1 1/2 lbs potatoes (I tested Yukons)
1/4 teaspoon harissa (to taste)
1 teaspoon ground cumin (if you have time, gently dry roast the cumin powder in a cast iron skillet)
1 large lemon, juice of
2 tablespoons extra virgin olive oil (Shulman uses much less but I love my olive oil!)
1/4 cup plain yogurt, to desired consistency
2 tablespoons fresh cilantro (FRESH!) or 2 tablespoons fresh flat leaf parsley, minced (FRESH!)

Steps:

  • Steam or boil the potatoes until tender-about 15-20 minutes. I *very* slightly undercook the potatoes for best results. *After the potatoes have cooked, refresh under cold water, drain and cut into cubes. *Note: when I made this potato salad recipe I drained the potatoes, placed them in a bowl to cool until just warm and proceeded with the recipe. After the potato salad had cooled in the refrigerator then the fresh cilantro was stirred in just before serving. I wanted to avoid "cooking" the fresh herbs.
  • Combine the remaining ingredients except for the herb(s) in a large bowl and mix well. Add the potatoes to the bowl and toss with the dressing. Can serve warm; or chill and serve (depends on time of year).
  • Stir in the herbs just before serving.

4 medium potatoes, peeled and cut in 1/4-inch dice
water
salt
1/2 cup vegetable oil
3/4 teaspoon cayenne
1/4 teaspoon cumin
1 tablespoon water
2 tablespoons fresh lemon juice
1 teaspoon ground caraway
1 1/2 teaspoons salt

Steps:

  • Cook potatoes in lightly salted boiling water until tender but still intact.
  • Drain and return to pan.
  • Cook over low heat until potatoes are dry, about 1 minute.
  • Heat oil in a large, heavy skillet over medium heat until a light haze forms above it.
  • Combine cayenne, cumin and water.
  • Add cayenne mixture, lemon juice, caraway and salt to skillet.
  • Cook, stirring constantly, until most of the liquid has evaporated.
  • Remove from heat, add potatoes, and stir gently until evenly coated.
  • Cool to room temperature before serving.

Vegan Potato Salad With Tahini image

This robustly seasoned vegan potato salad is lively and earthy from a dressing of cumin, charred scallion and loads of tahini, which gives it a rich and creamy texture. This is a good one to make a day or two before you want to serve it as the flavors get better as they sit. Just be sure to let it come to room temperature so everything is at its brightest and most supple.

1 3/4 pounds yellow potatoes, such as Yukon Gold, cut into 1-inch chunks
Salt and freshly ground black pepper
2 bunches scallions, trimmed
1/3 cup extra-virgin olive oil, plus more for drizzling
2 tablespoons freshly squeezed lemon juice, plus more as needed
1 to 2 garlic cloves, finely grated
1 teaspoon ground cumin
1/4 cup tahini
Ice water, as needed
1/2 cup soft herbs, such as cilantro, parsley, mint, dill or a combination

Steps:

  • Place the potatoes in a large pot with enough salted water to cover by 1 inch. Bring to a boil over high heat and cook until potatoes are just tender, 10 to 15 minutes, depending on the kind of potato. Drain very well.
  • Heat the broiler. Arrange 1 bunch scallions on a sheet pan. Thinly slice the other bunch, reserving the slices for serving.
  • Season the whole scallions in the pan with salt and pepper, and very lightly drizzle with olive oil. Broil until charred, tossing occasionally, for 3 to 7 minutes. Transfer to a cutting board to cool. Coarsely chop scallions and set aside.
  • In a large bowl, whisk together lemon juice, garlic, cumin and a large pinch of salt. Let sit for 1 minute to mellow the garlic and dissolve the salt. Whisk in tahini, then gradually add ice water, 1 tablespoon at a time (about 3 to 6 tablespoons total), until the sauce thickens and is smooth enough to drizzle. The sauce can take 30 seconds to 1 minute to thicken so keep whisking; if it gets too thick, thin it down with a little more water. Taste and add more lemon juice and salt if needed.
  • Transfer hot potatoes and charred scallions to bowl with tahini dressing. Drizzle in the remaining 1/3 cup olive oil and toss until potatoes are well coated. Taste and add more salt and lemon juice if needed.
  • Let cool to room temperature for at least an hour before serving, or refrigerate for up to 24 hours. The potatoes will absorb the dressing as they sit. Just before serving, taste and add more salt or lemon juice if needed, and toss with the raw scallion slices and herbs.

1 teaspoon harissa (Tunisian)
1/2 teaspoon salt
1 teaspoon cumin
1 lemon, juice of
fresh cilantro or parsley, to taste

Steps:

  • Cook potatoes in boiling water for 15 minutes or until tender but not too soft or mushy.
  • Cool and peel, cut into cubes.
  • Heat oil in a small skillet and add harissa, salt, cumin and lemon juice.
  • Bring to a boil and boil for a few seconds. Pour over potatoes and toss.
  • Refrigerate for 1 hour or overnight.
  • Add the chopped cilantro or parsley just before serving. Stir it in or sprinkle on top as you wish.
