  • Boil, peel and cube 2 pounds russet potatoes; toss with 2 tablespoons cider vinegar and 1/2 teaspoon salt. Mix 2 cups mayonnaise, 2 chopped scallions, 1 chopped celery stalk, 1 tablespoon each dijon mustard and vinegar, 1 teaspoon sugar, and salt. Toss with the potatoes.

5 large red potatoes, peeled and cubed
2 ribs celery, chopped
1/2 large onion, chopped
3 hard-boiled eggs, 2 chopped and 1 sliced
2 heaping tablespoons sweet pickle relish, drained
1/2 cup salad dressing, (recommended: Miracle Whip)
3 tablespoons yellow mustard
1 tablespoon sugar
Paprika, for garnish
Salt

Steps:

  • Boil cubed potatoes until they are tender. Drain and cool. In a large bowl add celery, onion, 2 eggs and pickled relish. Add the salad dressing, yellow mustard and sugar. Stir well. Place the sliced egg on top of potatoes and sprinkle with paprika and salt. Let the potato salad chill in the refrigerator for 2 1/2 hours or overnight.

2 tablespoon red wine vinegar
5 tablespoons good quality olive oil
1 level teaspoon salt
1 level teaspoon freshly ground black pepper
1 heaping tablespoon chopped fresh marjoram
1 heaping tablespoon chopped fresh basil
1 heaping tablespoon chopped fresh parsley
3 tablespoons finely chopped shallots
2 tablespoons lemon juice
5 tablespoons good quality olive oil
1 level teaspoon salt
1 level teaspoon freshly ground black pepper

Steps:

  • Start with about 1pound of potatoes (it's important to use evenly sized new potatoes, and you can either scrape them or peel them). Cook the potatoes in boiling, salted water. Try to cook these perfectly so that they just fall off the blade of a knife when you stick it into the potato (you don't want the potatoes raw but you certainly don't want them falling apart either). As soon as the potatoes are cooked, drain them and put them into a bowl. It is very important to add your dressing at this stage, while the potatoes are still steaming hot (by allowing them to cool down in the dressing the flavors penetrate the potatoes). Here are 3 dressings that I like to use:
  • Potato salad with salsa verde: All you do is dress the potatoes with 2 large tablespoonfuls of salsa verde.
  • Potato Salad with olive oil, lemon and dill: Use olive oil and lemon juice dressing and add some roughly chopped fresh dill and a little salt and freshly ground black pepper. (Instead of dill you could try fresh mint, fresh parsley or fennel tops -- they'll all work).
  • Potato salad with dandelion and shallot: Again, use olive oil and lemon juice dressing, add some thoroughly washed and roughly chopped dandelion leaves and some finely chopped shallot, and season to taste with salt and freshly ground black pepper.
  • Mix together all the ingredients, adding the shallots last.
  • Yield: 4 servings

  • MARJORAM AND BALSAMIC VINEGAR DRESSING: 2 tablespoons balsamic vinegar (just 1 tablespoon may be enough if it is a very good vinegar) 5 tablespoons good quality olive oil 1 teaspoon freshly ground black pepper 3 heaping tablespoons chopped fresh marjoram

This is potato salad the old-fashioned way, with eggs, celery and relish. It's really good to serve with chili.

5 potatoes
3 eggs
1 cup chopped celery
½ cup chopped onion
½ cup sweet pickle relish
¼ teaspoon garlic salt
¼ teaspoon celery salt
1 tablespoon prepared mustard
ground black pepper to taste
¼ cup mayonnaise

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.
  • Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • In a large bowl, combine the potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Mix together well and refrigerate until chilled.

I found this recipe along time ago but I have altered it the way I like. Took out sour cream and salad dressing. Put in Dukes mayonaise.

6 medium red potatoes
1/2 c dukes mayonaise
1/2 c diced celery
1 small sweet onion finely diced
2 Tbsp diced pimientos
2 Tbsp dill salad cubes
6 slice bacon, cooked
1 tsp black pepper
1 Tbsp salt

Steps:

  • 1. Wash the potatoes and cut into bite size cubes. Not necessary to peel.
  • 2. Boil till tender.
  • 3. Drain and set aside to cool
  • 4. When potatoes are cooled add all the ingredients except the bacon.
  • 5. Stir gently to mix up don't use all the salt till you taste and see if more is needed.
  • 6. Crumble the bacon and add some into the salad and stir. Sprinkle top with reserved bacon and serve.
