Steps:
- Preheat the oven to 400 degrees F.
- In a large bowl, toss together all of the ingredients. Spread the mixture in a single layer on a baking sheet. Bake until the potatoes and onions are golden brown and cooked through, about 40 minutes. Serve immediately or cool and store in an air-tight container in the refrigerator, reheating the next day in a preheated 400 degrees F oven for 10 to 15 minutes.

Steps:
- Place the potatoes, carrots, bay leaf and onions in a Dutch oven and cover with water to level. Season with salt and mix.
- Bring to a boil and cook, covered, over medium heat for 25 minutes.
- Drain, remove the bay leaf and add all the rest into a large bowl.
- Using a potato masher, coarsely mash all of the mixture.
- Add the butter, milk, nutmeg and pepper. Mix.
- Adjust the seasoning if necessary and serve.

- Heat the butter in a shallow pan and cook the onions with the thyme and bay for 20 mins until very soft, then turn up the heat to medium and cook for 5 mins more until sticky and golden.
- Add the olive oil to the pan, scatter in the potatoes and fry for about 10 mins until golden. They won't crisp because of the onions but you want them soft around the edges; add more oil to the pan if necessary. About 30 secs before serving toss through the parsley and season.

- Saute onions in olive oil over medium heat for 20 minutes. Spread across a baking pan, and cover with potatoes; then, pour in chicken broth, which should barely cover the onions and potatoes. Put some olive oil or butter on top. Sprinkle thyme over potatoes and onions. Bake for one hour.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Heat vegetable oil in a Dutch oven over medium heat. Cook beef in Dutch oven until browned on all sides, 2 to 3 minutes per side.
- Mix brown sugar, salt, mustard, and black pepper together in a small bowl; sprinkle evenly over the roast. Arrange potatoes, carrots, and onion in the Dutch oven around the roast. Pour vinegar and water over the vegetables.
- Place a cover on the Dutch oven and put in preheated oven. Cook until the roast is hot in the center, and just turning from pink to grey, about 4 hours. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C).

POTATOES AND ONIONS (DUTCH RECIPE)
Found this recipe on Worldcooks.net for recipes of the Netherlands. Posting for ZWT6, so untried by me as of yet. Sounds yummy!! It doesn't state how to cook the potatoes, after peeling, for 15 minutes, but I am assuming that you boil the potatoes for 15 minutes, then cool and slice.

Steps:
- Slice the potatoes.
- Fry the onions three minutes in the hot butter, add the potatoes and fry 5 minutes more.
- Take the potatoes and onions out and put them on a plate.
- Stir the flour into the hot butter and simmer for 2 minutes.
- Stir in the beer and bring to the boil.
- Pour this sauce over the potatoes.

- Preheat oven to 450 degrees F (230 degrees C).
- Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.
- Roast in the preheated oven for 25 minutes. Remove foil and continue to roast until potatoes and onion are browned and edges are crispy, 15 to 30 minutes.
