SAUERKRAUT STRUDEL (AKA KRAUTSTRUDEL) WITH BACON

Sauerkraut Strudel (aka Krautstrudel) with Bacon image

Sauerkraut strudel is a popular savory strudel version in beer gardens and during Oktoberfest. It is easy to make, especially if you use pre-made puff pastry. Or you can make a strudel dough - see the notes below.

SAUERKRAUT STRUDEL (KRAUTSTRUDEL): AN EASY GERMAN RECIPE

Sauerkraut Strudel (Krautstrudel): an easy German recipe image

Flaky phyllo dough surrounds savory cooked cabbage in this German sauerkraut strudel complete with smoked bacon, onion, and red pepper. While plenty of strudels are sweet like apple strudels, this is a savory version of the pastry. Sauerkraut strudel can be served hot or cold as a main dish alongside several sides.

Provided by Cookist

Time 50m

Yield 10

Number Of Ingredients 9

Phyllo dough, 8 - 10 sheets frozen, thawed
Olive oil, 3 tablespoons
Bacon, 6 slices, diced
large yellow onion, 1, diced
Red pepper, 1/2, diced
small head cabbage, 1, shredded
Salt, 1/2 teaspoon
caraway seeds, 1 teaspoon, plus more for the top
Ground black pepper,

Steps:

  • Though it might seem intimidating to roll the sauerkraut strudel, it's as simple as moving quickly, carefully, and rolling the strudel tight.
  • After thawing the phyllo dough and cooking the bacon, onion, red pepper, and shredded cabbage in a skillet, place the cabbage mixture on the dough and roll.
  • Then, top with olive oil and caraway seeds.
  • This recipe makes two German sauerkraut strudel rolls.

POTATO, BACON AND SAUERKRAUT STRUDEL

Potato, Bacon and Sauerkraut Strudel image

I had some of my sauerkraut filling left over from the perogies I made over the Easter holidays and decided this would be a great way to use it up. I always mix sour cream and mushrooms into my sauerkraut when I make perogies so my left overs were a bit different, but with just sauerkraut this be good too. Instead of phylo, I used puff pastry from Trader Joe's as I find it easier to work with. Handle these carefully as they are very delicate. Cut with a serrated knife. Make sure you let them cool down before cutting as they will fall apart.

Number Of Ingredients 10

2 large baking potatoes, peeled and diced (i used yukon golds)
4-6 slice(s) bacon, diced into 1" pieces (i used lean turkey bacon in mine)
1 large sweet onion, large dice
1 large bay leaf, or two small ones
1 teaspoon(s) fresh ground pepper
1 teaspoon(s) whole caraway seeds ( i left this out)
2 cup(s) sauerkraut (from the jar and drained)
4-sheets - phylo dough (i used 2 sheets of trader joe's puff pastry)
3 teaspoon(s) butter, melted
- sour cream for serving along side the strudel

Steps:

  • In a large saucepan, boil the potatoes. Rinse and mash with some butter and the fresh ground pepper (I used vegan margarine). Set aside.
  • In a large pan saute the onions, bacon and bay leaf until the onions just start to get brown. Drain any extra fat from the pan. Remove the bay leaf.
  • Add the potatoes, and sauerkraut to the onions, bacon mixture. Give it a really good toss to make sure it's well mixed. At this point, if you want to wait to make the strudel put this in the fridge for 24 hours.
  • Melt your butter and get a pastry brush, brush the first piece of phylo, repeat with the next two, but don't grease the top sheet.
  • Pile the bacon, potato, sauerkraut mixture on top of the phylo and spread it out evenly. I used a small offset spatula to do this and it worked great. Remember to leave about 1-1/2 inch space along the edges of the phylo. Seal the phylo making sure the sides are sealed and the bottom and put the seam down on the baking sheet. I put parchment on mine to make sure it doesn't burn. Bake at 400'F for 40 minutes.
  • NOTE: I used Trader Joe's puff pastry to make mine, I thawed two sheets and rolled them out to 12"x14" and spread the filling on each one, rolled it up and sealed it with some egg wash. Bake at 400'F for about 20 minutes.
  • Keep an eye on your strudel whether you used phylo or puff pastry, some ovens are hotter then others and this could easily burn.
  • Let the strudel cool for at least 20 minutes before serving, it can be a tad soggy, but this is how it's supposed to be. It tends to be less soggy with the puff pastry.
  • Serve with sour cream.
  • Enjoy!

POTATO, BACON AND SAUERKRAUT PATTIES

Potato, Bacon and Sauerkraut Patties image

Try this for breakfast: creamy mashed potato, with tangy Sauerkraut and smoky bacon in a pattie! Adapted from a recipe on the Simply Great Recipes website. The original recipe is obviously an Edgell recipe and listed in the ingredients 1 cup (100g) Edgell Instant Mash. Zaar would not accept this as an ingredient, so I have replaced it with 2 cups of mashed potato. If you do track down - or regularly use - Edgell Instant Mash, the step now removed from the instructions is "In a medium bowl combine the Edgell Instant Mash and 1 1/4 cups of boiling water". To use canned instant mash would obviously be a time-saver! Depending on whether cream or milk has already been added to the mashed potato, you may like to add some in step 2.

