A friend served this casserole at a dinner party, and I had to ask for the recipe. I've made it for friends and relatives on a number of holidays and other special occasions since. The recipe is perfect for parties, because it can be prepared early in the day and baked later on when the guests arrive.

Steps:
- Cook the poatoes in boiling water until very tender.
- Mash with a potato masher or a fork.
- In a large bowl, mix together the mashed potatoes with the butter, sour cream, salt and pepper.
- Set the oven to 350 degrees.
- Butter a 10 cup casserole dish.
- Wash the fresh spinach leaves (if using fresh spinach).
- Place the wet leaves in a microwave-safe dish; cover, and microwave on HIGH for 2-3 minutes, when cool, enough to handle, squeeze out all excess moisture.
- Chop coarsley, and place in a medium-size bowl; stir in the feta cheese and the garlic.
- Stir the spinach mixture into the potatoes.
- Spoon the mixture into the prepared baking dish (swirling the top slightly to design).
- Sprinkle with the grated Parmesan cheese.
- Bake, uncovered in the center of the oven at 350 degrees about 40-50 minutes, or until the top is golden.

- Position a rack in top third of oven; preheat to 350°F. Whisk eggs, cream, 1 1/2 teaspoon salt, and 3/4 teaspoon pepper in a large bowl; set aside.
- Melt 1 tablespoon butter in a 12" cast-iron or nonstick ovenproof skillet over medium heat. Add sausages and cook, turning often, until browned all over, about 10 minutes. Transfer to a plate. Add leeks to skillet. Season with salt; cook until wilted, about 5 minutes. Transfer to a small bowl.

I got this recipe out of one of those checkout, small Betty Crocker cookbooks. I think it's delicious and a good way to use up leftover ham and mashed potatoes. The first 5 ingredients and instructions are there if you're going to make instant potatoes, but you can skip that and use leftover mashed potatoes instead.

- Heat oven to 350 degrees. Butter 13x9 inch baking dish. If using instant potatoes, make, following directions above, otherwise, heat leftover mashed potatoes, so they are spreadable.Set aside. - Peel potatoes, cut in half and drop into cold water.
- Drain and place in a large saucepan and cover with hot water.
- Cover Saucepan and bring to a boil.
- Reduce heat and continue boiling gently, partially covered until potatoes are tender, about 20 to 30 minutes. Mash with a potato masher. Stir in butter, sour cream, salt and pepper.
- Preheat oven to 350 degrees F.
- Butter a 9x13 inch baking dish. Wash fresh spinach leaves. Place wet leaves in a microwave-safe dish, cover and microwave on high until just wilted, from 2 to 3 minutes. Or place in a wide saucepan and stir over medium heat just until wilted, about 5 minutes. When cool enough, squeeze handfuls of spinach until dry. Coarsely chop and place in a medium size bowl.
- Combine the spinach, garlic and feta cheese.
- Stir spinach mixture into potatoes.
- Spoon into buttered dish swirling top slightly.
- Sprinkle with Parmesan cheese.
- Bake, uncovered until golden and a knife inserted in center feels warm, 40-50minutes.

- Set oven to 350 degrees Grease a shallow 2-quart casserole dish.
- Squeeze as much as the water as possible from the spinach; set aside.
- Peel and shred the potatoes.
- Mix potatoes with the eggs, melted butter, salt, pepper, onion, parsley and dill.
- Transfer half of the potato mixture into the bottom of a greased casserole dish.
- Top with the spinach, then sprinkle the crumbled feta cheese over the spinach.
- Top with the remaining potato mixture.

- Pre-Heat oven to 350 degrees.
- Butter 9x13" baking dish.
- Prepare instant potatoes according to package directions to yield the required amount.
- In medium bowl combine onion, pepper, salt, if using, spinach, sour cream, cream cheese, and slightly beaten eggs; mix well.
- Spread mixture into bottom of buttered dish.
- Sprinkle cubed ham evenly over spinach mixture.
- Top with evenly spread mashed potatoes.
- Cover with foil.
- Bake at 350 for 35 to 40 minutes or until mixture begins to bubble.
- Remove foil, sprinkle with cheddar cheese evenly over the top.

- Place the potatoes in a large pot, cover with water and bring to a boil. Reduce the heat and simmer until the potatoes are fork-tender, about 20 minutes.
- Drain and return the potatoes to the pot. Add the milk, broth, butter and 3/4 teaspoon salt. Mash with a potato masher until fairly smooth.
- Preheat the oven to 400 degrees F. Spray a 2-quart baking dish with nonstick spray.
- Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally until the onion is very tender, about 8 minutes.
- Add the garlic and the remaining 1/4 teaspoon salt and cook, stirring frequently, until fragrant, about 1 minute.
- Add the spinach, in batches, and cook until the spinach is wilted and any liquid is completely evaporated, about 5 minutes.
- Spread half of the potato mixture into the baking dish. Top with half of the spinach mixture and half of the cheese. Top with the remaining potato mixture, the remaining spinach mixture and the remaining cheese.

- Generously spray a 2 quart, 8-inch square baking dish with vegetable oil spray.

PARSNIP POTATO AND SPINACH CASSEROLE

- Put the potatoes and parsnips in large pot and cover with water. Bring the water to a boil, over medium heat. Salt the water and cook the vegetable until tender, 12 to 15 minutes. Drain and return them to the hot pot. Grate in 3 to 4 tablespoons of onion, then add the spinach, butter, half of the milk and all of the cream. Season with salt, pepper and a little freshly grated nutmeg, to taste. Mash the mixture together and taste to adjust seasonings. Add the extra splash of milk if the potatoes are too tight. Cool to room temperature, then stir in the eggs and transfer the mixture to a casserole. Cover with cheese and sprinkle with paprika. Cool and chill for a make-ahead meal. Preheat the oven to 400 degrees F. Put the casserole on a baking sheet and put it in the lower third of the oven. Bake until hot and golden, about 35 to 40 minutes. In a medium baking dish toss the mushrooms with the garlic, thyme and olive oil. Roast until dark and tender, about 30 minutes. Stir in the lemon juice and season with salt and pepper, to taste. Serve the mushrooms alongside the casserole.

This is one of my favorite potato dishes. I first had it at a church potluck, and I couldn't believe there was spinach in it - I usually don't care for spinach!
