Mustard.
  • Pile in shallow baking dish.
  • Beat heavy cream or evaporated milk till stiff.
  • Add grated cheese to cream.

1 2/3 cups boiling water
1 cup half-and-half
1 tablespoon margarine or butter
1/8 teaspoon ground red pepper (cayenne)
2 cups frozen cut green beans
1/4 teaspoon paprika

Steps:

  • Heat oven to 400°F.
  • Stir Sauce Mix, boiling water, half-and-half, margarine and red pepper with whisk in 2-quart casserole. Stir in Potatoes and green beans.

This is delicious and easy to make. We use it for holidays, but could easily be part of dinner rotation. Can use real potatoes, or frozen shredded or obrien potatoes.

8 medium potatoes or 16 ounces frozen hash brown potatoes
1/2 cup butter, melted
2 cups cheddar cheese, shredded
1/3 cup green onion, chopped
1/2 pint sour cream
6 slices bacon, crispy and crumbled
salt and pepper

Steps:

  • boil potatoes til slightly tender.
  • coarsely grate (or just use frozen shredded potatoes).
  • toss all ingredients to mix.
  • place in greased, shallow 1 1/2 qt baking dish.

1 1/4 lbs sharp cheddar cheese, cut into 1/2-inch cubes
1 cup chopped green onion
2 pints sour cream
3 teaspoons salt
1 teaspoon white pepper

Steps:

  • Boil potatoes until done (approximately 45 minutes).
  • Preheat oven to 300°F.
  • Grate potatoes into large mixing bowl (do not mash).
  • Blend in cheese, green onions, sour cream, salt, and white pepper.
  • Transfer mixture to large deep baking dish.