Time 14m

Yield 6-8 patties, depending on size, 6 serving(s)

Number Of Ingredients 12

1 teaspoon oil
3 slices bacon, chopped
1 onion, finely minced
2 cups mashed potatoes
1/2 tablespoon sour cream (your mashed potatoes may already be adequately creamy) (optional)
410 g edgell sauerkraut, well drained
1 egg, lightly beaten
1 teaspoon brown sugar, to taste
1 teaspoon caraway seed
fresh ground pepper, to taste
salt, to taste (depends on how much salt has already been added to the potato and sauerkraut)
2 tablespoons oil, for cooking

Steps:

  • Heat 1 teaspoon of oil in a large (preferably non-stick) pan, add the bacon and cook for about a minute, then add the onions and cook for another minute, or until the onion is just beginning to soften. Put the pan aside for use later in cooking the patties.
  • In a medium-to-large bowl, combine the mashed potato, (optional) sour cream, the well-drained Edgell Sauerkraut, the egg, the cooked onion and bacon, the brown sugar, the caraway seeds and freshly ground black pepper, and (if necessary) salt, and mix well to combine all the ingredients.
  • Shape the mixture into 1/2 cup patties. Heat 2 tablespoons of oil in the pan used for cooking the bacon and onions, add the patties and cook for 2-3 minutes on each side or until golden brown.
  • Serve as part of a "big breakfast" or with barbecued sausages.
  • TIP: Chopped fresh herbs such as parsley or thyme can be added in step 2.

DAR'S SUPER SAVORY SAUERKRAUT POTATO BAKE

Dar's Super Savory Sauerkraut Potato Bake image

This dish has some of the flavors that I miss from my childhood in Germany. It is comfort food with a capital 'C.' I like to pair it with my own pork schnitzel or with baked chicken for a hearty dinner. This dish also includes a recipe for a creamy sauce that I use both in pot pies and as a substitute for condensed soups in many recipes. 'Guten Appetit!'

CHICKEN AND BACON CHOUCROUTE WITH POTATO SALAD RECIPE

Chicken and Bacon Choucroute with Potato Salad Recipe image

This chicken-meets-bacon-meets-sausage-meets-sauerkraut showstopper takes only 25 minutes in the oven. And there's no carving needed: once this hearty main goes into the oven, your work is done and you can enjoy the party too.

Provided by Chris Morocco

Yield 8 servings

Number Of Ingredients 19

3 lb. baby Yukon Gold potatoes
Kosher salt
2 small shallots, finely chopped
1/3 cup extra-virgin olive oil
1/3 cup white wine vinegar
3 Tbsp. Dijon mustard
2 tsp. hot sauce
1 tsp. honey
1/4 cup tarragon leaves
1 Tbsp. extra-virgin olive oil
3 lb. skin-on, bone-in chicken thighs (6-8)
Kosher salt
8 oz. slab bacon, sliced 1/2" thick
6 garlic cloves, lightly crushed
2 large sprigs thyme
1 tsp. juniper berries
2 lb. sauerkraut (about 4 cups), rinsed, squeezed dry
1 cup dry white wine
2 lb. sausages, such as kielbasa and/or bratwurst

Steps:

  • Place potatoes in a small pot and pour in water to cover by 2"; season generously with salt. Bring to a boil, then immediately reduce heat so water is at an active simmer. Cook potatoes until fork-tender, 22-25 minutes. Drain; let sit 5 minutes to dry.
  • Meanwhile, whisk shallots, oil, vinegar, mustard, hot sauce, and honey in a large bowl; season dressing with salt.
  • Add hot potatoes to dressing and let sit, tossing occasionally, until they are just warm and have soaked up some of the dressing, at least 15 minutes and up to 1 hour. Just before serving, add tarragon to potato salad and toss to evenly distribute.
  • Place a rack in upper third of oven; preheat to 400°F. Drizzle oil in a large skillet. Season chicken generously with salt and arrange skin side down in a single layer in skillet. Set over medium heat and cook chicken, undisturbed, until skin is golden brown around the edges, 12-15 minutes. Using a stiff spatula, lift up chicken, then put it back down, still skin side down. Once chicken pieces have all released from skillet and slide around easily, continue to cook, shifting pieces as needed if browning unevenly, until skin is deeply browned, 6-8 minutes longer. Transfer chicken to a plate and turn skin side up. Pour off all but 1/4 cup fat from skillet.
  • Add bacon to same skillet and cook, turning once, until lightly browned, about 5 minutes; transfer to a plate. Cook garlic in skillet, tossing occasionally, until golden brown, about 3 minutes. Add thyme sprigs and juniper berries and cook, tossing, just until fragrant, about 1 minute. Add sauerkraut and wine, increase heat to medium-high, and cook, stirring occasionally, until wine is almost completely evaporated, 6-8 minutes. Remove skillet from heat.
  • Place sausages in a 3-qt. baking dish and pile sauerkraut over (sausages should be submerged). Arrange chicken thighs and bacon on top of sauerkraut. Pour in 3/4 cup water and bake choucroute until chicken is cooked through and liquid is bubbling throughout, 25-30 minutes. Let cool slightly. Serve with potato salad.
  • Potato salad (without tarragon) can be made 3 days ahead. Cover and chill. Bring to room temperature before serving.
