LEFTOVER MASHED POTATO BREAD AND ROLLS



Leftover Mashed Potato Bread and Rolls image

Number Of Ingredients 9

1 cups leftover mashed potatoes (any flavor), hot, cold or luke warm all work!
1/2 cup + 2 Tablespoons hot milk
1 Tablespoons yeast
1/4 cup warm water
2 Tablespoons + 1/2 cup sugar
2 large eggs
1 1/4 teaspoons salt
1/2 cup salted butter, melted
4 1/4 cups flour

Steps:

  • In a mixer with a dough hook, blend mashed potatoes and milk. Let cool to a warm but not hot temperature. Add yeast, water and 2 Tablespoons of sugar. Mix well and cover with a dish towel. Let mixture sit for 5 - 10 minutes, allowing yeast to poof and activate. Add eggs, 1/2 cup sugar, salt, and melted butter. Blend well. Add flour 1/2 cup at a time until all flour has been mixed in or until dough no longer sticks to the sides of bowl. Coat a large bowl with cooking spray. Add dough and then spray top of dough with cooking spray. Cover with a dish towel and let sit for 1 hour in a draft free spot or until mixture is doubled in size. After mixture has doubled, take all your anger out on it and punch it a few times. Prepare a 9x13 casserole dish and a 9x9 casserole dish for rolls by spraying them generously with cooking spray. Grab approximately 3 Tablespoons of dough and slowly pull ends down and under the dough creating a ball. Place this in the greased casserole dish. You should be able to get 3 across and 4 down, making 12 in the 9x13 pan and 3 across and 3 down in the 9x9 pan, making 9 in the small pan. Cover prepared dough with a dish towel and let rise again for another hour. Preheat oven to 350*F Bake rolls for 25 minutes UNCOVERED or until tops of rolls are golden. Remove from oven and rub butter on top of rolls. Serve immediately.

MY GRANDMA'S POTATO ROLLS OR POTATO BREAD (FOR BREAD MACHINE)



My Grandma's Potato Rolls or Potato Bread (For Bread Machine) image

This is my Grandma's recipe and it is DELISH! I am not sure where she got it from, but these rolls have been a tradition in our family for as long as I can remember. This recipe uses REAL mashed potatoes (not instant flakes). So, when you plan to make this be sure to reserve 1/2 to 1 c. of the mashed potatoes you served at dinner the night before!! Today I was hungry for these rolls but didn't feel like rolling out dough, so I attempted to make the recipe (cut in half) in my bread machine to make a loaf of bread instead....PERFECT results! I have listed the ingredients the way my bread machine lists them, but do be sure to check manufacturer's instructions on the correct order of ingredients for your specific machine. I hope everyone enjoys this as much as our family does. Below are both the rolls and the bread machine versions of this recipe.

1 tablespoon yeast
1 cup water, lukewarm
1 cup honey or 1 cup sugar
1 cup mashed potatoes, REAL (leftovers work great!)
1/2 cup vegetable oil
3 eggs
6 cups bread flour
1 teaspoon salt
1/2 cup water, lukewarm
1/4 cup vegetable oil
1/2 cup honey (do NOT add honey if planning to use sugar. Honey is listed here because it should be added with liqu)
1 egg, whole
1 egg, separated, use white only
1/2 cup mashed potatoes, REAL (leftovers work great!)
3 cups bread flour
1/2 cup sugar (do NOT add sugar if using honey)
1/2 teaspoon salt
2 1/4 teaspoons yeast (or one envelope)

Steps:

  • If making POTATO ROLLS: Preheat oven to 350°F.
  • In a large mixing bowl, dissolve yeast in 1 cup warm water. Allow the yeast to activate and then mix in sugar or honey.
  • Add mashed potatoes, vegetable oil, eggs and salt. Use mixer or bread hooks.
  • Add flour one cup at a time stopping at 5 1/2 cups. Slowly add remaining flour until the dough is only slightly sticky to the touch. The dough should be workable but not dry.
  • Place in a greased bowl and cover with a towel. Allow to rise in a warm place until doubled in size, or it can sit overnight at room temperature.
  • Punch down and then roll dough out on floured surface to 1/2" thickness.
  • Use a canning jar ring to cut rolls - should make 30-36 rolls.
  • Place on a greased pan and allow to rise till almost doubled.
  • Bake in a preheated 350°F oven 12-15 minutes or until lightly browned.
  • If desired, slather outside tops with butter while still warm.
  • Enjoy!
  • NOTE: Prep time does not include rise times as they will vary.
  • If making POTATO BREAD: Place into bread pan in order as listed above OR as per manufacturer's guidelines.
  • Set for 1 1/2 lb. bread loaf and start bread machine.
  • Walk away until you hear the "ding" of the bread machine - approximately 3 hours later.
  • Remove from pan and slather outside of the loaf with butter while still warm from machine.
  • Enjoy!

