SWEET POTATO MARSHMELLO PECAN CASEROLE

4 cup large sweet potatoes, peeled and cubed
1/2 cup packed brown sugar
1 stick melted butter
1 teaspoon pure vanilla extract
1/2 cup milk
2 Large eggs
1/2 teaspoon Salt
1 cup packed dark brown sugar
1/2 cup all-purpose flour
1/2 stick melted butter
1 cup chopped pecans
2 1/2 cup mini marshmallows

Steps:

  • Preheat oven to 350° and grease a 9-x-13" baking dish with cooking spray.
  • Roast sweet potatoes for 30 minutes. Mash them when done.
  • In a large bowl, stir together sweet potatoes, sugar, butter, vanilla, milk, eggs, and salt until smooth. Pour into prepared dish.
  • In a medium bowl, stir together sugar, flour, and butter until it clumps.
  • Stir in pecans, then spread evenly over potatoes. Top with marshmallows.
  • Bake until cooked through and golden, about 30 minutes.

1 1/2 cup(s) shredded cheddar cheese
4 - potatoes, cooked
6 slice(s) bacon, cooked crisp
1 teaspoon(s) salt
1/4 teaspoon(s) ground black pepper
1/4 teaspoon(s) garlic powder

Steps:

  • PREHEAT OVEN TO 350F.
  • SPREAD MASHED POTATOES EVENLY ON THE BOTTOM OF A 9X13 INCH BAKING DISH. LAYER SOUR CREAM EVENLY OVER TOP. SPRINKLE HOUSE SEASONING, TO TASTE. SAUTE ONION AND BELL PEPPER IN BUTTER; EVENLY LAYER OVER TOP OF SOUR CREAM. SLICE POTATOES AND LAYER OVER ONIONS AND BELL PEPPERS. ADD BUTTER. SPRINKLE WITH HOUSE SEASONING. TOP WITH CHEESE. BAKE FOR 25 TO 30 MINUTES. REMOVE FROM OVEN A SPRINKLE CRUMBLED COOKED BACON ON TOP.
  • HOUSE SEASONING: MIX 1 CUP SALT, 1/4 CUP BLACK PEPPER, 1/4 CUP GARLIC POWDER TOGETHER AND STORE IN AN AIRTIGHT CONTAINER FOR UP TO 6MO.
  • LEFTOVER MASHED POTATOES WORK WONDERFULLY IN THIS RECIPE.
