This is the easiest roast recipe and requires little work for a lot of flavor. The vinegar sounds awful but it makes it really good. Its an easy main dish for busy moms!

6 onions, sliced
1 (4 pound) bottom round roast
salt and pepper to taste
1 bay leaf
1 tablespoon white vinegar
1 tablespoon all-purpose flour
1 cup water

Steps:

  • Place sliced onions in the bottom of a Dutch oven or stock pot. Season the roast with salt and pepper, and place on top of the onions. Add the vinegar and bay leaf to the pan, and heat over high heat to get it simmering. Reduce heat to low, cover, and simmer for 3 to 4 hours. Try not to take the lid off while cooking.
  • When the roast is done, remove it from the pan to a serving platter. Mix the flour into the water, and pour into the drippings from the roast. Simmer over medium heat, stirring frequently until thickened. Carve roast, and serve with the pan gravy.

This 3-Packet Pot Roast with gravy is tender, flavorful, and super easy to make. It's a set it and forget it meal the whole family will love.The slow cooker or instant pot can take a rather tough cut of meat and turn it into something mouthwatering and delicious! While this simple roast is cooking low and slow, it creates its own scrumptious savory gravy. And after all, gravy makes everything better!

3 pound rump or chuck roast ((or your favorite boneless beef roast))
1 packet beefy onion soup mix (dry)
1 packet brown gravy mix (dry)
1 packet ranch dressing/seasoning mix (dry)
1 cup beef broth
3 tablespoons corn starch
¼ cup cold water

Steps:

  • Place roast in the slow cooker (I use a 6 quart).
  • In a mixing bowl mix 3 packets with 1 cup beef broth and pour over roast.
  • Cover with the lid and cook on low for 8 to 10 hours or on high for 5 to 6 hours.
  • Remove from slow cooker and discard any fat and shred.
  • To thicken gravy, if desired, in a small measuring cup mix 3 tablespoons of corn starch and 1/4 cup of water. Turn the slow cooker to high and pour the slurry in. Stir until combined. Place shredded roast back into the slow cooker and allow to thicken (about 30 minutes).
  • If you want to sear the roast first, turn Instant Pot on Saute. When hot, add 1 tablespoon of vegetable oil and coat the bottom. Add in roast and brown on all sides. (Cut roast in half if larger so it will fit nicely into Instant Pot) - Optional
  • Press "Cancel" and pour beef broth into the bottom of the instant pot and remove any browned bits with a spatula (being sure to get under the roast too). I use a 6 Quart (If using a larger IP add the appropriate amount of liquid called for the size IP you are using).
  • Sprinkle all 3 packets over the roast.
  • Place on lid and make sure valve is in sealing position. Press "Manual Pressure" for 90 minutes.
  • Do a "Natural Pressure Release" for 15 minutes and then open the valve to release the remaining pressure manually.
  • Remove the lid and remove the roast to a serving plate.
  • To thicken gravy add 3 tablespoons of cornstarch to ¼ cup cold water and stir until dissolved. Pour cornstarch slurry into the Instant Pot and turn to saute. Simmer for 5 minutes to thicken.
  • Shred or slice roast and return to Instant Pot once the sauce has thickened.

1 (4 lb) boneless beef chuck roast
salt and black pepper
1/4 cup all-purpose flour
2 tablespoons vegetable oil
3 large vidalia onions, peeled and cut in half crosswise
4 cups baby carrots, pre-peeled (optional)
4 cups potatoes, peeled and quartered (optional)

Steps:

  • Place a rack in the center of the oven and preheat the oven to 300 degrees.
  • Pat the roast dry with paper towels and season it with salt and pepper.
  • Place the flour in a shallow bowl. Dredge the roast in the flour, then shake off the excess.
  • Heat the oil in a 5 to 6-quart heavy, covered flameproof casserole or Dutch oven over medium-high heat. Add the roast and brown it on both sides, 3 to 4 minutes per side.
  • Remove the casserole from the heat, and transfer the roast to a plate.
  • Place the onion halves, cut-side down, in the bottom of the casserole. Place the roast on top of the onions and cover the casserole.
  • Bake the beef until it is quite tender and the juices have thickened, 3 to 3 1/2 hours.
  • One hour before the beef is done, add the carrots and potatoes, if using, to the casserole. Spoon the juices over the vegetables to baste, replace the casserole lid, and return the casserole to the oven.
  • To serve, carefully remove the roast from the casserole and slice it. Arrange the slices of beef on plates with the carrots, onion, and potatoes, if using, and spoon the pan juices on top.

1/4 cup flour
2/3 cup water
1 envelope (1 oz.) onion soup mix
3 to 3-1/2 pound boneless beef chuck pot roast
6 to 8 small whole red potatoes
1 medium onion, cut in quarters
1 package (16 oz.) peeled baby carrots
Chopped parsley (optional)

Steps:

  • Preheat oven to 325°F., Shake flour in Reynolds® Oven Bag; place in 13x9x2-inch or larger baking pan at least 2 inches deep., Add water and soup mix to oven bag. Squeeze bag to blend in flour. Add roast to bag. Turn bag to coat roast with sauce. Place potatoes, onion and carrots in bag around roast., Close oven bag with nylon tie; cut six 1/2-inch slits in top. Tuck ends of bag in pan., Bake 2 1/2 to 3 hours or until roast is tender. Sprinkle with parsley before serving, if desired.

1 beef rump roast or bottom round roast (5 pounds)
6 tablespoons balsamic vinegar, divided
1 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
2 tablespoons canola oil
3 garlic cloves, minced
4 bay leaves
1 large onion, thinly sliced
3 teaspoons beef bouillon granules
1/2 cup boiling water
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
4 to 5 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Cut roast in half; rub with 2 tablespoons vinegar. Combine the salt, garlic powder and pepper; rub over meat. In a large skillet, brown roast in oil on all sides. Transfer to a 5-qt. slow cooker. , Place the garlic, bay leaves and onion on roast. In a small bowl, dissolve bouillon in boiling water; stir in soup and remaining vinegar. Slowly pour over roast. Cover and cook on low for 6-8 hours or until meat is tender. , Remove roast; keep warm. Discard bay leaves. Whisk cornstarch and cold water until smooth; stir into cooking juices. Cover and cook on high for 30 minutes or until gravy is thickened. Slice roast; return to slow cooker and heat through.

1 package(s) onion soup mix
1 can(s) cream of mushroom soup
1 large onion, quartered
- salt and pepper to taste

Steps:

  • Sprinkle salt & pepper over the roast on both sides and place in a foil lined roasting pan.
  • Mix cream of mushroom soup and onion soup mix together and spread over roast and around sides.
  • Flip roast. Arrange onions around the roast and wrap in foil.
  • Bake in oven at 325 degrees for 4-5 hours.