WHOLE WHEAT POTATO BREAD OR ROLLS



Whole Wheat Potato Bread or Rolls image

This makes great rolls and scones!!! I lost this recipe for over a year and could not find one that was as light. Now that it is on the web I won't ever loose it again!! It was a bread recipe from the back of a wheat bag but I use it for rolls. Can grease 2 1/2 size cans and use as pans. Fill cans 1/2 full.

8 cups whole wheat flour
1 tablespoon salt
4 tablespoons honey
4 tablespoons oil
2 tablespoons yeast, disolved in
1/2 cup warm water
1 medium potato, cooked until mealy in 2 c water OR
1/2 cup instant potato flakes, in 2 c water
1 3/4 warm water, added to potato water. (Instant or cooked potato)

Steps:

  • Mash or beat potatoes and water until smooth.
  • Cool.
  • Add 1 3/4 cup water to potato mixture.
  • Add yeast, oil, salt and honey.
  • Pour this mixture slowly into flour.
  • Mix 5 to 7 min with electric mixer. Dough will be soft.
  • Let rest 10 to 15 minute on greased surface.
  • Punch down and shape into loaves or rolls.
  • Let rise until double.
  • Bake rolls 20 to 30 minutes at 400.
  • Bake loaves of bread 35 to 45 minute.

This is a recipe from Friendly Food Recipes for Life by Royal Prince Albert Hospital Allergy Unit. This dough produces a very acceptable bread roll. It has a bagel-like crust and chewy texture. Potato rolls can be frozen. Wrape them in foil to reheat in oven. Original recipe did not give a quanity for salt, so not sure if this is the correct amount.

1 cup water
1 (7 g) packet dry yeast
1/4 cup sugar
1/4 cup oil
1 cup warm mashed potatoes
2 eggs, beaten
2 -2 1/2 cups potato flour
1/4 cup extra potato flour
1 teaspoon salt

Steps:

  • Combine warm water, yeast and half the sugar. Allow to stand for 10 minutes.
  • Add oil and potatoes to yeast mixture.
  • Stir in 1 cup potato flour along with salt.
  • Add 2 beaten eggs.
  • Beat 1 minute with wooden spoon.
  • Stand in warm place until mixture forms a sponge. It willrise and look foamy.
  • Add rest of flour to make a firm dough.
  • Stand in warm place until doubled in bulk.
  • Using extra potato flour, shape dough into rolls. Place on lightly oiled oven trays.
  • Cover with plastic wrap.
  • Stand in warm place and let rise.
  • Uncover and glaze with beaten egg (whole egg).
  • Bake at 190 deg C for 10-12 minutes.

A delicious way to use leftover mashed potatoes The recipe can be doubled, halved, or varied in other ways to suit the quantity of leftovers or your personal preference. These can be served with ketchup or any other dipping sauce.

4 tablespoons vegetable oil
¼ cup chopped onion
¼ teaspoon ground turmeric
¼ teaspoon chili powder
1 cup mashed potatoes
1 tablespoon chopped fresh cilantro
2 tablespoons water
4 slices white bread

Steps:

  • Heat one tablespoon of oil in a frying pan over medium high heat. Add the chopped onions, and saute until they are softened.
  • Mix the turmeric and chili powder into the frying pan and remove the pan from the heat. Stir the mashed potatoes and cilantro into the frying pan; stir to mix well.
  • Sprinkle a few drops of water onto each slice of bread. Flatten the bread gently. Spoon 1/4 of the potato mixture onto the slice of bread. Roll the bread into a cylinder. Seal the edges together by pinching the ends with your fingers, use more water if it is necessary to keep the bread sealed. Do the same with the remaining 3 slices of bread.
  • Pour the three tablespoons of oil into a large frying pan or wok. Heat the oil to a high heat. Place the bread rolls into the hot oil and fry until crispy.
