CHEESY KIELBASA POTATO CASSEROLE

Nothing is more rib-sticking good than kielbasa and potatoes together. Add cheese and you have this delicious and easy casserole. Can also be cooked on the BBQ grill!

16 oz kielbasa or smoked sausage
1 10.75 oz condensed cheddar cheese soup
1/4 cup caramelized onions (optional, but add lots of flavor)
4 large potatoes (pared and cut in chunks*)
1 cup milk
1 1/2 cups shredded cheese (divided)
1/2 tsp pepper

Steps:

  • *I strongly suggest partially cooking the potatoes. I used raw and baked for 1 hour and the potatoes in the center of the casserole were still slightly underdone. Stirring the casserole midway through the baking time probably would have helped. If you partially cook the potatoes, reduce casserole cooking time to 30 minutes.
  • Cook On The Grill:
  • Use either a flame-proof ceramic or metal (disposable is fine) baking dish. Proceed as directed except cover with aluminum foil and place on the UNLIT side of the grill for approximately 1 1/2-2 hrs. This is good prepared with other grilled foods that require indirect cooking.
  • Conventional:
  • Preheat oven to 350 degrees F. Lightly spray a 2 1/2 quart (11×7) baking dish.
  • Cut kielbasa into pieces about 1/2-inch thick. Set aside.
  • In a large bowl, mix soup with milk, adding milk slowly while stirring to prevent lumps. Mix in the potatoes, pepper, caramelized onion, 1 cup of the cheese and kielbasa. Stir well.
  • Turn into prepared pan and bake for 45 minutes, stirring half way through cooking time so potatoes cook evenly (see note above-I did not do this, which could account for the undercooked potatoes at the center of the casserole). However, I still suggest partial cooking of the potatoes or even using canned or leftover baked potatoes-you'll reduce the baking time too if you do this.
  • Top with the remaining cheese and bake for an additional 15 minutes.

1 tablespoon butter
1 package (14 oz) fully cooked kielbasa sausage, cut in half lengthwise, then cut in 1/2-inch slices
1 cup diced onions
1 box (4.7 oz) Betty Crocker™ scalloped potatoes or au gratin potatoes
2 cups water
1/2 cup frozen sweet peas
4 oz (half of 8-oz package) cream cheese, cubed and softened
1 cup shredded Cheddar cheese (4 oz)
2 green onions, thinly sliced

Steps:

  • Heat 12-inch nonstick skillet over medium heat. Melt butter in skillet; add sausage and onions. Cook 7 to 9 minutes, stirring occasionally, until sausage is lightly browned on edges.
  • Add potatoes and sauce mix (from potato box), and 2 cups water; stir well to combine. Heat just to boiling, stirring occasionally. Reduce heat. Cover and simmer 10 minutes, stirring occasionally. Stir in frozen peas; cook 3 to 5 minutes or until potatoes are tender and sauce is thickened.
  • Remove from heat; stir in cream cheese, and continue stirring until cheese is melted. Top with Cheddar cheese and green onions; serve immediately.

An easy variation of the now classic brunch potato bake that includes a very tender Kielbasa.

1 (10.75 ounce) can condensed cream of mushroom soup
2 cups milk
1 tablespoon minced garlic
1 teaspoon salt
½ teaspoon ground black pepper
1 pound kielbasa sausage, sliced thin
4 large russet potatoes, peeled and cubed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large mixing bowl, mix together soup, milk, garlic, salt, and pepper. Stir in potatoes and kielbasa. Spoon into a 7x11 inch casserole dish.
  • Place casserole on a baking sheet, and bake in the preheated oven for 90 minutes, or until potatoes are tender.

This dish is so cheesy, so easy, and so delicious! It's not the most beautiful or colorful plate of food, but it's well worth the effort.

1 bag of ore ida steam 'n mash russet potatoes
2 Tbsp butter
4 Tbsp flour
2 c milk
1/2 tsp salt
1/4 tsp black pepper
1/2 lb velveeta, cubed
1/2 c sharp cheddar, shredded
1 lb kielbasa or smoked sausage

Steps:

  • 1. Preheat oven to 350. Cut kielbasa (or sausage) in half lengthwise, then chop into 1/2" half-moon cuts. Brown in a frying pan over medium heat for about 10 minutes, turning frequently.
  • 2. Microwave your bag of Steam 'N Mash for 10 minutes.
  • 3. When the meat is browned, and the potatoes are done, combine in a 2-quart casserole dish.
  • 4. Mix all remaining ingredients (except for shredded sharp cheddar) into a saucepan. Whisk constantly over medium heat until warm, melted, and smooth.
  • 5. Pour cheese sauce over the meat/potato mixture.
  • 6. Sprinkle evenly with sharp cheddar. Bake for 30 minutes, or until bubbly. Enjoy!

In a large skillet, heat oil over medium-high heat; saute onion and kielbasa until onion is tender., Add potatoes; cook and stir until lightly browned, 3-5 minutes. Stir in brown sugar mixture; bring to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally. Stir in spinach until wilted. Stir in bacon.
