The tenderloin is roasted with pineapples, sweet peppers and onion in a mouthwatering sauce flavored with soy, lime juice and ginger. 1 (1 pound) pork tenderloin, trimmed
2 tablespoons olive oil
¼ teaspoon kosher salt
¼ teaspoon black pepper
3 tablespoons reduced-sodium soy sauce
2 tablespoons honey
1 tablespoon lime juice
1 tablespoon grated fresh ginger
4 cloves garlic, minced
1 teaspoon paprika
¼ teaspoon ground cumin
¼ teaspoon ground coriander
2 cups 1-inch chunks peeled fresh pineapple
1 cup red sweet pepper strips
6 tablespoons 2-inch pieces green onions
1 8.8-ounce pouch cooked whole-grain brown rice
¼ cup snipped fresh cilantro

Steps:

  • Preheat oven to 425 degrees F. Coat a 15x10-inch baking pan with cooking spray. Place meat in the prepared baking pan. Drizzle with 1 tablespoon of the oil and sprinkle with salt and pepper. Roast 10 minutes.
  • Meanwhile, in a small bowl combine the soy sauce, honey, lime juice, ginger, garlic, paprika, cumin and coriander. In a medium bowl combine the remaining 1 tablespoon oil, pineapple, sweet pepper, and green onions.
  • Arrange pineapple mixture around meat in pan; drizzle meat and pineapple mixture with soy mixture. Roast 15 minutes more or until meat registers 145 degrees F. Remove from oven. Let meat stand 3 minutes then slice.
  • Microwave rice according to package directions. Serve rice with meat and pineapple mixture. Top with cilantro.

1 pkg. pork tenderloins, trimmed ((pkg. comes with 2 pieces, 2 - 2 ½ lbs. total))
high smoking point oil: vegetable, canola, grapeseed, etc.
1/2 cup canned pineapple juice*
1/3 cup olive oil
1/3 cup packed light brown sugar
1/4 cup reduced sodium soy sauce
1/4 cup ketchup
1/4 cup Asian sweet chili sauce ((like Mae Ploy))
1 tablespoon Asian chili sauce
1 tsp EACH ground ginger, onion powder, garlic powder
1/2 tsp EACH paprika, salt, pepper

Steps:

  • Whisk the marinade ingredients together in a resealable freezer bag. Remove 1/3 cup to use as a sauce after cooking. Add pork tenderloins, remove excess air, seal and turn to coat. Marinate 4-12 hours in the refrigerator; refrigerate the sauce separately.

2 pounds boneless pork tenderloin
½ cup brown sugar
1 tablespoon chili powder
1 tablespoon garlic powder
1 teaspoon ground black pepper
¼ cup pineapple preserves
1 onion, sliced
1 orange bell pepper, cut into long strips
1 red bell pepper, cut into long strips
½ (15 ounce) can mandarin oranges, drained and juice reserved
1 (8 ounce) can crushed pineapple, drained and juice reserved

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place pork tenderloin in a shallow 9x13-inch; sprinkle with brown sugar, chili powder, garlic powder, and black pepper. Spread pineapple preserves over tenderloin. Arrange onion, orange bell pepper, and red bell pepper on and around tenderloin. Mix reserved juice from mandarin oranges and crushed pineapple in a small bowl; pour in at least 1/2 cup reserved juice.
  • Bake in the preheated oven until tenderloin is no longer pink in the center, 45 to 60 minutes. Spoon mandarin oranges and pineapple over tenderloin in the last 20 minutes of cooking. An instant-read thermometer inserted into the thickest part of pork should read at least 145 degrees F (63 degrees C).

6 lbs pork tenderloin
2 quarts reduced pork broth
1 cup brown mustard seeds
1 cup yellow mustard
1/3 cup horseradish
1/3 cup ketchup
1/3 cup brown sugar
4 garlic cloves, minced
1/3 cup salt
1/3 cup cumin
1/3 cup black pepper
16 small red potatoes
4 carrots (stripped)
1 cup pineapple ring

Steps:

  • In saucepan, place pork broth, brown and yellow mustards, honey, horseradish, ketchup, brown sugar and garlic.
  • Cook until simmers and then keep warm, reducing the stock.
  • Grill pork tenderloin, turning to prevent burning while brushing sauce over the meat.
  • Remove from grill when done (170°, about 1 hour on low heat). Grill vegetables and pineapple during last half of the cooking time and serve with the meat.
