ROAST PORK AND SWEET POTATOES

1 large pork tenderloin (1 1/4 to 1 1/2 pounds), trimmed
3 tablespoons packed light brown sugar
1 teaspoon dried sage
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
2 sweet potatoes (about 1 1/2 pounds), cut into 1/2-inch wedges
1 red onion, cut into 1/2-inch wedges
3 tablespoons extra-virgin olive oil
Pinch of cayenne pepper
1 cup low-sodium chicken broth
2 teaspoons dijon mustard
2 tablespoons chopped fresh chives

Steps:

  • Position a rack in the upper third of the oven; preheat to 450 degrees F. Pierce the pork all over with a fork. Combine the brown sugar, sage, garlic, 3/4 teaspoon salt and a few grinds of black pepper in a bowl; rub all over the pork.
  • Toss the sweet potatoes and onion with 2 tablespoons olive oil and the cayenne on a baking sheet; season with salt and black pepper. Roast, tossing once, until golden, 20 minutes; set aside.
  • Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the pork and cook, turning, until golden, 5 minutes; transfer to the baking sheet with the vegetables (reserve the skillet). Roast until the sweet potatoes are tender and a thermometer inserted into the center of the pork registers 145 degrees F, 11 to 13 minutes.
  • Meanwhile, add the broth to the skillet; bring to a simmer over medium heat, scraping up any browned bits with a wooden spoon. Stir in the mustard, chives and a few grinds of black pepper. Slice the pork; drizzle with the pan sauce. Serve with the roasted vegetables.

1/3 cup port wine or grape juice
2 tablespoons water
2 dried figs, chopped
1 fresh rosemary sprig
1 tablespoon honey
1/8 teaspoon salt
Dash pepper
SANDWICHES:
1 pork tenderloin (3/4 pound)
1/4 teaspoon salt
1/4 teaspoon pepper
8 slices sourdough bread
1/4 cup crumbled goat cheese
1 cup watercress, optional
Cooking spray

Steps:

  • For jam, in small saucepan, combine the first seven ingredients. Bring to a boil. Reduce heat; simmer, uncovered, until liquid is reduced to about 1/4 cup, about 15 minutes., Remove from the heat. Cool slightly; discard rosemary. Transfer mixture to blender; cover and process until blended. Cover and chill until serving., Meanwhile, sprinkle tenderloin with salt and pepper; place on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 40-50 minutes or until a thermometer reads 160°. Let stand for 10 minutes before slicing. Cut pork into 1/8-in. slices., On four bread slices, layer the pork, jam, cheese and watercress if desired; top with remaining bread. Coat outsides of sandwiches with cooking spray. , Cook on a panini maker or indoor grill for 3-4 minutes or until bread is lightly browned.

1-1/2 lb. sweet potatoes (about 3), cut lengthwise into 3/4-inch-wide strips, then cut crosswise in half
2 Tbsp. oil
1 pork tenderloin (1-1/2 lb.)
1/3 cup KRAFT Original Barbecue Sauce, divided
2 Tbsp. KRAFT Grated Parmesan Cheese
1/8 tsp. ground red pepper (cayenne)

Steps:

  • Heat oven to 425ºF.
  • Place rimmed baking sheet in oven; heat 10 min.
  • Toss potatoes with oil until evenly coated. Place meat on hot baking sheet; surround with potatoes.
  • Bake 25 to 30 min. or until meat is done (145ºF) and potatoes are crisp, brushing meat with half the barbecue sauce and turning potatoes after 20 min. Transfer meat to cutting board; brush with remaining barbecue sauce. Cover loosely with foil; let stand 3 min. before slicing.
