LEMON, PARSLEY, AND PARMESAN PLUS CHICKEN AND POTATOES
Your roast chicken will reach new heights with this simple sauce.

Steps:
- Preheat oven to 425 degrees. Place chicken, breast side up, on a baking sheet. Rub with 2 tablespoons oil; season generously with salt and pepper. Place parsley and 1 lemon half in cavity. Tie legs together with kitchen twine.
- Toss potatoes and 2 tablespoons oil. Drizzle with juice from remaining lemon half. Season with salt and pepper. Scatter potatoes along chicken.
- Roast for 15 minutes. Reduce temperature to 375 degrees; cook for 25 minutes. Rotate pan, toss potatoes, and cook until potatoes and chicken are golden brown and a thermometer inserted into the thickest part of the chicken's thigh reaches 165 degrees, about 25 minutes more. Let chicken and potatoes stand for 10 minutes.
- Meanwhile, make the sauce: Combine ingredients. After 10 minutes, brush sauce on chicken and drizzle on potatoes.

Steps:
- Heat a medium saucepan over medium-high heat.
- Add 1 tablespoon of the a butter, then the celery and onions.
- Sauté until the vegetables are golden, about 5 minutes.
- Remove from the pan and reserve.
- Add the potatoes and just enough cold water to cover.
- Bring the water to a boil; cover, reduce heat to medium-low and cook until potatoes are tender,.
- about 15 minutes, depending on size.
- Drain the potatoes and return the pan to medium heat.
- Stir in the cooked vegetables, 3 tablespoons of butter and milk.
- "Smash"(still has small lumps of potatoes) lightly with a masher or fork.
- Add more salt, pepper and taste for seasoning.
- Serve immediately or keep warm over low heat with the lid slightly opened.

- Combine vegetables and seasonings; divide among 4 pieces of heavy-duty foil (about 12 in. square). Dot with butter. Fold foil around vegetables and seal tightly. , Grill, covered, over medium heat for 15 minutes on each side. Open foil carefully to allow steam to escape.
